Found this online while searching for TOPH recipes. Fabulous recipe from The Original Pancake House! The Apple Pancake contains eggs, flour, milk, sugar, cinnamon, vanilla, butter and lots of apples. It takes about 30 minutes to bake in an iron skillet and is served all puffed up and steaming hot. The Apple Pancake really isn't much like a pancake at all. It's more a like a soufflé or really, really moist bread pudding. The only way to truly appreciate it is to try one yourself.

5 tablespoons butter
2 Granny Smith apples (peeled, cored, and sliced thin)
1 tablespoon cinnamon
1 cup flour
1 cup milk
1/4 teaspoon pure vanilla extract
4 eggs
1/2 cup dark brown sugar
1/2 cup granulated sugar

Steps:

  • In a mixing bowl, add flour, milk, vanilla and eggs. Mix well.
  • In another bowl, mix the brown sugar, granulated sugar, and remaining cinnamon.
  • Add butter to a 10 inch Pyrex pie deep dish and put in the oven (deep dish Pyrex is great) At 400 degrees.
  • When the butter is completely melted remove from oven.
  • Pour the batter into the Pyrex dish and put back in the oven for 20-25 minutes. The edges will begin to puff.
  • Remove the half-way cooked batter from the oven and now add the apple mixture to it.
  • Just simply place the apples all over the top of the batter.
  • Next, cover the entire surface with the brown sugar/sugar/cinnamon blend and put it back in the oven for another 20-25 minutes.

1/3 cup granulated sugar
1/3 cup packed light brown sugar
2 teaspoons apple pie spice
3 tablespoons unsalted butter, at room temperature
3 Golden Delicious or Gala apples, peeled, cored and sliced into 1/4- to 1/2-inch-thick rounds
1 3/4 cups all-purpose flour
1 cup whole-wheat flour
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups whole milk
3/4 cup whole-milk Greek yogurt
2 large eggs
1 1/2 teaspoons pure vanilla extract
1 cup confectioners' sugar
5 teaspoons apple cider
1/4 teaspoon apple pie spice
Maple syrup and/or whipped cream, for serving

Steps:

  • Make the pancake: Preheat the oven to 450 degrees F. Mix the granulated sugar, brown sugar and pie spice in a large bowl. Rub a rimmed baking sheet with 2 tablespoons butter and arrange the apple slices on top in a single layer; sprinkle with 1/3 cup of the sugar mixture. Bake until the apples are tender and the baking sheet is mostly dry, 25 to 30 minutes.
  • Meanwhile, whisk both flours, the baking powder, baking soda and salt into the remaining sugar mixture. Whisk the milk, yogurt, eggs and vanilla in a separate bowl. Stir the milk mixture into the flour mixture.
  • Pour the batter over the apples and gently spread to cover. Bake until dry on top and a toothpick inserted into the center comes out clean, 12 to 15 minutes. Brush with the remaining 1 tablespoon butter. Let cool 15 minutes.
  • Make the glaze: Stir the confectioners' sugar, cider and pie spice in a bowl. Drizzle over the pancake. Cut into squares, invert onto plates and serve with maple syrup and/or whipped cream.

3/4 cup whole milk
3 large eggs
3/4 cup whole-wheat pastry flour
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
Kosher salt
1/4 teaspoon grated lemon zest
3 tablespoons unsalted butter
3 medium sweet, crisp apples, such as Honeycrisp (about 1 pound), peeled, cored, quartered and cut into 1/2-inch chunks
3 tablespoons granulated sugar
Confectioners' sugar, for dusting, optional

Steps:

  • Preheat the oven to 400 degrees F. Blend the milk and eggs in a blender until thoroughly mixed. Add the flour, vanilla, cinnamon, 1/2 teaspoon salt and lemon zest and blend again until combined, scraping down the sides if necessary, about 15 seconds. Cover the blender jar and refrigerate while cooking the apples.
  • Melt the butter in a 10-inch nonstick oven-safe skillet over medium heat. Add the apples and sprinkle them with the granulated sugar. Reduce the heat to medium-low and cook the apples, stirring occasionally, until golden brown and softened, 20 to 25 minutes. Arrange the apples evenly in the skillet. Remix the batter to reincorporate the ingredients, then pour it over the apples.
  • Bake the pancake until it is browned and set in the center and the sides have risen about 1 1/2 inches, 25 to 30 minutes. Serve directly from the skillet or use a large spatula to transfer the pancake to a plate. Dust with confectioners' sugar.
