I noticed that most (all?) the pizza sauce recipes call for either tomato paste or tomato sauce or both. I wanted to do it from scratch! So I experimented until I got it right. This is much better than the store-bought sauce with none of those nasty preservatives.

10 roma tomatoes
1 cup water
2 tablespoons olive oil
ΒΌ cup white sugar
2 tablespoons garlic salt
1 tablespoon white vinegar

Steps:

  • Place tomatoes, water, and olive oil in a blender or food processor; blend until smooth. Transfer tomato mixture to a large pot.
  • Stir sugar, garlic salt, and vinegar into tomato mixture and bring to a boil. Reduce heat to medium-low and simmer until thickened, 1 to 2 hours, stirring occasionally.
  • Pour tomato sauce into a clean blender or food processor no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until tomato sauce is very smooth.

2 tablespoons Olive Oil
1 clove Garlic
28 ounces Can Crushed Tomatoes
6 ounces Can Tomato Paste
1/2 tablespoon Sugar
3/4 teaspoon Salt
1 teaspoon Basil
1/2 teaspoon Dried Oregano
1 Freshly Cracked Pepper
1 pinch Crushed Red Pepper

Steps:

  • Add olive oil and garlic to a sauce pot and cook over medium heat for 1-2 mins or just until garlic is soft and fragrant.
  • Add crushed tomatoes, tomato paste, sugar, salt, basil, oregano, some freshly cracked pepper (10-15 cranks of pepper mill) and pinch of red pepper flakes. Stir to combine.
  • Cover the pot, allow the pot to come to simmer, then reduce heat to low and let simmer for 15 mins. Minimum or up to 30 mins...let simmer little longer if needed.
