3/4 cup water (70° to 80°)
2 tablespoons butter, softened
2 tablespoons sugar
1-1/2 teaspoons salt
1/2 cup shredded Swiss cheese
1/2 cup 4% cottage cheese
3 tablespoons grated Parmesan cheese
3 cups bread flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed.)

2 teaspoons fresh yeast
1 cup all-purpose flour
3/4 cup warm water (95-105 F)
3 tablespoons honey
4 teaspoons fresh yeast
1/4 cup vegetable shortening, plus
1 teaspoon vegetable shortening (2 ounces)
4 3/4 cups all-purpose flour
1 tablespoon salt
1/2 cup romano cheese (1/2-inch cubes )
1/2 cup parmesan cheese (1/2-inch cubes )
1/2 cup asiago cheese (1/2-inch cubes )

Steps:

  • To create the starter, combine the water and yeast in a medium mixing bowl. Stir to dissolve the yeast fully. Add the flour to the bowl and stir until the ingredients are fully incorporated. Cover with a cloth and ferment the starter at room temperature for 30 minutes.
  • For the dough, combine the water, honey and yeast in the bowl of a stand mixer. Stir to dissolve the yeast fully. Add the shortening, flour, salt, cheeses and fermented starter. Mix on low speed until the dough is fully developed. Remove the dough from the mixing bowl.
  • Divide the dough into 2 pieces weighing about 22 ounces each. Set aside any remaining dough and freeze for future use. Roll each piece of dough into a smooth ball. Place the dough on the counter or in a proofing basket and cover with a warm, damp cloth to rest at room temperature for 30 minutes. Preheat the oven to 400°F.
  • Form the dough into loaves, cover with a warm, damp cloth and proof at room temperature for 30 minutes.
  • Score the loaves with a sharp knife, spray with water and bake for 30 minutes, or until the crusts are a deep golden brown and the middle of the loaves is 190-200°F.
  • Remove the bread from the oven and place on a cooling rack for 30 minutes. If the bread was baked in loaf pans, remove the bread from the pans before cooling.

20 frozen dinner rolls, thawed (the ball kind)
5 ounces grated asiago cheese
1/2 cup grated cheddar cheese
1/2 cup grated parmesan cheese
1/2 cup butter, melted
1 teaspoon garlic powder
1 garlic clove, cracked

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9x13 pan with cooking spray.
  • Put thawed rolls in pan and cover with plastic wrap sprayed with cooking spray.
  • Let rise for 1 hour.
  • Melt butter in microwave with cracked clove of garlic.
  • Mix cheeses together in a bowl.
  • Remove garlic clove from butter.
  • Dip each roll in butter then roll it around in the cheese mixture.
  • Put each roll back in pan and sprinkle entire top with garlic powder.
  • Sprinkle any remaining cheeses over top of rolls.
  • Bake at 350 for about 30-45 min or until golden brown.

A good protein filled bread (perfect for toddlers who only eat a few bites of food at any given meal!) I prefer to dice the cheese, rather than grate it, because then the machine doesn't mash it all up and you get the occasional bite of cheese in the bread... but it works just as well grated! addendum: i've made this recipe a few times since posting, and have found that i've needed to add another 1/4 c. milk, and decreased the salt to about 1/4 tsp. i found that after a few tries as the original recipe that it was a little too dry and didn't rise as much as i'd like. the dryness could be because i live in a super dry climate, so it might not be so for everyone. and i'm sure the yeast issue was because i like a super cheesy bread, and there's a lot of salt in cheese... hope this helps!

6 1/2 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
2 teaspoons dry mustard
1 tablespoon dried Italian herb seasoning
1 1/2 cups sour cream
2 cups beer, at room temperature
1/2 cup tomato juice
1 tablespoon Worcestershire sauce
2 eggs, beaten
2 cups gruyere cheese
1 cup parmesan cheese
2 cups white cheddar cheese

Steps:

  • 1. Preheat oven to 350 degrees F. Grease two 9×5-inch loaf pans.
  • 2. Grate all of the cheese.
  • 3. In a large bowl whisk together the flour, baking powder, salt, dried mustard and Italian herbs.
  • 4. Remove a 1/ 2 cup of the white cheddar and 1/2 cup of the Gruyere cheese and a 1/4 cup of the Parmesan and set aside for the topping of the bread. Add the rest of the cheeses to the flour mixture. Using your fingers mix in the cheese so all the cheese is coated in flour.
  • 5. In a separate bowl whisk together the beer, sour cream, tomato juice, eggs and worcestershire sauce until thoroughly combined.
  • 6. Add the liquid mixture to the dry ingredients and mix with a spatula just till mixed. Do not over mix.
  • 7. Divide the batter between the two greased loaf pans and press down with a spatula. Sprinkle the top with the cheese that was set aside earlier.
  • 8. Bake for 50 -55 minutes or until done. Allow to cool in the pans for 15 minutes before removing them from the pans. Place on a wire rack to cool.

