This pineapple casserole with Cheddar cheese is beloved for its simplicity (and short ingredient list).

2 (20-oz.) cans pineapple chunks in juice, drained (reserve 6 Tbsp. juice)
⅓ cups sugar
5 tablespoons flour
1 cup shredded Cheddar cheese
¼ cup butter, melted
1 sleeve Ritz crackers, crushed

Steps:

  • Preheat oven to 350˚F. In a medium size bowl, combine sugar, flour, and reserved pineapple juice. Add pineapple chunks and toss well to combine. Spoon pineapple mixture into 8x8-inch casserole dish and top with shredded cheese.
  • Combine crushed Ritz crackers and melted butter. Spread Ritz cracker topping evenly on top of pineapple mixture.
  • Bake at 350˚F for 30 minutes, or until bubbly.

1 1/4 cups self rising flour
1 cup sugar
2 cups sharp cheddar cheese, shredded
1 sleeve Ritz crackers
2 sticks butter

Steps:

  • Butter baking dish. Empty pineapple into baking dish. Combine flower, sugar and cheese and spread dry ingredients evenly on top of pineapple. Crush crackers and cover casserole. Melt butter and spoon on top. Bake for 35 to 45 minutes in 350°F oven.

3 large eggs
1 can (20 ounces) crushed pineapple, well drained
1-1/2 teaspoons lemon juice
4 cups firmly packed cubed white bread (crusts removed)

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in pineapple and lemon juice. 6 tablespoons all-purpose flour
½ cup white sugar, or to taste
2 cups shredded sharp Cheddar cheese
1 (20 ounce) can crushed pineapple, drained
40 buttery round crackers (such as Ritz®), crushed
½ cup butter, melted, or to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).

1 (20 ounce) can crushed pineapple, partially drained
⅔ cup white sugar
5 tablespoons all-purpose flour
1 stick butter, melted
1 ½ cups shredded orange Cheddar cheese
1 sleeve crushed buttery round crackers (such as Ritz®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix pineapple tidbits and crushed pineapple together in a bowl and layer into the bottom of a 9x13-inch glass baking dish.
