I like to make this recipe during the summer when I can get the ingredients fresh from the garden. It not only tastes very good, but it's a pretty addition to any meal.

1 package (12 ounces) tricolor spiral pasta
1/3 cup olive oil
3 tablespoons red wine vinegar
1/4 cup minced fresh basil or 1 tablespoon dried basil
2 tablespoons grated Parmesan cheese
1-1/4 teaspoons salt
1/4 teaspoon pepper
1 small sweet red pepper, julienned
1 small sweet yellow pepper, julienned
1 small green pepper, julienned
1 medium tomato, cut into thin wedges
1 can (2-1/4 ounces) sliced ripe olives, drained
2 tablespoons sliced green onions
8 ounces cubed part-skim mozzarella cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a blender, add the oil, vinegar, basil, Parmesan cheese, salt and pepper; cover and process until blended. Drain and rinse pasta in cold water; place in a large bowl. Add the peppers, tomato, olives and onions. Drizzle with dressing; toss to coat. Stir mozzarella cheese. Serve at room temperature.

Enjoy this pasta made with three bell peppers and basil pesto - ready in 25 minutes. Recipe from Pillsbury. I made this today and found it to be VERY tasty. I had red, orange, and yellow peppers so that's what I used. I had some homemade basil-walnut pesto (my basil is going crazy this summer!) and used grated Parmesan cheese. I'd imagine you could add some cooked chicken if you wanted to add meat to the dish.

1 tablespoon olive oil (vegetable oil is OK)
1 medium onion, cut into thin wedges
1 orange bell pepper, cut into bite-sized strips (or red pepper)
1 yellow bell pepper, cut into bite-sized strips
1 green bell pepper, cut into bite-sized strips
1/3 cup basil pesto
2 teaspoons balsamic vinegar
1/4 cup asiago cheese (1 oz. ) or 1/4 cup parmesan cheese, shredded (1 oz. )

Steps:

  • Cook ziti as directed on package. Drain.
  • Meanwhile, in 12-inch skillet, heat oil over medium-high heat until hot. Add onion; cook and stir 2 minutes. Add bell peppers; cook 3 to 5 minutes or until onion and peppers are crisp-tender, stirring frequently.

1 large yellow pepper, coarsely chopped
1 large green pepper, coarsely chopped
1/3 cup chopped onion
2 garlic cloves, minced (or 2 tsp. prepack minced garlic)
1 cup drained and chopped canned italian-style plum tomato
12 ounces angel hair pasta
5 tablespoons pine nuts
1/2 cup fresh basil, leaves only
2 tablespoons olive oil
1/3 cup chicken broth, defatted
1/2 cup grated parmesan cheese

Steps:

  • Cook pasta according to package directions, drain and set aside; keep warm.
  • Preheat oven to 400 degrees, toast pine nuts on a cookie sheet for 2-3 minutes, do not over toast.
  • Transfer pine nuts to a food processor.
  • Spray an unheated large skillet with olive oil no stick spray - or use 1 teaspoons olive oil. Add the red, yellow and green peppers. Stir in the onions and garlic.
  • Cook over medium heat for about 6 minutes, stirring occasionally.
  • Meanwhile, add basil and garlic to blender or food processor. Blend until finely chopped. Slowly pour oil, then chicken broth in thin streams with the blender/processor running.

2 medium skinless, boneless chicken breast halves (about 8 ounces total), cut into 1-inch pieces
1 tablespoon cooking oil
1 medium red or green sweet pepper, chopped (1 cup)

1 tablespoon chopped, seeded jalapeqo pepper
2 cloves garlic, minced
2 tablespoons all-purpose flour
3/4 cup chicken broth
1/2 cup milk
1 teaspoon Worcestershire sauce
1 cup shredded Monterey Jack or cheddar cheese (4 ounces)
1/4 cup dairy sour cream
1 jalapeqo pepper, thinly sliced (optional)

  • 1 Cook pasta according to package directions. Drain; keep warm. 2 In a small mixing bowl combine 1 tablespoon flour, salt, red pepper, white pepper, and black pepper. Toss flour mixture with chicken to coat. Set aside. 3 In a large skillet heat the cooking oil over medium-high heat. (Add more oil as necessary during cooking.)
