CREAMY BAKED CABBAGE
This delicious cabbage recipe is simple to prepare and is usually readily accepted by everyone except the true die-hard cabbage haters. The milk and cheese add the pleasing creaminess to this dish.

Steps:
- Heat oven to 350.
- Butter a 12x8" shallow baking dish.
- Slice the cabbage into 12 wedges.
- Pour 1 cup water in large skillet and bring to boiling.
- Add 1 teaspoons salt and the cabbage.
- Cook over medium heat, covered, 10 minutes.
- Drain well.
- Arrange cabbage in prepared baking dish and sprinkle with mixture of flour, sugar, 1 teaspoons salt and the pepper.
- Dot with butter and pour hot milk over cabbage; sprinkle with cheese.
- Bake, uncovered, 35 minutes.

A lo carb veggie dish that I have not tried yet, listing it here for safe-keeping. This came from The Carbohydrate Addict's Cookbook.It sounds like something warm and satisfying for a cold winter's day.

Steps:
- Preheat oven to 375 degrees F.
- Heat 1 TBS olive oil in a small skillet over medium heat. Add cabbage, celery, onion and saute 7 to 8 minutes, or until tender.
- Coat a 10 by 6 inch baking dish with remaining 1 TBS of olive oil and add cabbage mixture.
- In a medium bowl, combine milk, cheese, salt, eggs, and egg white, stirring well. Pour over cabbage mixture.
- Combine parsley and Parmesan cheese and sprinkle over cabbage mixture.
- Bake for 40 to 45 minutes. Let stand 5 minutes before serving.

12-SECOND COLESLAW
When people think of coleslaw, they think of that bowl of soggy, shredded cabbage sitting at the end of the picnic table. This is a completely different approach; a fresh-shredded cabbage prepared as a fast (12 seconds adding ingredients, 30 seconds to mix), crisp, low-cal, low-carb, slightly spicy, and delicious side dish that you should be eating as part of your regular veggie side-dish rotation. - Cook cabbage in boiling water until tender; drain thoroughly. In a large skillet, saute onion in 5 tablespoons butter until tender. Stir in soup. Add cheese; stir until melted. Remove from the heat. Stir in the cabbage, salt and pepper. , Transfer to an ungreased 2-qt. baking dish. In a small skillet, melt remaining butter. Cook and stir crumbs in butter until lightly browned; sprinkle over casserole. , Bake, uncovered, at 350° for 20 to 30 minutes or until heated through.

CORNED BEEF AND CABBAGE HASH
My mom sent me this recipe from the March 18, 2009 Orlando Sentinel. It is from a syndicated column called "Seriously Simple" by Diane Rossen Worthington. The article reads: "Corned beef and cabbage might be the ultimate simple recipe. What could be easier than slowly cooking a corned beef with winter vegetables? Not much. I use St. Patrick's Day as an excuse to serve the dish for dinner; but I mostly like it for corned beef hash later in the week. Corned beef hash had become so popular in America by the mid-19th Century that diners and lunch counters offering some form of the dish on their menus were nicknamed hash houses. One variation on this dish is red flannel hash, which is made by adding 2 or 3 cooked, peeled and cubed beets to the mixture. Adding briny cooked cabbage brings in a bold flavor dimension. I like to serve the hash in small ramekins for brunch with scrambled eggs or poached eggs." The recipe recommends the following: "Also try Yukon gold potatoes for the hash. The hash may be prepared up to 2 days ahead, covered and refrigerated. Reheat in a skillet over medium heat. Serve the hash topped with poached eggs, if you like." I haven't tried this yet, but putting it here for safekeeping. Let me know how you like it! I will say I like my hash baked in individual ramekins with an egg nested into each one to bake. If you do this, my general rule is 325 for 30 minutes or until the egg is set as much as you like. Enjoy!

- Heat a large saucepan of lightly salted water to a boil. Add the potatoes; boil until cooked but still slightly resistant when pierced with a fork, 7-10 minutes. Drain well.
- Place the potatoes, corned beef, cabbage, cream, chopped parsley, Worcestershire sauce, salt and pepper to taste in a large bowl. Mix well.
- Heat the vegetable oil in a large non-stick skillet over medium heat. Add the onion; cook, stirring occasionally, until softened, 4-5 minutes. Add the potato mixture to the onions; mix well.
- Cook hash, flattening with a spatula as it cooks, over medium-high heat until a slight crust forms on the bottom, about 10 minutes. Occasionally run the spatula around the edges of the skillet to keep the potatoes from sticking. Turn the mixture over; cook, stirring often, until crusty and browned, about 14 minutes. Serve on a platter or in ramekins. Garnish with parsley sprigs.
BAKED CABBAGE
This is one of my favorite dishes at Millers Smorgasbord in Lancaster, PA. They were nice enough to give me the recipe! Great for Thansgiving!

Steps:
- Preheat oven to 350.
- Core cabbage and cut into 2x2 pieces. Steam for 8-9 minutes.
- Remove cabbage from steamer (careful-very hot) and place in mixing bowl with all other ingredients except cheeses. Mix thoroughly.
- Place cabbage mixture in 9x9 casserole dish and pack firmly so it is even with the top of pan.
- Sprinkle cheeses evenly over top of cabbage.
- Bake for 8-10 minutes or until cheeses start to melt and turn golden brown.
- Remove from oven and garnish with fresh chopped parsley.
- Enjoy!
