2 Haas avocados peeled, seeded, and coarsely chopped
2 tomatillos scrubbed, and coarsely chopped

1 small jalapeño finely chopped

TOASTED CUMIN CREMA:
1 tablespoon cumin seeds

SOUP:
2 tablespoons olive oil
1 medium carrot peeled, and coarsely chopped
1 medium onion coarsely chopped
3 garlic cloves coarsely chopped
1 cup red wine
3 cups black beans picked over, soaked for 8 hours and drained
3 jalapeños roasted, peeled, and seeded
1 poblano roasted, peeled, and seeded
4 cups water
2 tablespoons fresh lime juice

Steps:

  • White Corn Chips with Tomato-Serrano Relish: Heat oil to 365 degrees. Fry chips in batches and drain on paper towels, salt while warm. Combine tomatoes and serranos in a bowl and season with salt and pepper to taste. Grilled Onion Relish: Heat a grill or grill pan over high heat. Brush onion slices with olive oil and grill on both sides for 3 to 4 minutes or until lightly charred and cooked through. Remove and chop finely. Tortillas with Avocado-Tomatillo Relish: Fry tortillas in oil, drain on paper towels and salt while warm. Gently combine remaining ingredients in a bowl and season with salt and pepper to taste. Toasted Cumin Crema: Place a small saute pan over medium high heat and heat until almost smoking. Add the cumin seeds and toast for 1 to 2 minutes. Place the seeds in a coffee grinder and grind to a powder. Place the crema in a small bowl, add the ground cumin and lime juice and season with salt and pepper to taste. Soup: Heat the olive oil in a medium saucepan over medium heat, sweat the carrots, onion and garlic for 5 minutes, or until translucent. Add the wine, bring to a boil, and cook until reduced. Add the beans. Reduce the heat to medium, add the jalapeños, poblano, and water and simmer for 1 to 1 1/2 hours or until the beans are cooked through. Remove from the heat and add the lime juice, and salt and pepper to taste. Remove half the mixture and puree in a food processor, then return it to the pot and stir well. Serve: Ladle soup into individual bowls. Drizzle with the Toasted Cumin Crema and top with a tablespoon of each of the relishes. Serve immediately. This recipe yields 8 servings.

For those transitional chilly spring days when it's still brisk enough to merit a bowl of soup, this is your answer. It's a lighter, brighter stew that leans more on fresh beans than it does the dried ones. Just keep in mind you have to soak the lima beans overnight.

2 medium leeks, dark green parts removed
1 head of garlic, cloves separated
3 oz. bacon, chopped
2 Tbsp. plus 1/2 cup extra-virgin olive oil, plus more for drizzling
2 small fennel bulbs, finely chopped, fronds reserved
1 celery stalk, finely chopped
3 sprigs thyme
1 bay leaf
1 Tbsp. plus 3/4 tsp. kosher salt
3/4 cup dried large lima beans, soaked overnight
3/4 tsp. red pepper flakes
8 oz. Romano beans, cut into 1" pieces
8 oz. sugar snap peas, trimmed, halved crosswise
1/2 small bunch dill
1 lemon
1/4 cup crème fraîche or sour cream
1 tsp. freshly ground black pepper
2 oz. Parmesan, shaved
Toasted crusty bread (for serving)

Steps:

  • Quarter leeks lengthwise, then cut crosswise into 1/2" pieces. Rinse leeks in a fine-mesh strainer and pat dry with paper towels. Smash garlic cloves with the flat side of a chef's knife and peel; set 2 cloves aside.
  • Cook bacon in a large Dutch oven or other heavy pot over medium heat, stirring, until golden brown and starting to crisp, 8-10 minutes. Add smashed garlic and 2 Tbsp. oil and cook, stirring often, until garlic is just beginning to turn golden 3-4 minutes. Add leeks, chopped fennel, celery, thyme, bay leaf, and 1 Tbsp. salt. Cook, stirring often, until vegetables are beginning to soften, about 4 minutes. Add lima beans, red pepper flakes, and 6 cups water and bring to a simmer. Partially cover pot, reduce heat to low, and gently simmer, occasionally skimming and discarding any foam that rises to the surface, until beans are slightly crunchy but not quite creamy, 25 minutes. Add Romano beans and snap peas, return to a simmer, and continue to cook, adding just enough water to keep beans submerged, until dried beans are creamy and fresh beans are just cooked through, about 15 minutes more.
  • Meanwhile, pulse dill, zest of whole lemon, fennel fronds, and 1 reserved garlic clove in a food processor until finely chopped. With the motor running, stream in 1/2 cup oil. Add 3/4 tsp. salt and squeeze in 2 tsp. lemon juice. Transfer pesto to a small bowl and set aside.
  • Remove stew from heat and stir in crème fraîche, black pepper, and 4 tsp. lemon juice. Taste and adjust seasoning.
  • Rub bread with remaining garlic clove, drizzle with oil, and season lightly with salt.
  • Ladle soup into bowls. Drizzle with pesto, then top with shaved Parmesan. Serve with garlic bread and remaining pesto alongside.

