4 cups shredded mozzarella cheese, divided
2 cups ricotta cheese
1 cup grated Parmesan cheese, divided
1 tablespoon minced garlic
1 egg
2 tablespoons dried basil
2 (26 ounce) jars pasta sauce

Steps:

  • Bring a large pot of lightly salted water to a boil. Add manicotti and cook for 8 to 10 minutes or until al dente; drain.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, mix 3 cups mozzarella cheese, ricotta cheese, 1/2 cup Parmesan cheese, garlic, egg, and basil. Stuff cooked manicotti with the mixture.
  • Spread about 2 cups pasta sauce over the bottom of the prepared baking dish. Arrange stuffed manicotti in the dish, and cover with remaining sauce. Sprinkle with remaining mozzarella cheese.
  • Bake 15 minutes in the preheated oven. Sprinkle with remaining Parmesan, and continue baking 10 minutes, until mozzarella is melted and bubbly.

12 uncooked manicotti shells
1 pound ground turkey
1 large sweet onion, chopped
1 jar (24 ounces) three-cheese spaghetti sauce
2 teaspoons sugar
2 teaspoons Italian seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
2 cups shredded cheddar-Monterey Jack cheese
1 carton (15 ounces) ricotta cheese
1/2 cup grated Parmesan cheese, divided
1 large egg, beaten

Steps:

  • Cook manicotti according to package directions. Meanwhile, in a large skillet, cook turkey and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce, sugar, Italian seasoning, onion powder and garlic powder. Place 1 cup meat sauce in a greased 13x9-in. baking dish., Drain manicotti. In a large bowl, combine the cheddar-Monterey Jack cheese, ricotta cheese, 1/4 cup Parmesan cheese and egg. Stuff into manicotti shells. Place shells over meat sauce. Top with remaining sauce. Sprinkle with remaining Parmesan cheese. , Cover and bake at 350° for 35-40 minutes or until bubbly. Freeze option: Cover and freeze unbaked manicotti casserole for up to 1 month. To use, thaw in the refrigerator overnight. Let stand at room temperature for 30 minutes before baking. Bake as directed.

2 large heads broccoli
1 (8 ounce) package manicotti shells
2 cloves garlic, crushed
1 cup ricotta cheese
4 ounces grated provolone cheese
1 ½ cups grated Parmigiano-Reggiano cheese, divided, or more to taste
2 large eggs, beaten
2 teaspoons kosher salt, or to taste
1 pinch cayenne pepper, or to taste
1 teaspoon freshly ground black pepper
1 pinch freshly grated nutmeg
3 ½ cups prepared marinara sauce
2 ½ cups water
6 ounces cooked, crumbled, hot Italian sausage
1 tablespoon freshly chopped Italian parsley, or to taste

Steps:

  • Bring a pot of generously salted water to a boil.
  • Meanwhile, separate broccoli stems and florets. Cut florets in half and cut each stem into several pieces lengthwise.
  • Place stems in the boiling water and cook for 3 to 4 minutes. Then add florets and cook until just barely tender, about 3 more minutes.
  • Use a slotted spoon to transfer broccoli to a bowl of cold water, leaving the water boiling on the stove. Let broccoli sit until cool, about 2 minutes. Transfer to a colander and let sit until very well drained. Leave the bowl of cold water for the pasta.
  • Meanwhile, add manicotti to the boiling water and cook, stirring occasionally, until tender but slightly undercooked, 6 to 7 minutes. Use a slotted spoon to gently transfer manicotti into the bowl of cold water.
  • Chop cooled, drained broccoli into small pieces. Transfer 3 cups chopped broccoli to a mixing bowl and reserve any extra for another use.
  • Add garlic, ricotta, provolone, 1 ¼ cups Parmigiano-Reggiano, eggs, salt, cayenne, pepper, and nutmeg to the broccoli. Mix with a spoon until thoroughly combined. Cover and refrigerate until needed.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring tomato sauce and water to a simmer over medium-high heat.
  • Ladle ½ inch hot sauce into a 9x13-inch baking dish or lasagna pan. Sprinkle in cooked Italian sausage.
  • Transfer broccoli filling into a pastry bag. Cut off the tip slightly smaller than the opening of the manicotti. Gently pipe stuffing into 12 manicotti, being careful not to overstuff. Place stuffed manicotti in the sauce in the baking dish, angling as necessary to fit.
  • Ladle in just enough sauce to barely cover the manicotti. Sprinkle ¼ cup Parmigiano-Reggiano over top.
  • Bake in the center of the preheated oven until hot and bubbly, 25 to 30 minutes.
  • Garnish with parsley and let sit for 10 minutes.
  • Serve two manicotti per bowl, garnished with more Parmigiano-Reggiano.

