A delightful little rice dish packed with herbs and veggies- the broth can be changed to suit your needs: beef broth for meat; vegetable broth for vegetarians, etc. Very versatile!

4 tablespoons butter or 4 tablespoons margarine
1 cup chopped onion
1 cup finely diced carrot
1/2 cup thinly sliced celery
1/2 cup chopped green pepper
2 cloves garlic, minced
1 1/2 cups uncooked long-grain rice
1 3/4 cups fat-free low-sodium chicken broth
1 cup water
1/2 cup frozen peas
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves
1/4 teaspoon Tabasco sauce, to taste
1/2 teaspoon salt, to taste
1/8 teaspoon black pepper, to taste

Steps:

  • Heat 2 tablespoons butter in a large saucepan; add onion, carrots, celery, green pepper, and garlic, cooking until tender.
  • Remove vegetables from pan and set aside.
  • Heat remaining 2 tablespoons of butter in pan; add rice and cook, stirring constantly, until rice is light brown.
  • Do not burn rice.
  • Stir in chicken broth, water, frozen peas, cooked vegetables, parsley, thyme, Tabasco, and salt and pepper to taste.
  • Bring mixture to a boil, then reduce heat and simmer, covered, for 15-20 minutes or until liquid is absorbed and rice is tender.
  • Fluff with fork before serving.
  • Tip: if rice seems wet, place clean dishtowel firmly between lid and pan; let rest for 10-15 minutes while towel absorbs excess liquid.

Herb Garden Rice Pilaf with Fresh Garlic, Basil, Thyme and Oregano image

Number Of Ingredients 12

2 cups + 2 Tbl. water
1 cup rice
3 Tbl. butter, cut up
1 Tbl. Superior Touch Better Than Bouillon Chicken Base
1 1/2 tsp. finely minced fresh garlic
1/8 tsp. coarse ground black pepper
3 fresh basil leaves, stacked, rolled up lengthwise, and thinly sliced crossways
1/2 tsp. fresh thyme leaves
1/2 tsp. fresh oregano leaves
1/2 tsp. finely grated lemon zest, optional
1 small chive, finely snipped, optional
finely shaved parmesan cheese, optional

Steps:

  • In medium saucepan, add water, rice, butter, chicken base, garlic and pepper.
  • Cover and bring to a boil over medium heat.
  • When just to a boil, stir in fresh herbs. Cover and turn heat down to LOW.
  • LOW simmer for 15 minutes. Remove from heat and let stand for 5 minutes. (*Do not remove lid during cooking and resting time.)
  • Stir and fluff with fork. *If wanting a bit lemon zest, add now.
  • Garnish with a tiny bit of fresh oregano leaves, fresh thyme sprigs, chives and shaved parmesan cheese if desired.

2 tablespoons butter
1/3 cup thin spaghetti, broken into 1 inch pieces, about 1/6 of a 1 pound box of dried pasta
3/4 cup white enriched rice
1 1/2 cups chicken broth or water
Salt

Steps:

  • In a medium saucepan melt butter over moderate heat. Add thin spaghetti bits and rice and brown for 3 to 5 minutes. Add broth or water, salt and pepper, and bring liquid to a full boil. Cover pot and reduce heat to simmer and cook rice 18 minutes. Fluff with a fork and serve.

PICO DE GALLO PILAF

1 tablespoon extra-virgin olive oil
1/2 cup orzo pasta
1 cup white rice
2 cups chicken broth or vegetable broth
4 plum tomatoes, halved, seeded and finely chopped
1 small onion, red or white, finely chopped
1 jalapeno pepper, seeded and finely chopped
A handful cilantro leaves, finely chopped
1 lime, zested and juiced
Salt

Steps:

  • Heat the extra-virgin olive oil in a sauce pot over medium heat. Add the orzo and toast until deep golden. Stir in the rice and broth and bring to boil. Reduce the heat to low, cover the pot and simmer for 17 to 18 minutes.
  • In a small bowl, combine the tomatoes, onions, jalapeno, cilantro, and lime zest and juice. Season with salt, to taste.
  • When rice is cooked, fluff with fork and stir in the salsa. Transfer to a serving bowl and serve.

1/2 cup broken spaghetti
1 1/2 cups long-grain white rice
Salt and pepper
3 1/2 to 4 cups chicken stock
1/4 cup dried currants
1/4 cup pignoli (pine nuts), toasted
1/2 bunch fresh chives, chopped
1/2 bunch fresh parsley, chopped

Steps:

  • Melt the butter over medium heat in a large skillet with a tight-fitting lid. Add the spaghetti and toast until deep golden in color and very nutty-smelling. Add the rice and stir for a minute. Season with some salt and pepper, add 3 1/2 cups of the stock and bring to a low boil. Reduce the heat to low, cover and cook until the rice is just tender, about 18 minutes; add extra stock as necessary if the pan gets too dry. Fluff the pilaf with a fork. Mix in the currants, pignoli, chives and parsley.
