WHOLE CITRUS MARGARITAS



Whole Citrus Margaritas image

Number Of Ingredients 10

4 navel oranges, cut into 3/4-inch pieces
2 lemons, cut into 3/4-inch pieces
2 limes, cut into 3/4-inch pieces
1/2 cup superfine sugar
1/4 cup Cointreau
1/4 cup Triple Sec
1 1/2 cups good quality tequila (recommended: 100 percent agave)
10 cups ice
Fine salt, for the rims of the glasses
10 lime wedges

Steps:

  • Put the oranges, lemons, and limes through a juicer. Pour the juice into a large pitcher. Add the sugar and stir to dissolve. Then stir in the Cointreau, Triple Sec, and tequila.
  • To serve: Pour salt onto a small plate. Run a lime wedge around the top of each glass and dip the glass in the salt. Fill each glass halfway with ice and pour in the juice mixture. Garnish with a lime wedge and serve.
  • Chef's note: Farm freshness is the key here. Look for the citrus that is mostly in season and adjust the recipe. Tangerines, Meyer lemons, and key limes all have amazing flavor if you can find them.

Number Of Ingredients 12

Margarita or coarse sea salt, for rimming glass
1 lime wedge, for rimming glass
1/2 cup frozen orange juice concentrate
1 1/2 cups orange juice
3/4 cup (6 ounces) tequila
2 tablespoons (1 ounce) Cointreau or triple sec
2 tablespoons lime juice
3 cups crushed ice
1/4 cup grenadine
For Garnish
4 orange slices
4 maraschino cherries

Steps:

  • 1. Spread a layer of salt in a shallow dish. Run lime wedge around the rims of 4 highball glasses to moisten; dip rims in salt.
  • 2. Place orange juice concentrate, orange juice, tequila, Cointreau, and lime juice in a blender. Add ice and pulse until smooth. Divide margarita evenly among glasses.
  • 3. Tilt glasses and pour 1 tablespoon grenadine down the side of each drink; grenadine will sink to the bottom and create a sunset effect. Garnish with orange slices and maraschino cherries and serve.

  • Combine tequila, Cointreau, and lime juice in cocktail shaker filled with ice. Moisten rim of Margarita or other cocktail glass with lime juice or water. Holding glass upside down, dip rim into salt. Shake and strain drink into glass and serve.

1 1/2 ounces tequila
1 ounce triple sec
1/2 ounce fresh lime juice
1/2 ounce fresh orange juice
1/2 ounce fresh grapefruit juice
Chambord raspberry liquor (black raspberry liqueur)

Steps:

  • Mix all ingredient into a cocktail shaker (except for the Chambord). Shake cold and serve over the rocks in a bucket glass. Salt is optional, garnish with a lime wedge. Lastly drizzle a splash of Chambord of top of the cocktail for effect.
  • Enjoy!