Inspired by some beautiful heirloom cannellini beans I had in my pantry, I decided to combine them with the favas that are just about to disappear from markets and the green beans that will be around into the fall. I cook the favas and green beans separately and stir them into the soup a few minutes before serving so they'll retain their bright green color.

1/2 pound (1 heaped cup) white beans, like navy beans or cannellini, washed, picked over and soaked overnight or for 6 hours
1 bay leaf
Salt and freshly ground pepper
2 tablespoons olive oil
1 medium onion, cut in half, half finely chopped
6 garlic cloves, 2 peeled, 4 minced
1 large carrot, diced
1 celery stalk, diced
1 red bell pepper, diced
A bouquet garni made with a few sprigs each parsley and mint, and, if desired, a Parmesan rind
1/2 pound green beans, ends trimmed
1 pound fava beans, shelled and skinned
2 tablespoons chopped flat-leaf parsley
2 tablespoons chopped fresh mint
Freshly grated Parmesan for garnish

Steps:

  • Drain the white beans and combine with 7 cups water, the intact half of the onion, the 2 peeled garlic cloves and the bay leaf in a large saucepan. Bring to a boil, skim off any foam that rises and reduce the heat. Cover and simmer 1 hour, until the beans are just tender. Add salt to taste and freshly ground pepper.
  • In a heavy soup pot or Dutch oven, heat the olive oil over medium heat and add the chopped onion, carrot and celery. Cook, stirring, until vegetables are tender, about 5 minutes, and add the garlic and the red bell pepper. Cook, stirring, until the garlic is fragrant, about 1 minute. Add the beans with their liquid and the bouquet garni, and bring back to a boil. Reduce the heat, cover and simmer 1 hour, until the beans and vegetables are tender and the broth is aromatic. Taste and adjust salt. Add freshly ground pepper.
  • Meanwhile, rinse out the saucepan you started the beans in, fill halfway with water and bring to a boil. Fill a bowl with ice water. When the water in the saucepan comes to a boil, add salt to taste and drop in the green beans. Boil 4 minutes, and then transfer the beans to the ice water without draining the pot, using a slotted spoon or strainer. Drain the beans and cut in 1-inch pieces. Bring the water in the saucepan back to a boil and shell and skin the favas.
  • Shortly before serving the soup, stir in the chopped parsley and mint, add the green beans and skinned favas and simmer for a few minutes. Serve, topped with Parmesan cheese if desired.

THREE-BEAN LENTIL SOUP

An easy, hearty soup made from items found in the pantry. It can be made in the crock pot also by combining all of the ingredients, except for the oil, and cooking on low for 8 hours but I like it better made on top of the stove. Sauteing the onions and garlic gives the soup a whole different flavour which doesn't come across in the crock pot version.

4 teaspoons curry paste

1 (19 ounce) can chickpeas, drained and rinsed
1 (19 ounce) can red kidney beans, drained and rinsed

1 teaspoon lemon juice

  • In a large saucepan or Dutch oven, heat the oil over medium heat.

1 tsp canola oil
3 large carrots, chopped
2 stalk(s) celery, chopped
2 small onions, chopped
2 clove garlic, chopped fine
1 c ham, diced (i use half a ham steak)
4 to 6 c chicken broth, reduced sodium, fat free
1 can(s) black beans, 15 oz. (drained and rinsed)
1 can(s) great northern beans, 15 oz (drained and rinsed)
1 can(s) dark red kidney beans, 15 oz (drained and rinsed)

Steps:

  • 1. Heat 1 teaspoon of Canola oil in a cast iron pot (dutch oven). Medium heat is good.
  • 2. Saute carrots, celery, and onion until translucent. About five (5) minutes
  • 3. Add garlic, ham, and chicken broth. Bring to slow boil.
  • 4. Reduce heat and add three types of beans. (Sometimes I will mash some of the great northern beans first, to thicken the soup)
  • 5. Put on the lid and let it simmer for as long as you need it to simmer. You can eat it right away or let the flavors "marry" first.
  • 6. Enjoy with a big hunk of crusty bread, butter and Table Syrup!

1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup golden raisins, hydrated in warm water
1/2 cup pine nuts, slightly toasted
Flour
1 cup vegetable oil

Steps:

