The Best BLT (Bacon, Lettuce, and Tomato) Sandwich image

Use the best tomatoes. Put away the fancy bread. And most importantly: Don't mess with it.

3 strips thick-cut, naturally cured bacon (see note)
2 slices high-quality sandwich bread, such as shokupan
2 tablespoons (30ml) homemade or store-bought mayonnaise (see note)
1 1/2 cups finely shredded iceberg lettuce (see note)
4 thick slices ripe tomato (see note)
Coarse sea salt, such as fleur de sel or Maldon
Freshly ground black pepper

Steps:

  • Place a griddle or skillet over medium-low heat. Add bacon and place a bacon press, skillet, or masonry trowel on top of it to keep it flat as it cooks. Cook until lightly browned on first side, about 5 minutes, then flip, cover again, and continue cooking until bacon is browned on both sides and fat has rendered, about 3 minutes longer. Transfer bacon to a paper towel-lined plate and set aside.
  • Place bread on same skillet or griddle and toast in bacon fat over medium-low heat, swirling occasionally, until evenly browned on first side. Flip and brown second side.
  • Lay toasted bread on a work surface and spread mayonnaise on both top faces. Divide lettuce evenly between both pieces of bread. Layer tomato slices on 1 piece of bread and sprinkle generously with coarse salt and freshly ground pepper.
  • Break bacon slices in half and layer them onto the sandwich in 2 layers of 3 half slices each, alternating the orientation of bacon in each layer for more structural stability. Close sandwich and cut in half diagonally. Serve immediately.

8 slices maple bacon
8 ounces cream cheese, softened to room temperature
3 tablespoons capers in brine, drained and chopped
2 tablespoons minced fresh chives
2 tablespoons honey mustard
Kosher salt and freshly ground black pepper
8 slices pumpernickel swirl bread
12 ounces sliced smoked salmon
1 small red onion, sliced very thinly
1 to 2 small Roma tomatoes, very thinly sliced into rounds
Baby arugula, for topping

Steps:

  • Preheat the oven to 400 degrees F.
  • Evenly space the bacon on a baking sheet lined with a wire rack and bake until crispy, 15 to 18 minutes. Drain the bacon on paper towels, reserving the bacon fat from the pan. Reduce the oven temperature to 350 degrees F. Once cooled, finely mince the bacon.
  • For the caper spread: In a bowl, combine the cream cheese, capers, chives and honey mustard, and season with salt and pepper. With a rubber spatula, mix all the ingredients until combined. Adjust the seasoning if necessary.
  • For the sandwich build: Cut the crusts from the bread. Brush slices on one side with the reserved bacon fat and transfer to the oven to warm through, about 5 minutes. Smear the fat side of four slices with some caper spread. Layer with 1 1/2 ounces of smoked salmon, some red onion, tomato, minced bacon and arugula. Top with another slice of bread and cut each sandwich into thirds, to make finger sandwiches.

Eight 3/4-inch-thick slices heirloom tomato
1 teaspoon fleur de sel sea salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
12 slices Applewood smoked bacon, cut 1/4-inch thick from slab bacon
1/2 cup julienne strips red onion
2 tablespoons mayonnaise
Four 1/2-inch-thick slices country bread, toasted
1 avocado, cut into 1/4-inch-thick slices
2 cups butter lettuce leaves
2 tablespoons tarragon leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the tomato slices on a tray or large plate. Sprinkle with fleur de sel and black pepper. Drizzle the vinegar and oil over the tomatoes. Allow to sit for 15 minutes.
  • Lay the bacon on a baking sheet, and season with a generous amount of black pepper. Brush some of the juices from the seasoned tomatoes onto the bacon and top with the red onions. Roast the bacon until it is golden brown and the fat has rendered, about 20 minutes.
  • Spread 1 1/2 teaspoons mayonnaise on each slice of country toast. Top each with 3 slices of bacon and the onions. Reserve the bacon drippings. Season the avocado with salt and pepper, and place on top of the bacon. Follow with 2 marinated tomato slices on each sandwich.
  • In a separate bowl, lightly toss the lettuce and tarragon with a small amount of the drippings from the bacon and season as needed with salt and pepper. Top the sandwiches with the salad and serve warm.

The BLT hands down is the very best sandwich there is! This version steps it up a notch or two. Made with my recipe of Unfried Fried Green Tomatoes and a hot and spicey mayo, this sandwich knocks it out of the park! You'll never eat a regular BLT again!

- green leaf lettuce
1 large green tomato, fried (using my recipe-unfried fried green tomato/squash
2 slice(s) sourdough bread, buttered and toasted
- hot and spicey mayonnaise

Steps:

  • Using my recipe "Unfried Fried Green Tomato/Squash", fix and bake green tomatoes. While tomatoes are baking, fry bacon until crisp; do not over cook. Set aside. Tear off numerous slices of lettuce, approximately 6; wash leaves and dry. Drain bacon. Butter and toast bread.
  • TO ASSEMBLE: 1)Spread small amount of spicey mayo on insides of bread 2)Layer with lettuce 3)Layer 3 slices of bacon across lettuce 4)Place two fried tomatoes on top of lettuce 5)Layer with lettuce 6)Layer with 3 slices of bacon across lettuce 7)Place one fried tomato on top of lettuce centering over prior two tomatoes under it 8)Layer with lettuce 9)Top with remaining 2 slices of bacon
