I first made this sauce to go with"chicken breasts with cornmeal crust and black bean salsa" ( posted) but it is so tasty and goes with so many things.

5 tablespoons lemon juice
3 tablespoons mayonnaise
2 tablespoons honey
5 garlic cloves
2 teaspoons minced chipotle chiles, canned
1 1/2 teaspoons chili powder
1 large red bell pepper, seeded, sliced
1 large yellow bell pepper, seeded, sliced
1 large green bell pepper, seeded, sliced

Steps:

  • Puree first 6 ingredients in blender.( can be made 1 day ahead and refrigerated).
  • Toss sliced bell peppers and dressing together in a large bowl. Cover and refrigerate about 4 hours.

1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
2 cups whole milk, plus more if needed for thinning
1 cup mayonnaise
2 tablespoons sugar
4 teaspoons white vinegar
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt
2 chipotle peppers in adobo, chopped, plus 1 tablespoon adobo sauce
2 cup fresh cilantro, barely chopped

Steps:

  • Combine the shredded green and purple cabbage in a large bowl. In a separate bowl, mix the milk, mayonnaise, sugar, vinegar, black pepper, cayenne, salt and chipotles and adobo sauce. Add more milk if you like the dressing a little thinner.
  • Pour the dressing over the cabbage and toss to combine. Just before serving, toss in the cilantro. You can mix the slaw up to 2 hours before serving.

2 Tbsp. chipotle peppers in adobo sauce
2 Tbsp. fresh lime juice
2 tsp. honey
1 tsp. ground cumin
Kosher salt and freshly ground black pepper
1 medium head green cabbage, finely shredded
2 large carrots, finely shredded
1 small onion, halved and thinly sliced
1/4 cup chopped fresh cilantro

Steps:

  • Combine Hellmann's® or Best Foods® Real Mayonnaise, chipotle peppers in adobo sauce, lime juice, honey and cumin in large bowl. Season, if desired, with salt and black pepper. Stir in remaining ingredients. Cover and refrigerate at least 20 minutes before serving.
  • Also terrific with Hellmann's or Best Foods Light Mayonnaise.

3 tablespoons fat-free mayonnaise

12 ounces jicama, peeled, cut into thin strips

Steps:

  • Purée first 6 ingredients in blender. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.)
  • Toss bell peppers, jicama and dressing in large bowl to coat. Season slaw with salt. Cover and refrigerate until vegetables soften slightly but are still crunchy, about 4 hours.
  • Mix chopped parsley into coleslaw. Serve at room temperature.

PEPPER SLAW

This is served at most restaurants in the Pennsylvania Dutch area. It's really good! Vegetables should be chopped very fine. Prep time is based on using my food prossessor.

1/4 cup green pepper, cut fine
1/4 cup red pepper, cut fine (optional)
1 teaspoon salt
2 tablespoons sugar
1/3 cup vinegar (more if desired)

Steps:

  • Dissolve the sugar and salt in the vinegar and pour over the cabbage and peppers.
  • Taste for seasoning and add more if desired.
  • Add celery seed last.

1/2 cup fresh cilantro, chopped
cubed avocado
diced green peppers or red pepper
hard-boiled egg
black beans

Steps:

  • Whisk mayonnaise, broth, shoyu, lemon juice, chipotles, salt and brown sugar in medium bowl to blend.
  • Taste dressing and adjust seasoning, adding salt and pepper if desired.
  • Dressing can be prepared one day ahead of time.
  • Mix lettuce, tomatoes and corn in a large bowl.
  • Add dressing and 2 tablespoons cheese.
  • Toss to coat well.
  • Sprinkle with remaining cheese and chopped cilantro and serve.

This is my grandmother's recipe for sweet and sour cabbage slaw that couldn't be simpler to make! My family loves it as a side dish for grilled burgers and hot dogs, but it works equally well in winter time with roast pork, or beef.

2 green bell peppers, diced
salt to taste
1 cup vinegar
1 ½ cups sugar
2 tablespoons celery seed

Steps:

  • Toss the cabbage and bell pepper together in a large bowl. Season the mixture liberally with salt; stir. Allow to sit 45 minutes; drain and return to the bowl.
  • Bring the vinegar and sugar to a boil together in a saucepan. Immediately remove from heat and stir into the cabbage mixture. Add the celery seed; mix thoroughly. Chill completely before serving.

I serve pulled pork with baked beans and some of this lovely, creamy coleslaw, then sit back and collect the compliments! Again, this makes a LOT, so adjust accordingly. This recipe is easily increased or decreased. Use a 16-ounce package of coleslaw mix for every six guests.

3 (16 ounce) packages coleslaw mixed vegetables
2 large carrots, grated
2 bell peppers, cut into short, thin slivers (I use 1 each red and yellow)
1 medium red onion, halved and sliced thin
1 1/2 teaspoons celery seeds
1 3/4 cups mayonnaise
6 tablespoons rice wine vinegar
salt and black pepper, to taste

Steps:

  • In a large bowl, toss together all vegetables and celery seed.
  • In a small bowl, combine the mayonnaise, vinegar, salt and pepper.
  • Toss together the vegetables and dressing until thoroughly combined. Taste and correct seasoning.