15 ounce can Hunt's Tomato Sauce
1 teaspoon black pepper
1/2 teaspoon kosher salt
2 tablespoons fresh basil, chopped
1 teaspoon dried parsley

1/4 cup parmesan cheese, grated

Steps:

  • To prepare the Italian Sausage Marinara
  • Heat the olive oil in a large skillet, add the diced onions, cook 3-4 minutes then add the garlic and cook for an additional minute.
  • Add the sausage and cook through.
  • Add the red wine, tomato paste, diced tomatoes and tomato sauce.
  • Add the kosher salt, black pepper, fresh basil, parsley and oregano.
  • Reduce to low, cover and simmer 20-30 minutes.
  • To prepare the Three Cheese Manicotti
  • Bring a large pot of water to boil.
  • Add the manicotti shells and cook 4-5 minutes, drain, then set aside.
  • In a medium bowl, combine the ricotta, 1 cup mozzarella, parmesan, basil, parsley and oregano.
  • Place this mixture in a piping bag, or plastic bag with a cut corner.
  • Pipe the cheese mixture into the manicotti shells.
  • Pour half of the Italian Sausage Marinara in a casserole dish.
  • Layer the manicotti shells on top.
  • Pour the remaining sauce over the shells.
  • Top with the remaining cup of mozzarella cheese.
  • Place in the oven and bake for 20-25 minutes.

1 to 1 1/4 cups water
1 cup all purpose flour
2 eggs
1/8 teaspoon salt
Vegetable oil
Filling
1 pound ricotta cheese
1 cup grated mozzarella
1/2 cup grated Romano
1 egg
2 tablespoons chopped fresh parsley
Salt and pepper
1 1/2 cups prepared spaghetti sauce

Steps:

  • For crepes:
  • Whisk 1 cup water, flour, eggs and salt in medium bowl until well blended (batter should be thin). Add additional water if necessary. Heat heavy small skillet over low heat. Brush pan lightly with oil. Stir batter and ladle 3 to 4 tablespoons into corner of pan, tilting so batter just coats bottom. Cook crepe until bottom is set (do not brown), about 1 minute. Loosen edges with knife. Turn crepe and cook until second side is set (do not brown), about 5 minutes. Repeat with remaining batter, stirring occasionally and brushing pan with oil as necessary. (Can be prepared ahead. Layer crepes between sheets of waxed paper and cool completely. Wrap tightly and refrigerate 3 days or freeze 1 month. Bring to room temperature before using.)
  • For filling:
  • Mix ricotta, 1/2 cup mozzarella, Romano, egg and parsley in bowl. Season mixture to taste with salt and pepper.
  • Pour 3/4 cup spaghetti sauce into large baking pan. Spoon 3 tablespoons filling down center of crepe. Fold both sides of crepe over filling. Arrange seam side down in baking pan. Repeat with remaining filling and enough crepes to finish. Pour remaining 3/4 cup sauce over. Sprinkle with remaining 1/2 cup mozzarella. (Can be prepared 1 day ahead. Cover and chill.)
  • Preheat oven to 350°F. Bake until heated through, about 30 minutes.

This Roasted Garlic Three Cheese Stuffed Manicotti are filled with ricotta, mozzarella, Parmesan, fresh roasted garlic, and topped with your favorite marinara sauce. It is a classic Italian dish and a tried and true family favorite.

