Steps:
- Preheat oven to 375°. In a large bowl, whisk flours and salt. Gradually add water and 1/4 cup oil, tossing with a fork until dough holds together when pressed. Divide dough into 3 portions., On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Prick each cracker with a fork; brush lightly with remaining oil. Mix thyme and sea salt; sprinkle over crackers., Bake 9-11 minutes or until bottoms are lightly browned.

- Place the butter in the bowl of an electric mixer fitted with a paddle attachment and mix until creamy. Add the Parmesan, flour, salt, thyme and pepper and combine.
- Dump the dough on a lightly floured board and roll into a 13-inch long log. Wrap the log in plastic wrap and place in the freezer for 30 minutes to harden.
- Meanwhile, preheat the oven to 350 degrees F.
- Cut the log crosswise into 1/4 to 1/2-inch thick slices. Place the slices on a sheet pan and bake for 22 minutes.
GOAT CHEESE AND THYME CRACKERS

- In a stand mixer with the paddle attachment blend the goat cheese and butter until smooth. Add the thyme, zest, and 1/4 teaspoon salt. Taste a bit, and season with more salt, if needed and add a few grinds of pepper. Add the flour and blend until smooth. Remove the dough and using a piece of plastic wrap to guide and mold, roll the dough into an 8-inch long log. Refrigerate for 2 hours.
- Heat the oven to 325 degrees F.
- Remove the dough log from the refrigerator and cut into 1/3-inch discs. Place on an ungreased parchment paper-lined baking sheet, about an inch apart. Bake until golden on top and set, 30 to 35 minutes. Remove from the oven and slide the parchment off of the baking sheet and onto a cooling rack with the crackers still attached. Cool completely before eating.

- Heat oven to 350ºF.
- Beat cream cheese and butter in large bowl with mixer until blended. Combine remaining ingredients; gradually add to cream cheese mixture, mixing well after each addition. Divide dough in half. Shape each into ball; flatten slightly.
- Roll out half the dough on lightly floured surface to 8x4-inch rectangle. Use sharp knife or pizza cutter to cut rectangle lengthwise in half, then crosswise into 16 (2x1/2-inch) strips. Place, 2 inches apart, on parchment-covered baking sheets. Repeat with remaining dough.
- Bake 15 to 18 min. or until edges are lightly browned. Cool on baking sheets 1 min. Remove to wire racks; cool completely.

- Preheat oven to 375 degrees. Pulse the flour, thyme, 1 1/2 teaspoons salt, and sugar in a food processor until combined. Add butter; pulse until mixture resembles coarse meal. With machine running, add cream; process until dough forms.
- On a lightly floured surface, briefly knead dough. Divide into 4 pieces; shape into rectangles. Wrap each in plastic; refrigerate until firm, about 30 minutes.
- On a lightly floured surface, roll out 1 piece of dough into a very thin rectangle. Transfer to a baking sheet. Score the dough into 4-by-2-inch diamonds. Brush with egg white, and sprinkle with salt. Garnish each diamond with a thyme sprig. Repeat with remaining dough.
- Bake until golden brown and crisp, 15 to 20 minutes. Let cool on a wire rack. Break diamonds into individual crackers.

- Using the paddle attachment on a stand mixer, beat the butter until creamy. Scrape down the bowl with a rubber spatula. Add the parmesan cheese, flour, salt, thyme, and pepper, and beat until it clumps together into a ball, pulls away from the sides of the bowl, and few, if any, loose crumbs remain. Wrap the log tightly in plastic wrap and freeze for 30 minutes, or until firm. While the dough chills, preheat the oven to 350ºF. Slice the log into roughly 1/4 to 1/2-inch pieces (just make sure they're all the same thickness). Place the dough slices about an inch apart on the half-sheet pan and bake for 16 to 22 minutes (depending on their thickness), or until firm and golden brown.

- Cream butter for 1 minute. with mixer on low add parm, thyme, s & p & combine til large crumbles, about 1 minute. If dough is too dry add 1 tsp water. dump dough on floured board, press into ball & roll into 9 inch log. wrap in plastic & refrig. for at least 30 mins & up to 4 days. Preheat oven to 350F. Cut log into 3/8 inch rounds with sharp knife & place on sheet pan lined with parchment paper. Bake for 22 mins til very lightly browned. rotate pan once during baking. Cool & serve at room temp.
PARMESAN THYME CRACKERS
Steps:
- Stir together the first five ingredients in a mixing bowl. Mix in the butter, using your hands to crumble it into the flour mixture until the texture looks like coarse sand. Stir in the egg yolk, mixing until the dough comes together. Add a teaspoon of water if you are having trouble getting it to stick together. Pinch small pieces of dough and roll them into finger-sized ropes, then flatten each and press a sprig of thyme into the top. Bake the crackers on a parchment-lined baking sheet (or grease the baking sheet with butter or cooking spray) for 10 to 15 minutes, until crisp but not browning. Let them cool and serve as appetizers or snacks.
