3 ounces cream cheese, softened
3/4 cup mayonnaise
1 cup shredded part-skim mozzarella cheese
1 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/8 teaspoon seasoned salt
10 slices Italian bread (1/2 inch thick)
2 tablespoons butter, softened

Steps:

  • In a large bowl, beat cream cheese and mayonnaise until smooth. Stir in the cheeses, garlic powder and seasoned salt. Spread 5 slices of bread with the cheese mixture, about 1/3 cup on each. Top with remaining bread. , Butter the outsides of sandwiches. In a skillet over medium heat, toast sandwiches for 4-5 minutes on each side or until bread is lightly browned and cheese is melted.

2 slices white sandwich bread, such as country white bread
4 teaspoons salted butter, at room temperature
4 slices American cheese

Steps:

  • Preheat a griddle or nonstick skillet to medium-low. Spread 2 teaspoons of the butter on one side of a bread slice. Repeat with the remaining butter and bread. Place one of the slices butter-side down and shingle the cheese on top, covering the entire surface. Top with the other slice of bread, butter-side up.
  • Place the sandwich on the griddle and cook until the bottom is golden brown and crisp, 3 to 4 minutes. If the bread is browning too quickly, shift the griddle off the heat. Flip the sandwich, then cover with a small metal bowl and cook until the bottom is golden brown and the cheese is melted, 3 to 4 minutes. Once golden brown on both sides, toast the edges of the sandwich, if desired. Transfer to a cutting board, cut in half on the bias and serve immediately.

4 slices bread (such as white, whole grain, sourdough, rye, or brioche)
4 ounces cheese (shredded or sliced)
1 ounce butter (approximately 2 tablespoons, at room temperature)
Optional: sliced pickles, grainy mustard, sliced tomato, bacon, basil leaves, pesto, red pepper flakes, or potato chips

Steps:

  • Gather the ingredients.
  • Place two slices of bread on a cutting board and spread 1 tablespoon of the softened butter evenly and thinly on one side of each slice. Make sure you cover the entire slice from edge to edge.
  • Place a nonstick or well-seasoned skillet over medium-low heat. Place 1 slice of bread in the pan, butter-side down. Spread 1/2 teaspoon of mustard, if using, over the bread slice in the pan. Mound half of the cheese on the bread. If you're going to add the pickles, tomato, or bacon, do so now.
  • Spread 1/2 teaspoon of mustard on the unbuttered side of the remaining slice of bread. Place the slice of bread on the cheese, butter-side up.
  • Cook until the sandwich is brown on the bottom, 3 to 4 minutes. Carefully flip with a spatula and continue to cook until the second side is brown, 2 to 3 minutes more. If the bread is browning too quickly, turn the heat down.
  • Remove the sandwich to a plate and repeat steps 2 through 5 for the second sandwich.

1 slice mozzarella cheese
2 thick bread slices
1 pinch dried oregano, or to taste
1 pinch salt and ground black pepper to taste
2 tablespoons salted butter, at room temperature
1 tablespoon chopped fresh parsley, or to taste
1 teaspoon chopped fresh chives, or to taste

Steps:

  • Assemble the sandwich by placing Cheddar and mozzarella cheese on the bread. Season with oregano, salt, and pepper.

3 ounces cream cheese, softened
1/2 cup mayonnaise
2 cups cheddar cheese, shredded
2 cups mozzarella cheese, shredded
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
1/4 teaspoon cracked black pepper
12 slices Texas toast thick bread
1/2 cup butter, softened, more if needed

Steps:

  • Blend all ingredients except bread and butter in a medium bowl.
  • Butter one side of each slice of bread.
  • Put sandwiches together using about 1/2 cup of filling each.
  • Place buttered side of bread on the outside of sandwich.
  • Toast on griddle or in skillet until a deep golden brown. Make sure you cook this slowly over low to med-low heat, so that the inside has a chance to melt before the outside gets too done. Kick up the heat when it gets going.

12 slices thick-cut bacon, such as Nodine's applewood smoked
1 cup good mayonnaise
1/4 cup dijon mustard
1/4 cup freshly grated parmesan cheese
Kosher salt and freshly ground black pepper
1 white pullman loaf or sourdough bread, sliced 1/2-inch thick (12 slices)
6 tablespoons salted butter, at room temperature
6 ounces aged gruyere or comte cheese
6 ounces extra-sharp cheddar, such as Cabot or Shelburne Farms

Steps:

  • Preheat the oven to 400 degrees F. Arrange the bacon on a baking rack set over a sheet pan in a single layer and roast for 20 to 30 minutes, until nicely browned. Drain on a plate lined with paper towels and cut into 1-inch pieces.
  • Meanwhile, combine the mayonnaise, mustard, parmesan, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Lay 12 slices of bread on a board and spread each one lightly with butter. Flip the slices and spread each one generously with the mayonnaise mixture. Don't neglect the corners!
  • Grate the cheeses in a food processor fitted with the largest grating disk and combine. Distribute the bacon evenly on half of the slices of bread. Pile 1/3 cup grated cheese evenly on top of the bacon and top with the remaining bread slices, sauce-side down.
  • Meanwhile, heat an electric panini press. When the press is hot, cook the sandwiches for 3 to 5 minutes in batches until the bread is toasted and the cheese is melted. Allow to cool for 2 minutes. Cut in half and serve warm.