1 small garlic bulb
1 tsp olive oil
8 manicotti noodles
15 oz ricotta cheese
1 c mozzarella shredded
2/3 c fresh grated parmesan
1 large egg
1/3 c fresh chopped italian parsley (reserve 1 1/2 tablespoons for the top)
3 c marinara

Steps:

  • 1. Preheat oven to 400 degrees. Cut off the tip (not the root end) of a garlic exposing the cloves. Place in small baking dish. Drizzle with olive oil using your fingers to rub the olive oil all over the cut. Cover the dish with foil and bake for 35 minutes.
  • 2. Cook manicotti noodles according to package instructions.
  • 3. In medium bowl mix together ricotta, mozzarella, Parmesan, egg, parsley and at least six cloves from the roasted garlic (please see notes). In 8 x 11 inch casserole dish spread 1 cup marinara sauce. Stuff each manicotti with cheese mixture. You can stuff half of the manicotti, turn so you are holding the mixture in with the palm of your hand and stuff the other side. Place in dish and repeat until all the noodles are filled. Top with remaining marinara. Cover and bake at 350 degrees for 40 minutes. Allow to cool for 5 minutes, top with remaining parsley and serve.
  • 4. NOTES Roasted garlic is very sweet and mild. If you press on the stem end of the baked garlic clove it will easily squeeze out into the cheese mixture. I use a fork to mix the cheese mixture so I can break up the roasted garlic.

3 cups oyster mushrooms, chopped
2 cups leeks, chopped (white and pale green parts)
1 1/2 teaspoons garlic, minced
4 ounces lean ground beef
1/4 beef stock
2 tablespoons tomato paste
3/4 teaspoon dried thyme
1/2 cup 5% fat ricotta cheese
1/3 cup lowfat mozzarella cheese, shredded
3 tablespoons low-fat parmesan cheese, grated
1 large egg
1/8 teaspoon salt
1/8 black pepper, freshly ground
1 cup pasta sauce (I use Five Brothers Marinara & Burgandy Wine)
3 tablespoons skim milk

Steps:

  • Cook manicotti shells in large pot of boiling water fo 14 minutes.
  • Drain.
  • Rinse under cold water.
  • Drain.
  • Set side.
  • Cook mushrooms, leeks and garlic in large nonstick skillet sprayed with vegetable spray over medium-high heat for 8 minutes or until softened.
  • Add beef, stirring to break up.
  • Cook for 3 minutes or until no longer pink.
  • Add stock, tomato paste and thyme and cook fo 2 minutes.
  • Remove from heat.
  • Place beef mixture, ricotta, mozzarella, 2 tbsp parmesan, egg, salt and pepper in food processor.
  • Pulse on and off until well mixed.
  • Set Aside.
  • In a small bowl combine tomato sauce and milk.
  • Spread half of sauce over bottom of 13x9 baking dish.
  • Stuff each manicotti shell with about 3 tbsp filling and place in baking dish.
  • Cover with remaining sauce and sprinkle with remaining parmesan cheese.
  • Cover with foil and bake in preheated 375 degree oven for 20 minutes.

I made this up one night, when I had lots of cheese in the fridge and wanted something spicy and hearty. It's full of flavour and vegetarian but, as I said, it is very spicy thanks to the chipotles so don't make it if you've got mild tastebuds! The sauce is fairly liquid to start with but will thicken as the shells soak it up during cooking. Use the manicotti tubes that don't need to be pre-cooked for this recipe.

1/2 large onion, chopped
4 -5 button mushrooms, chopped
2 tablespoons olive oil
8 -10 manicotti
250 g fresh ricotta cheese
1 teaspoon dried basil
1 (7 ounce) can chipotle chiles in adobo
2 1/2 cups pasta sauce (your preferred brand)
1 1/2 cups water
1 cup grated parmesan cheese
125 g fresh mozzarella cheese, sliced thinly
salt and pepper, to taste

Steps:

  • Heat the oil in a frying pan and sauté the onions and mushrooms until they are soft and browned.
  • Put the cooked mushrooms and onions in a mixing bowl along with the ricotta and basil.
  • Open the can of chipotle peppers and take out 2 peppers.
  • Chop them finely and add to the cheese mixture.
  • Mix and season to taste with salt and pepper.
  • Now take another two chipotles and the remaining sauce in the tin and add them to the pasta sauce. You may have some chipotles left over and you can add them, to your taste. If you are worried about the spice, this is where you can cut back a bit.
  • Use a hand blender to purée the chipotles in with the rest of the sauce.
  • Add the water and pour 1/3 of the mixture on the bottom of a baking dish (about 9 x 13 or slightly smaller).
  • Start stuffing the uncooked manicotti with the ricotta cheese mixture, placing each shell in the baking dish as you go.
  • When all the shells are stuffed pour the rest of the sauce over.
  • It should be fairly watery and enough to cover the shells.
  • Cover with tinfoil and bake in a 200 C fan oven for 30 minutes.
  • If you don't have a fan oven, you will need to increase the heat by about 20°C.
  • After 30 minutes, take the tinfoil off and cook for a further 15 minutes.
  • Sprinkle the parmesan on top and lay the mozzarella over the pasta as well.
  • Grill for 3-4 minutes, or until the cheese is bubbling.
  • Let rest for 10-15 minutes and then serve.

