This is my sister's recipe which she makes for parties and holiday events. The sandwiches are always a popular food item! In Spring of 2007, this recipe was featured in two North Carolina newspapers by the famous Food Editor, Helen Moore. Plan ahead because the vegetable mixture needs to be refrigerated 25 hours for the flavors to blend well. The recipe yields 112 party-size, quartered sandwiches. Preparation time, not refrigeration time, is stated.

1 (1/4 ounce) envelope unflavored gelatin
1/4 cup cold water
2 large carrots, grated very fine
2 celery ribs, chopped very fine
2 cucumbers, peeled, seeded, chopped fine
1 small onion, minced
1 tablespoon lemon juice
1 pint mayonnaise (recommend Hellman's)
2 loaves white bread (long square-type)

Steps:

  • Dissolve gelatin in water according to directions.
  • In a large bowl, mix dissolved gelatin with carrots, celery, cucumber, onion, lemon juice and mayonnaise. Refrigerate for 25 hours.
  • When ready to make sandwiches, if mixture is too jelled to spread well, add 1/3 to 1/2 cup more mayonnaise.
  • Using an electric knife, trim crusts from bread edges. Spread vegetable mixture on bread and make 28 sandwiches. Cut into quarters.
  • Layer cut sandwiches in a large plastic container with damp paper towels between layers until serving time.

This is a very simple vegetable sandwich that's perfect for breakfast, or as a healthy snack at any other time of the day. Since the ingredients are so basic and readily available, it's immensely convenient for an energy booster anytime, anywhere! Besdies, it's quite a treat to the taste-buds as well :-)

2 slices whole wheat bread
1 small tomatoes, chopped
1 tablespoon cabbage, grated
1 tablespoon carrot, grated
2 tablespoons tomato ketchup (I prefer plain)
1 tablespoon cheddar cheese, grated (any other cheese will do as well)
1/2 teaspoon pepper (vary according to your liking!)
1/4 teaspoon salt (or, to taste)

Steps:

  • In a small bowl, mix the chopped tomato, grated cabbage, carrot, cheese and tomato ketchup together, along with salt.
  • Cover one slice of bread with this vegetable mixture and season it with pepper.
  • Now put the other slice of bread on top of the vegetable-covered one, and your sandwich is ready to eat!
  • You can also grill this sandwich if you like, or top it with some more grated cheese and pop it in the oven for about 5-10 minutes at 350 C.

1 Japanese eggplant, sliced on an angle in 1/2 inch thick slices
1 small zucchini, sliced on an angle in 1/2 thick slices
1 red pepper, cut in quarter lengthwise
1 small red onion, cut into 4 slices
2 portabella mushroom caps
1/2 cup extra virgin olive oil
salt and pepper
8 slices crusty sourdough bread, cut 1/2 inch thick
4 pieces red leaf lettuce
3/4 cup mayonnaise
1/2 lemon, juiced
3 -5 drops hot sauce
1 clove garlic, skin removed and crushed
2 tablespoons thyme leaves
2 tablespoons fresh parsley leaves (flat leaved has most flavor)
2 tablespoons chopped chives or 2 tablespoons scallions

Steps:

  • Combine all ingredients (for mayo) in food processor and pulse (or blender).
  • Sandwich: Using a pastry brush, brush olive oil on the vegetable slices and the portobello mushrooms.
  • Season them with salt and pepper.
  • Place vegetables on a hot grill (or under broiler) and cook until they are tender.
  • Once vegetables are done brush sliced bread with olive oil and grill (or broil) on both sides.
  • To assemble, slice portobellos into 1/4-inch slices, spread both sides of the grilled bread with herbed mayonnaise and then top with 1 slice each of grilled vegetables and a quarter of the mushrooms, and finish off with lettuce and top with remaining piece of bread.
  • Enjoy!

This is from the Oprah-sponsored cookbook "In The Kitchen With Rosie." I love this sandwich!!! I leave out the fresh basil, arugula, and jalapenos just because I usually don't have them on hand. This is a spicy sandwich, so if you have a low tolerance for heat, I would leave out all the spices. However, I wouldn't be able to gurantee that it would taste as good!

1 cup plain nonfat yogurt
3 tablespoons Dijon mustard
black pepper
2 tablespoons nonfat cottage cheese
1/8 teaspoon Tabasco sauce
2 tablespoons minced shallots
1 clove peeled and minced garlic
1 teaspoon lemon juice
1 small eggplant, trimmed and cut into 1/4 inch rounds
1 medium yellow squash, trimmed and cut into 1/4 inch rounds
1 medium zucchini, trimmed and cut into 1/4 inch rounds
1 red onion, trimmed and cut into 1/4 inch rounds
3 tablespoons italian seasoning
1/8 teaspoon cayenne pepper
light vegetable oil cooking spray
2 roasted red peppers (fresh or jarred and drained)
1 baguette
1 large tomatoes, cored and sliced
black pepper
2 tablespoons chopped jalapeno peppers
8 basil leaves
8 arugula leaves

Steps:

  • Preheat broiler.
  • Put dressing ingredients in blender and mix on low until smooth.
  • Set aside.
  • Arrange eggplant, squash, zucchini, and onion in a single layer on a cookie sheet.
  • Sprinkle Italian seasoning and cayenne pepper over all of the rounds.
  • Spray the cooking spray over to coat lightly.
  • Broil the vegetables for about 5 minutes, until brown, and flip them over to brown on the other side.
  • Remove the cookie sheet, leaving the broiler on.
  • Quarter the roasted bell peppers.
  • Cut baguette in half crosswise and scoop out the soft inner dough.
  • Place them on the broiler rack and toast for about 2 minutes per side.
  • Put a few slices of tomato into the well in the bottom of each baguette.
  • Dust with black pepper and jalapenos.
  • Place 4 basil leaves, 4 arugula leaves, and 4 pieces of roasted pepper on baguette.
  • Layer on slices of eggplant, squash, zucchini,and onion.
  • Coat the inside of the remaining half baguette with the dressing and place it on top of the other half.
  • Cut into 4 sandwiches.

I first tasted this sandwich at an Italian cafe and it is called "Favorito". An unforgettable sandwich! This recipe is adapted from one I found on the internet.

1 eggplant, sliced into strips
2 red bell peppers
2 tablespoons olive oil, divided
2 portabella mushrooms, sliced
3 garlic cloves, crushed
4 tablespoons mayonnaise
fresh basil leaf
1 loaf focaccia bread

Steps:

  • Preheat oven to 400°F.
  • Place the eggplant and red bell pepper on a baking sheet and brush with 1 tablespoon of olive oil.
  • Roast in preheated oven for about 25 minutes; roast the peppers until blackened. Remove from oven and set aside to cool.
  • Meanwhile, sauté the mushrooms in 1 tablespoon of olive oil until tender.
  • Stir crushed garlic into mayonnaise. Slice focaccia in half lengthwise. Spread mayonnaise mixture on one or both halves.
  • Peel cooled peppers, core and slice. Arrange the eggplant, peppers, mushrooms, and basil on the focaccia.
  • Wrap the sandwich in plastic wrap. Place a cutting board on top of it and weigh it down with some canned goods. Allow sandwich to sit for 2 hours before slicing and serving.
