Steps:

  • Heat oven to 375 degrees F.
  • Cook pasta in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute.
  • Meanwhile, cook and stir chicken and basil in large nonstick skillet sprayed with cooking spray on medium-high heat 3 min. Stir in tomatoes and spaghetti sauce; bring to boil. Simmer on low heat 3 min. or until chicken is done, stirring occasionally. Stir in Neufchatel.
  • Drain pasta mixture; return to pan. Stir in chicken mixture and 1/2 cup mozzarella; pour into 2-qt. casserole sprayed with cooking spray.

Kosher salt and freshly ground black pepper
1 tablespoons extra-virgin olive oil
1/2 pound pancetta, diced
1/2 pound cremini mushrooms, thinly sliced
1 pound dried penne
5 1/2 cups prepared marinara sauce
1 1/2 cups shredded rotisserie chicken, skin and bones removed
1 1/2 cups shredded Italian fontina cheese
1 1/2 cups shredded mozzarella
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Meanwhile, heat the oil in a medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until browned and crispy, about 8 minutes. Transfer to a large bowl using a slotted spoon. Add the mushrooms to the pancetta drippings and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Transfer to the bowl with the pancetta.
  • Cook the penne in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
  • Add the marinara, chicken, the fontina and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the mozzarella and the remaining Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

1-1/2 pounds smoked Polish sausage or kielbasa, cut into 1/2-inch slices

3 cups shredded Swiss cheese, divided
1-1/3 cups 2% milk
4 green onions, chopped

  • Preheat oven to 350°. Cook pasta according to package directions; drain and transfer to a large bowl. Stir in sausage, soup, sauerkraut, 2 cups cheese, milk, onions, mustard and garlic., Spoon into 2 greased 8-in. square baking dishes; sprinkle with remaining cheese. I originally found this recipe on allrecipes.com and changed it to fit our tastes. This is so versatile. Add or take away what your family likes or dislikes. The recipe should read 2 jars of spaghetti sauce...I apologize the amount hasn't been showing in the ingredients. I use Ragu or my own.

2 cups shredded mozzarella cheese, divided
3/4 cup grated parmesan cheese
1/2 cup grated romano cheese
3 eggs, beaten
1 tablespoon olives or 1 tablespoon vegetable oil
2 teaspoons garlic powder
salt and pepper
2 (737 g) jars spaghetti sauce
green pepper (optional)
mushroom (optional)
1 small diced red onion
1 lb lean ground beef or 1 lb ground turkey

Steps:

  • Brown hamburger until no longer pink with diced red onion.
  • Cook spaghetti according to package directions; drain.
  • Add 1 cup mozzarella cheese, Parmesan, Romano, eggs, oil, garlic powder, salt and pepper.
  • Press into a greased 13-in. x 9-in. x 2-in. baking dish.
  • Spread ground meat and onions over spaghetti. If you decide to add additional ingredients include with the meat layer.

1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 teaspoon dried basil
1 (10 3/4 ounce) can cream of mushroom soup
1 (4 ounce) can mushroom pieces, undrained
1/2 cup milk
12 ounces wide egg noodles
curd cottage cheese (not low fat)
4 (6 ounce) cans tuna, drained
16 slices process American cheese
1/2 cup grated parmesan cheese

Steps:

  • Heat oven to 350°F.
  • Cook noodles according to package directions. Drain when cooked.
  • Meanwhile,heat butter in a skillet over medium heat. Add onion, green pepper and basil. Cook, stirring often, until vegetables are tender.
  • Stir in soup, mushrooms with their liquid, and milk.
  • Spray a 9x13-inch baking dish with cooking spray.

3 garlic cloves, chopped

9 ounces soft fresh goat cheese (such as Montrachet), crumbled (about 2 1/2 cups)
1 1/2 cups (packed) grated Parmesan cheese (about 4 ounces)
1 cup (packed) grated Fontina cheese (about 4 ounces)

Steps:

  • Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Melt butter in large nonstick skillet over medium-high heat. Add mushrooms and sauté until tender, about 8 minutes. Season to taste with salt and pepper. Cool.
  • Combine bread and milk in large bowl. Let stand until milk is absorbed, about 15 minutes.
  • Whisk half and half and next 6 ingredients in medium bowl to blend. Stir in goat cheese.

If you love stuffed mushrooms then you will love this recipe. It's a side dish that is always a hit with my family.

1 small onion, chopped
14 oz button mushrooms, cleaned and sliced
1 stalk(s) celery, chopped
2 Tbsp butter
1/2 tsp salt
1 clove garlic, minced
1 large egg, beaten
1/2 c italian bread crumbs
1/2 c shredded mozzarella cheese
1/2 c freshly grated parmesan cheese
1/2 tsp dried basil
4 slice provolone cheese

Steps:

  • 1. Melt the butter in a skillet and add the onions, mushrooms, celery and salt. Cook till they become tender and the liquid from the mushrooms has cooked off. Stir in the garlic and cook for 1 minute. Remove from the heat and allow to slightly cool. Pour the mixture into a bowl and add the egg, breadcrumbs, mozzarella, parmesan cheese and basil. Stir to combine well and pour into a lightly greased 1 1/2 quart dish.
  • 2. Top with the provolone, cutting in half to fit the edges. Sprinkle with a little more basil if desired. Bake in a 350 degree oven for 20 minutes or until the top is golden brown and bubbly.
