GREEN CHILE CHEESEBURGERS

1 serrano chile pepper
2 large Cubanelle peppers
2 large poblano chile peppers
1 tablespoon vegetable oil, plus more for the grill
1 small onion, diced
Kosher salt
3 cloves garlic, minced
1/2 teaspoon ground cumin
2 tablespoons white vinegar
3 pounds ground beef chuck
Freshly ground pepper
8 slices colby-jack cheese
8 hamburger buns
Mayonnaise, barbecue sauce, lettuce and sliced sweet onion, for topping

Steps:

  • Preheat a grill to medium high. Grill the serrano, Cubanelle and poblano peppers, turning, until charred all over, 6 minutes for the serrano, 8 minutes for the Cubanelle, and 10 to 12 minutes for the poblano. Transfer to a large bowl, cover with plastic wrap and let steam 10 minutes. Peel, seed and chop all the peppers.
  • Heat the vegetable oil in a medium saucepan over medium-high heat. Add the onion, season with salt and cook, stirring, until browned, 5 to 6 minutes. Add the garlic and cumin and cook, stirring, until the cumin is toasted, about 1 minute. Add 1 cup water, the grilled peppers and 1/2 teaspoon salt. Simmer over medium heat until most of the liquid has cooked off, 8 to 10 minutes. Stir in the vinegar and season with salt.
  • Form the ground beef into 8 patties, about 4 inches wide and 1/2 inch thick; season with salt and pepper. Oil the grill grates. Grill the burgers over medium-high heat, 3 to 31/2 minutes per side for medium rare; top each with a slice of cheese after flipping and cover to melt. Toast the buns cut-side down, about 30 seconds.
  • Spread some mayonnaise and barbecue sauce on the buns. Serve the patties on the buns with lettuce, sliced onion and the grilled chile salsa.

2 pounds ground chuck, 80 percent to 85 percent lean
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 thin slices Chihuahua or provolone
4 good-quality hamburger buns, toasted
Green Chili Sauce, recipe follows
Romaine lettuce leaves, optional
4 thick slices beefsteak tomatoes, optional
Pickled jalapenos, optional

Steps:

  • Heat grill to high. Form meat into 4 (8-ounce) burgers and season each burger on both sides with 1/4 teaspoon of salt and a 1/4 teaspoon of pepper. Grill until charred on both sides and cooked to desired doneness.
  • Place 2 slices of the cheese on each burger, close the lid or tent with foil, and cook until the cheese has just melted, about 1 minute. Place burgers on buns and top with a few tablespoons of Green Chile Sauce and lettuce, tomato, and pickled jalapeno, if desired.
  • 2 poblano chiles, grilled, peeled, seeded, and chopped
  • 1 medium white onion, grilled and chopped
  • 1 to 2 cloves garlic, chopped
  • 2 tablespoons chopped fresh epazote, or fresh oregano leaves
  • 1/4 cup cold water
  • 1 tablespoon honey
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Place all ingredients in a blender and blend until smooth. Season with salt and pepper, to taste.

1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
1/4 cup chopped green chilies, undrained
2 cloves garlic, chopped
2 Tbsp. pickled jalapeno peppers, finely chopped
2 Tbsp. chopped fresh cilantro
1-1/2 lbs. ground beef
2 Tbsp. canola oil
4 slices Monterey Jack cheese (about 4 oz.)
4 sesame seed hamburger buns

Steps:

  • Process Hellmann's® or Best Foods® Real Mayonnaise, green chilies and garlic in food processor until smooth. Remove to medium bowl, then stir in jalapeno peppers and cilantro. Season, if desired, with salt and black pepper. Cover and refrigerate at least 30 minutes.
  • Meanwhile, shape ground beef into 4 burgers. Brush each burger on both sides with oil, then season, if desired, with salt and black pepper. Grill, turning once, 8 minutes or until desired doneness. Top burgers with cheese and cook until cheese is melted. Arrange burgers on buns, then top with a dollop of green chili mayonnaise. Serve remainder of mayonnaise in small bowl for dipping.