  • Add the olive oil and butter in a Dutch oven and place over medium heat. Saute the onions, carrots and celery for 5 minutes.
  • In a saucepan add beef stock and bring to the boil on a medium heat, once the vegetables have softened add the simmering stock to the Dutch oven. (We should never add a cold liquid to an already heated pot as it dramatically drops the heat and slows down the cooking process.)
  • As the stock is at temperature, add the lentils, barley and stir the broth. Place the lid back on and let the mixture cook for 5 minutes. Then add the drained and rinsed beans and cook for an additional 5 minutes.
  • Add the browned turkey meatballs to the stock. Meanwhile, begin making your dumplings.
  • In a mixing bowl add the flour, salt, baking powder and Dijon mustard. Sparingly add the water to the mixture and fold mixture until it forms a dough. With 2 tablespoons mold your dumplings 2 inches in diameter then drop them into the already simmering turkey meatballs and bean soup. Cook together for an additional 25 minutes with the lid on. Once the dumplings have risen and expanded, serve!
  • In a heated skillet add olive oil and onions. Slightly cook them for about 5 minutes (we want the onions softened not colored). Place into a bowl and let cool.
  • Take the 2 cups of broken up bread and place into a bowl with the milk. Let the bread soak for 5 minutes. Squeeze and drain the bread then place it into a large mixing bowl. Add the turkey meat, beaten eggs, chopped parsley, salt, black pepper, golden raisins and toasted pine nuts.
  • Fold all ingredients together. Do not over work the turkey meat.
  • Fill a Dutch oven with vegetable oil and place on low heat. Dust a baking sheet with about an inch of flour.
  • In your hands scoop up a two-finger portion of the turkey mixture and with the palm of your hands shape the balls a little larger than a golf ball. As you make the balls add them to the baking tray with the flour and roll them until evenly coated.
  • Carefully add the meatballs to the oil and brown for about 6 minutes. Transfer turkey meatballs to a plate and set aside for bean soup. Pour excess oil into a bowl.

1 c dry beans - you choice, i used navy, garbanzo, and lentils
1/2 lb bacon
1 medium onion, diced
3 stalk(s) celery, diced
1 Tbsp chopped chive
3 medium carrots, diced
3 medium parsnips, diced
1 bay leaf
1/2 tsp garlic
fresh ground pepper to taste

Steps:

  • 1. In a stock pot cover Navy and Garbanzo beans with water. Bring to a boil for 3 minutes. Turn off heat and let beans sit for 1 hour.
  • 2. Drain beans. In the pot you boiled the beans in melt 2 Tablespoons of butter - add bacon, onion, and celery; cook until tender.
  • 3. Add beans, chives, and 4 cups of fresh water. Add garlic powder and a little pepper. Cook on medium low for 1 hour.
  • 4. Add carrots, parsnips, and lentils. Cook 20 more minutes. Add salt and pepper to taste. Enjoy! Pictures soon to follow - I'm cooking up a pot of this right now (:

1 (46 ounce) can chicken broth
4 cups water
1 (16 ounce) can plum tomatoes, drained, seeded, coarsely chopped
3 garlic cloves, minced

1 bay leaf

freshly grated parmesan cheese (to garnish)
sour cream (to garnish)
1 medium tomatoes, diced, for garnish

Steps:

  • Soak beans overnight in plenty of cold water; or boil 2 minutes, cover, and let stand 1 hour. Drain beans.
  • Heat oil in Dutch oven over medium heat. Add onions and cook, stirring occasionally, until softened. Add celery and carrots and cook 3 minutes longer.
  • Add broth, the water, beans, tomatoes, garlic, 1/4 cup parsley, and the bay leaf. Boil uncovered 10 minutes. Reduce heat and simmer uncovered until beans are tender, about 1 hour. Remove bay leaf.
  • Puree half the soup in food processor or blender and return to saucepan. Season with salt and pepper and stir in remaining 1/4 cup parsley.
  • Serve soup hot with Parmesan cheese, sour cream, and tomato.

1 can (28 ounces) crushed tomatoes
1 can (10-1/2 ounces) condensed beef consomme, undiluted
1 cup water
1/2 cup medium pearl barley
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/4 ounces) lima beans or 1 can (14-1/2 ounces) cut wax beans, drained
1 can (14-1/2 ounces) cut green beans or Italian-style green beans, drained
Grated Parmesan or Romano cheese

Steps:

  • In a stockpot, cook beef over medium heat until no longer pink; drain. Add the tomatoes, consomme, water, barley, onion, salt, marjoram and thyme; bring to a boil. I made this soup the other day. It was for crockpot but I did it on the stove.Super easy and everyone really enjoyed it.

1 (16 ounce) can pork and beans
1 (16 ounce) can lima beans
1 (16 ounce) can chili beans (I use Brooks Mild Chili beans)
1 lb lean ham, cubed (I used left over Easter ham)
1 (10 ounce) can condensed tomato soup
1 (1 1/4 ounce) envelope dry onion soup mix
4 cups hot water

Steps:

  • Spray crock pot with nonfat cooking spray. Pour all cans of beans in cooker.
  • With a hand-held mixer beat beans in crock pot on high speed for 1 minute to make a thick base for the soup.
  • Add cubed ham, tomato soup, onion soup mix and water. Stir until well mixed. Cover and cook on high for 2 to 3 hours or on low for 4 to 6 hours.
  • Directions for stove top: Cook on medium- low heat for about an hour. Stir often.

2 large carrots
14 oz can stewed tomatoes
4 oz chopped green chiles

2 TB beef boulion granules

2 cloves garlic

Steps:

  • Saute onions, garlic, and carrots in olive oil until tender. Add all other ingredients except corn. Bring to a boil. Reduce to a simmer and simmer for 1-2 hours. About 15 minutes before done, add corn. Serve with a mexican cheese mix on top.
