1 lb tilapia fillet, cut into 1 inch chunks
1 tablespoon rice vinegar
2 teaspoons canola oil
3 garlic cloves, minced
1 tablespoon ginger, fresh, peeled, minced
4 cups Chinese cabbage, sliced
3 cups broccoli florets
2 carrots, thinly sliced
1 red pepper, thinly sliced
3/4 cup chicken broth, reduced sodium
2 tablespoons soy sauce, reduced sodium
3 scallions, thinly sliced

Steps:

  • Place tilapia and vinegar in medium bowl and toss to coat. Set aside.
  • Heat large nonstick skillet over medium heat until drop of water sizzles in pan. Add oil and swirl to coat pan.
  • Add garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds.
  • Add cabbage, broccoli, carrots, and bell pepper.
  • Stir fry until vegetables begin to soften, about 2 minutes.
  • Add broth and soy sauce; bring to boil.
  • Add tilapia, cover and cook, stirring occasionally, until fish is just opaque in center, 2-3 minutes.
  • Remove from heat and stir in scallions.

4 4 to 5-ounce fresh or frozen tilapia fillets
¼ cup reduced-sodium soy sauce
1 tablespoon grated fresh ginger
1 teaspoon toasted sesame oil
1 clove garlic, minced
¼ cup water
1 pound fresh green beans, trimmed if desired
2 tablespoons water
1 tablespoon canola oil
1 Nonstick cooking spray
1 tablespoon sesame seeds, toasted
¼ cup thinly sliced green onions (2)

Steps:

  • Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Place fish in a shallow baking dish.
  • For marinade, stir together soy sauce, ginger, sesame oil, and garlic in a small bowl. Pour marinade over fish, turning to coat. Cover with foil and marinate at room temperature 20 minutes. Drain fish, reserving marinade. Add the 1/4 cup water to the reserved marinade.
  • In a large nonstick skillet, combine green beans and the 2 Tablespoons water. Cook, covered, over medium-high heat for 5 minutes, stirring occasionally. Add canola oil. Cook, uncovered, about 5 minutes more or until beans are crisp-tender, stirring frequently. Transfer beans to a serving platter; cover and keep warm.
  • Meanwhile, coat another large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add fish to hot skillet; cook 6 to 8 minutes or until fish flakes easily when tested with a fork, turning once. Sprinkle beans with sesame seeds; arrange fish on top of beans.
  • Wipe out skillet with a paper towel. Add the reserved marinade to skillet; cook and stir over medium-high heat 1 minute. Strain through a fine-mesh sieve. Drizzle marinade over fish; sprinkle with green onions.

4 ounces whiting fish fillets (cut into pieces) or 4 ounces tilapia fillets (cut into pieces)
5 stalks broccoli
1 cup mushroom (diced)
4 slices tomatoes
3 leaves cabbage (torn)
1 carrot (diced)
1/2 tablespoon fat-free salad dressing
1 teaspoon soy sauce
1 dash black pepper

Steps:

  • Mix all ingredients in a skillet and cook on a stove top flame low heat.
  • Cover with a lid right away let steam until fish is done usually only 5-7 minutes depending on thickness of fish.
  • Then pour out excess liquid and serve the rest.

2 medium Yukon Gold potatoes, cut into wedges
3 large fresh Brussels sprouts, thinly sliced
3 large radishes, thinly sliced
1 cup fresh sugar snap peas, cut into 1/2-inch pieces
1 small carrot, thinly sliced
2 tablespoons butter, melted
1/2 teaspoon garlic salt
1/2 teaspoon pepper
2 tilapia fillets (6 ounces each)
2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
1/8 teaspoon salt
1 tablespoon butter, softened
Optional: Lemon wedges and tartar sauce

Steps:

  • Preheat oven to 450°. Line a 15x10x1-in. baking pan with foil; grease foil., In a large bowl, combine the first 5 ingredients. Add melted butter, garlic salt and pepper; toss to coat. Place vegetables in a single layer in prepared pan; bake until potatoes are tender, about 20 minutes., Remove from oven; preheat broiler. Arrange vegetables on 1 side of sheet pan. Add fish to other side. Sprinkle fillets with tarragon and salt; dot with softened butter. Broil 4-5 in. from heat until fish flakes easily with a fork, about 5 minutes. If desired, serve with lemon wedges and tartar sauce.