2 tablespoons minced garlic
2 teaspoons parsley
1/3 cup graded parmesan cheese

  • In a bowl mix in the butter (making sure the butter has had time to get soft), garlic, parsley, Parmesan cheese, Cheddar cheese and Mozzarella cheese .

With grated Parmesan in the dough, and chunks of Asiago and provolone studded throughout, this bread is a cheese-lover's dream come true.

1 2 cups King Arthur Unbleached All-Purpose Flour
1 1 cup semolina
1 2 teaspoons instant yeast
1 1 1/4 teaspoons salt
1 1 tablespoon Pizza Dough Flavor, optional
1 2 tablespoons garlic oil or olive oil
1 1 to 1 1/8 cups lukewarm water
1 1 cup freshly grated Parmesan cheese
1 1 cup diced Provolone cheese, smoked or plain, mild or sharp
1 1 cup diced or coarsely crumbled Asiago cheese, mild or sharp

Steps:

  • Combine everything but the three cheeses, and beat on medium speed of an electric mixer to make a soft, smooth dough. It may or may not clear the sides of the bowl; either way is just fine. Switch to the dough hook, and knead for about 5 minutes.2) Add the three cheeses, and mix until well combined.3) Put the soft dough in a lightly greased bowl or 8-cup measure, cover, and let rise for about 2 hours, till very puffy.4) Lightly grease a 14" to 15" covered stoneware baker. Or lightly grease a baking sheet, or line with parchment. Sprinkle semolina into the pan, or onto the baking sheet.5) Gently deflate the dough. For one long loaf, shape it into a 13" log, and place in the stoneware baker. For two loaves, divide the dough in half, and place both halves on the prepared baking sheet.6) Tent lightly with greased plastic wrap (or cover the stoneware baker with its lid), and let rise for about an hour, till noticeably puffy. Towards the end of the rising time, preheat the oven to 425F.7) Take the plastic off the bread. Spray it with water, and use a sharp knife to make three diagonal slashes in each loaf.8) If you're using the stoneware pan, leave the cover on. Bake the bread for 30 minutes; remove the cover, and bake for an additional 10 minutes, till the bread is golden brown and an instant-read thermometer inserted into the center registers about 190F to 200F. If you're baking smaller loaves, check to see if they're done after 30 minutes. 9) Remove the bread from the oven, and take it out of the pan. If you've baked in the stoneware pan, loosen the edges, and carefully turn the bread out of the pan onto a rack to cool.Yield: 1 large or 2 smaller loaves.

1/4 cup extra-virgin olive oil plus 2 tablespoons
8 ounces cremini mushrooms, sliced
Kosher salt and freshly ground pepper
3 cloves garlic, minced
1 loaf soft French or Italian bread, halved lengthwise
3/4 cup part-skim ricotta cheese
1 cup shredded low-moisture mozzarella cheese
1/4 cup roughly chopped fresh parsley
2 tablespoons shredded parmesan cheese
Red pepper flakes, to taste
3 vine-ripened tomatoes, sliced
2 tablespoons balsamic vinegar

Steps:

  • Preheat the broiler. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and the mushrooms and season with salt and pepper. Cook, stirring occasionally, until the mushrooms are lightly browned, about 5 minutes; set aside.
  • Combine 1/4 cup olive oil and the garlic in a small bowl. Put the bread cut-side up on a baking sheet and drizzle with the garlic oil; season with salt. Broil until lightly toasted, 2 to 3 minutes. Spoon the ricotta on the bread, then top with the mushrooms and mozzarella. Broil until browned and bubbling, 2 to 5 minutes; transfer to a cutting board.
  • Cut the bread into pieces. Sprinkle with the parsley, parmesan and red pepper flakes. Drizzle the tomatoes with the vinegar and remaining 1 tablespoon olive oil and season with salt and pepper. Serve with the pizza.
