Lots of vegetables gives this sauce a meat sauce look but isn't. I had friends come over while it was cooking and taste it a thought it was a meat sauce. I great way to get a variety of vegetables into your family without the I don't like that veggie! This freezes well so you can divide into freezer bags for future use (if it lasts). Use on pasta, in stew, bean dishes, top a pizza, or in soups. This can make this on your stove top as well.

3 -4 tablespoons olive oil
1 onion, diced
1 carrot, diced
6 garlic cloves, minced
1 stalk celery, diced
1 pepper, diced
1 large eggplant, peeled and diced
1 large portabella mushroom, gills removed and diced
3 (28 ounce) cans crushed tomatoes
2 tablespoons dried Italian herb seasoning
1 tablespoon sugar
1 teaspoon salt
1 teaspoon pepper
4 fresh basil leaves, roughly torn
1 tablespoon fresh parsley, roughly torn

Steps:

  • Heat oil in a large deep heavy bottom pot over medium high heat.
  • Add next 7 ingredients and saute till almost tender about 10 minutes stirring frequently.
  • Transfer to a large crock pot add tomatoes, dried seasoning, sugar, salt, and pepper.
  • Cook for 5-6 hours on high stirring ever so often.
  • If it starts to stick to bottom turn to low or finish by adding the fresh herbs.
  • If you`re not around to stir cook on low till desired thickness.

1 pound onions, chopped coarse
2 large cloves garlic, chopped fine
1 tablespoon olive oil
1 pound yellow or red and green peppers, chopped coarse
1/2 pound carrots, chopped fine
3/4 pound mushrooms, trimmed and chopped coarse
1 28-ounce can no-salt-added tomato puree
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup water
1 1/2 cups instant couscous

Steps:

  • Saute onions and garlic in hot oil in a nonstick skillet until onions soften and begin to brown.
  • Add peppers, carrots and mushrooms and continue cooking over medium heat for 15 minutes.
  • Add tomato puree, oregano, basil and water and cook over low heat for about 15 minutes longer, until flavors are well blended.
  • Meanwhile, cook couscous, following directions on package. To serve, pour the sauce over the couscous.

2 table sppons Virgin Olive oil
1 lb Lean Ground Beef
1 lb of Ground Sweet or Hot Sausage
2 table spoons oregano
8 leaves fresh basil
1 15 oz can of Tomato Sauce
1/2 or 3oz of a 6oz can of Tomato Paste
1 29oz Can of Tomato Puree
1 15oz can Sliced Stewed Tomatos
1 large Yellow Onion
Two cloves chopped garlic
1 pound of Sweet or Hot Italian Sausage links
29 oz of water or fill the crushed tomato can
1 cup of any red wine

Steps:

  • Mince the yellow onion. In a 5 quart sauce pan, heat the 2 tablespoons of the Olive oil saute onions and garlic, after tender but not brown add 1 lb of ground beef and 1 lb of ground sausage. After meat is browned, add all remaining ingredients. Simmer for at least two hours on low heat..Stir often. Sauce should be thick. If you prefer a less thickness add more water or wine to sauce at any point during the cooking. Serve over your favorite Pasta, Gnocchi , Tortellini or Ravioli.

1 tablespoon extra virgin olive oil
2 teaspoons minced fresh garlic (about 2 cloves)
2 roma tomatoes, diced into 1/2 inch cubes (plum)
1 teaspoon chopped fresh oregano leaves (or 1/2 teaspoon dried)
1/2 teaspoon salt
1 pinch fresh ground black pepper
1 tablespoon tomato paste

Steps:

  • Cook the garlic in the olive oil in a nonstick pan, over medium heat for 1 to 2 minutes, until the garlic's just starting to be translucent.

1 medium onion, sliced
1 clove garlic, crushed
1 16-ounce can whole plum tomatoes
Kosher salt and freshly ground pepper
Pinch crushed red pepper

Steps:

  • Heat olive oil in a large skillet, add onion and garlic and cook over medium low heat, stirring, until the onion is soft but not brown. Add remaining ingredients including liquid from the tomatoes.

1/2 cup dried red lentils
1/2 medium onion
1 1/2 cups water
1/2 cup shredded cheese (i used cheddar and monteray)
1/4 cup shredded parmesan cheese
2 teaspoons seasoning (i used celery salt, parsley, onion pw)

3/4-1 cup tomato sauce (or favorite pasta sauce)
1 garlic clove

Steps:

  • Cook the lentils in the water until tender. I do a taste test for the lentils to see if they are done. Drain the lentils if they are a little watery. Saute the onion with garlic in oil over medium hear until onion is tender.
  • Add the seasoning, lentils, tomato sauce and cheese. Stir until cheese is melty and everything is well combined. Pour over or spoon over (depending how thick it is) pasta.

About 5 tablespoons extra virgin olive oil
(or substitute 2 tablespoons extra virgin olive oil and 3 tablespoons garlic oil)
2 cups diced red bell pepper (1/4-inch dice)
2 tablespoons minced garlic
2 cups diced red onion (1/4-inch dice)
Gray salt and freshly ground pepper
2 tablespoons tomato paste
1 can (28 ounces) whole tomatoes, chopped
1-1/2 cups double-strength Chicken Stock, or 3 cups canned low-salt chicken broth boiled until reduced by half
1 bay leaf
2 tablespoons unsalted butter
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh basil

Steps:

  • Heat 1/4 cup of the olive oil (or 2 tablespoons olive oil and 2 tablespoons garlic oil) in a heavy saucepan over medium-high heat until hot. Add the bell pepper and sauté until brown, about 7 minutes. Add the remaining 1 tablespoon olive oil, if necessary, and the garlic, and cook briefly until light brown. Add the onion and a pinch of salt (if the pan is dry and the ingredients look as if they might burn, adding salt will release the liquid in the onions), and cook until brown, about 5 minutes. Add the tomato paste and stir to mix well. Add the tomatoes and their juice, the stock, and bay leaf. Bring to a boil, reduce the heat to low, and simmer the sauce until thick, about 25 minutes. Be sure to stir often to prevent scorching. Add the butter, oregano, parsley, and basil and stir well. Adjust the seasoning with salt and pepper. Use immediately, or let cool, cover, and refrigerate for several days, or freeze for up to 1 month.
