4 cups mixed spring greens, washed and dried
4 cups baby spinach leaves, washed and dried
5 tangerines or 5 clementines, separated into segments
2 1/2 cups fresh strawberries, washed and sliced
8 ounces sugar snap peas, washed and halved
4 cups cooked chicken breasts, cubed
1 cup walnut halves, toasted
2 tablespoons fresh chives, chopped
1 bunch mint, chopped
1 1/2 cups crumbled goat cheese
1/2 cup raspberry balsamic vinegar
2 tablespoons red onions, chopped
2 1/2 teaspoons honey
1/2 cup salad oil
1/8 teaspoon kosher salt
1/8 teaspoon white pepper
1 tablespoon snipped fresh parsley

Steps:

  • SALAD:.
  • Chill a large serving bowl; add the first nine ingredients and gently toss with the vinaigrette. Top with the goat cheese crumbles; spoon onto 4 chilled serving plates. A warm, crusty baguette and a glass of Sauvignon Blanc wine make this meal complete. ENJOY!
  • RASPBERRY VINAIGRETTE:.
  • Combine vinegar, onion, and honey in food processor or blender; process until well blended. With the motor running, slowly add in the oil. Process.
  • Season with salt and pepper to taste; add the parsley. Transfer to large screw-top jar or container with lid.
  • The vinaigrette can be made 1 day ahead. Bring to room temperature and whisk before serving. Makes about 1 cup.

1 can (20 ounces) pineapple chunks
1/3 cup sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1/8 teaspoon salt
2 eggs, lightly beaten
1 to 2 small ripe bananas, sliced
1 cup halved seedless red grapes
1 cup miniature marshmallows
6 cups torn lettuce

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small saucepan, combine the sugar, cornstarch, lemon juice, salt and reserved juice until smooth. Bring to a boil over medium heat, stirring until sugar is dissolved. , Remove from the heat. Stir a small amount of hot juice mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Transfer to a small bowl; cool., Just before serving, in a bowl, combine the bananas, grapes, marshmallows, pineapple and cooled dressing. Serve over lettuce.

1/2 lb strawberries, fresh
1/2 lb blueberries, fresh
1/2 lb raspberries, fresh
1 c strawberry yogurt
1 Tbsp raspberry preserves, seedless
1 small mint leaf, fresh for garnishment
1/2 Tbsp equal or confectioner sugar

Steps:

  • 1. In a medium decorative bowl, wash all berries and place on paper towel to dry excess moisture off fruit.
  • 2. Slice strawberries, sprinkle all berries with equal or confectioner sugar, let stand for about 10 minutes so the berries can absorb the sugar. Then mix yogurt and preserve in separate small bowl.
  • 3. Top berries with yogurt mixture and place mint leaf on top for garnishment. Wallah!
