Three-Cheese Baked Ziti with Italian Sausage image

This version of baked ziti omits the usual ricotta cheese (or its substitutes) and adds Italian sausage, with very satisfying results!

nonstick cooking spray
1 (8 ounce) package shredded mozzarella cheese
1 (8 ounce) package shredded Italian cheese blend
1 (16 ounce) package ziti pasta
3 tablespoons olive oil, or more to taste
1 pound bulk Italian sausage
¼ teaspoon baking soda
1 cup diced onion
3 cloves garlic, diced
5 cups lower-sodium pasta sauce
⅓ cup sliced black olives
1 tablespoon whole fennel seeds
2 teaspoons Italian seasoning
1 teaspoon anchovy paste
½ teaspoon ground black pepper
¼ teaspoon crushed red pepper flakes
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 4-quart rectangular baking dish with nonstick spray. Combine mozzarella and Italian blend cheeses in a bowl and place in the refrigerator.
  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • At the same time, heat 3 tablespoons oil in a Dutch oven over medium-high heat. Add sausage and break up into morsels. Sprinkle baking soda onto sausage, then add onion and garlic. Cook and stir, continuing to break up any clumps as it cooks, until browned and crumbly, 5 to 7 minutes. Pour off and discard any grease.
  • Add pasta sauce, olives, fennel seeds, Italian seasoning, anchovy paste, black pepper, and red pepper flakes. Add up to 3 tablespoons more oil if desired, and continue stirring until mixture comes to a boil. Reduce heat and simmer, stirring regularly, until thickened, 5 to 10 minutes. Remove from the heat and stir in ziti.
  • Spread 1/2 of the sauced ziti into the prepared baking dish and sprinkle 1/2 of the shredded cheese mixture evenly on top. Spoon or ladle the rest of the ziti evenly on top without disturbing the layers underneath; it's okay to have some ziti partially exposed as they will brown handsomely and deliciously as they bake. Sprinkle remaining shredded cheese mixture on top and sprinkle Parmesan across the surface.
  • Bake, uncovered, in the preheated oven until bubbly, 20 to 25 minutes. Remove from the oven and let rest for 15 minutes before serving.

This is just one of those good weekday meals...easy to put together and versatile. Some times I add meat, some times I don't!

1 15 oz container part-skim ricotta cheese
2 eggs, beaten
1/4 c grated parmesan cheese
1 box 16 oz ziti pasta, cooked and drained
1 jar(s) 28 oz ragu chunky gardenstyle pasta sauce
1 c shredded mozzarella cheese

Steps:

  • 1. Preheat oven to 350 degrees. Boil the pasta; drain.
  • 2. In a large bowl, combine ricotta cheese, eggs and Parmesan cheese. In another bowl,thoroughly combine pasta and Ragu Chunky Gardenstyle Pasta Sauce.
  • 3. In 9x13 baking dish, spoon 1/2 of the pasta mixture; evenly top with ricotta cheese mixture, then remaining pasta mixture. Sprinkle with mozzarella cheese.
  • 4. Bake 30 minutes or until heated through. Serve, if desired, with additional heated pasta sauce.
  • 5. Hint...sometimes I add some cooked, crumbled Italian sausage to the pasta mixture!

15 ounces fat-free cottage cheese (or low-fat, if you can't find fat free)
2 eggs, slightly beaten
1/4 cup parmesan cheese
16 ounces ziti pasta, cooked and drained
1 teaspoon salt
26 ounces reduced-fat spaghetti sauce
4 ounces mozzarella cheese, shredded

Steps:

  • Preheat oven to 350.
  • Prepare a 13x9 pan with cooking spray; set aside.
  • In a mixing bowl, combine cottage cheese, eggs, and parmesan cheese; set aside.
  • In another mixing bowl, combine cooked pasta, pasta sauce, and salt. Spoon half of the pasta mixture into prepared pan; evenly top with cheese mixture, then remaining pasta mixture. Sprinkle with mozzarella cheese.
  • Bake for 30 miuntes, or until heated through.

1 pound penne rigate pasta
1 25 ounce pasta sauce, divided
1 cup part skim ricotta cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh basil
sea salt and fresh ground pepper
1 cup shredded mozarella

Steps:

  • Preheat oven to 350 F. Cook pasta according to package intstructions. Allow to cool 5 minutes. Meanwhile, combine 1 1/2 cups pasta sauce, ricotta cheese, Parmesan and fresh basil in a large bowl. Season with salt and pepper to taste. Toss the pasta with the cheese and sauce mixture. Set aside. Spread 1/2 cup pasta sauce in the bottom of a baking dish. Pour the pasta mixture into the dish and drizzle the remaining sauce over the top. Sprinkle with mozarella cheese. Bake uncovered, until the top is golden brown and bubbly, about 30 minutes.

3 cups ziti or other tubular-shaped pasta cooked and drained
1 Container (15 ounces) Ricotta cheese
1 Can (8 ounces) Italian-flavored tomato sauce
1/2 cup Parmesan cheese freshly grated
1 Package (8 ounces) Mozzarella cheese shredded, divided

Steps:

  • 1 Preheat oven to 350 degrees F. 2 Combine cooked sausage, cooked ziti, Ricotta and Parmesan cheeses and half of the shredded Mozzarella; stir to blend. 3 Spoon pasta mixture into a buttered shallow 2-quart casserole; drizzle with tomato sauce; sprinkle with remaining cheese. 4 Cover with foil and bake for 35 minutes or until mixture is bubbly and hot. Uncover and bake until cheese melts, about 5 minutes. Servings: 4