FILLING:
1 1/2 c whole milk ricotta cheese (about 1 lb.)
1/2 c parmesan cheese, grated
2 c mozzarella cheese, grated
1 egg, slightly beaten
10 oz frozen spinach, slightly thawed and broken up into small pieces
3 Tbsp chopped fresh parsley (plus more for garnish)
2 Tbsp chopped fresh chives
1/2 tsp salt
freshly ground black pepper
8 oz package dried uncooked manicotti shells (about 14 shells)
SAUCE:
28 oz can chopped tomatoes
24 oz jar marinara sauce
1 1/2 c water

Steps:

  • 1. Prepare the filling by mixing the ricotta, Parmesan, half the mozzarella, egg, spinach, herbs, salt and pepper together in a bowl. Place the filling into a piping bag (or squeeze it into the corner of a zipper sealable plastic bag with the corner cut off).
  • 2. Squeeze the filling into the manicotti shells, using your fingers to push any extra filling into the ends.
  • 3. Combine the chopped tomatoes and the marinara sauce in a bowl.
  • 4. Pour the water into the bottom of the pressure cooker insert. Add a third of the sauce to the water. Place five of the filled manicotti shells into the sauce, making sure they are surrounded by sauce. Pour a third of the remaining sauce on top. Layer another five manicotti shells into the cooker and pour half of the remaining sauce on top. Finish by placing the remaining manicotti shells into the cooker and pour the remaining sauce over the top.
  • 5. Lock the lid in place and cook on HIGH pressure for 10 minutes. Let the pressure come down naturally. Remove the lid and test for doneness with a paring knife. Scatter the remaining mozzarella cheese on top and return the lid to the cooker. Let the dish sit for ten minutes so the cheese melts and the manicotti cools enough to eat it.
  • 6. Serve with chopped fresh parsley as a garnish.

10 large manicotti pasta, cooked and drained
1 Tbsp shredded parmesan cheese
16 oz low fat spaghetti sauce
1 tsp salt
10 oz frozen spinach, thawed and drained
1/4 tsp garlic powder
7 oz fat free cottage cheese
4 oz shredded mozzarella cheese
1/4 c egg whites, slightly beaten

Steps:

  • 1. Preheat oven to 400. In a 11x7 dish, spread 3/4 cup sauce evenly onto bottom; set aside. In a mixing bowl, combine spinach, cottage cheese, egg whites, Parmesan cheese, salt, and garlic powder. Mix well Stuff each cooked manicotti shell with heaping 1/4 cup spinach mixture. Arrage pasta over sauce in dish. Spread remaining sauce over pasta. Bake, covered, for 20 minutes, or until cheese has melted.

12 uncooked manicotti shells
1 pound ground turkey
1 large sweet onion, chopped
1 jar (24 ounces) three-cheese spaghetti sauce
2 teaspoons sugar
2 teaspoons Italian seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
2 cups (8 ounces) shredded cheddar-Monterey Jack cheese
1 carton (15 ounces) ricotta cheese
1/2 cup grated Parmesan cheese, divided
1 egg

Steps:

  • Cook manicotti according to package directions. Meanwhile, in a large skillet, cook turkey and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce, sugar, Italian seasoning, onion powder and garlic powder. Place 1 cup meat sauce into a greased 13-in. x 9-in. baking dish
  • Drain manicotti. In a large bowl, combine the cheddar-Monterey Jack cheese, ricotta cheese, 1/4 cup Parmesan cheese and egg. Stuff into manicotti shells. Place shells over meat sauce. Top with remaining sauce. Sprinkle with remaining Parmesan cheese.
