2 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2 sticks (16 tablespoons) good-quality unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg yolk
1 teaspoon pure vanilla extract
1/4 cup turbinado sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl. Add the butter and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. Beat on high speed for a full 2 minutes, scraping down the bowl halfway through the mixing; the butter should be very light and fluffy. Add the egg and vanilla and beat on medium speed until well combined. Add half the dry ingredients and beat on low speed to combine. Scrape down the mixing bowl before adding the remaining dry ingredients and beat to combine. Refrigerate for 1 hour in the bowl for drop cookies, or form into a 1-inch log for slice-and-bake cookies.
  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Place the turbinado sugar in a small bowl. For drop cookies, scoop the cookie dough with a 1 tablespoon-size cookie scoop and then dip the tops of the cookie dough balls into the sugar. Place onto the prepared baking sheet.
  • For slice-and-bake cookies, cut the log into 1/2-inch-thick rounds. Press the tops into the sugar and place on the prepared baking sheet.
  • Bake the cookies until slightly puffed and lightly golden on the bottom, about 15 minutes.

My mother in law has been making these for Christmas for years and years. I make them for all holidays, using different cookie cutters for whatever occasion. They are the best when they are frosted, but sometimes I just sprinkle on colored sugar before baking. I call them "Play Dough" cookies because that's what the dough smells like to me! (Don't worry, they don't taste like Play Dough :) Chilling time is not included.

2/3 cup butter, softened
1/2 cup sugar
1 egg, beaten well
1/2 teaspoon vanilla
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
decorator icing, in various colors or confectioner's sugar icing, colored with food coloring (optional)

Steps:

  • Cream butter and sugar well.
  • Add egg and vanilla and beat well.
  • Combine baking powder and flour.
  • Add gradually to creamed mixture.
  • Chill until firm.
  • Preheat oven to 400 degrees.
  • Roll out dough to about 1/4" thickness and cut into desired shapes.
  • Bake for 6 to 8 minutes.
  • When cool, decorate with frosting or icing if desired.

This is such an easy and delicious recipe for rolled cookies for your favorite cookie cutters. Not sure of the origin of the recipe, but we used it at a preschool where my children attended. It is simple and no-fail.

1 cup butter
2/3 cup sugar
1 egg
1 teaspoon vanilla extract or 1 teaspoon almond extract
2 1/2 cups sifted flour
1/2 teaspoon salt (if using unsalted butter)

Steps:

  • Cream together butter and sugar. Beat in egg and extract. Combine and add flour and salt.
  • Wrap dough well and chill or freeze until you are able to handle it easily. Can also make day ahead and place in fridge wrapped in plastic wrap.
  • To bake: Preheat oven to 350. Roll out and cut with cookie cutters. Place on either a greased cookie sheet or one lined with a silpat liner or parchment paper. Bake 8-10 minutes for thin cookies or 15 minutes+ for thick cookies or cookies on a stick. When they are lightly browned, they are ready. Cool on pan for 1-2 minutes, transfer to a cooling rack to cool completely before decorating. Use your favorite icing recipe.

CULTURED BUTTER COOKIES

These cookies are crumblier, crisper and more buttery in flavor than the typical cookie made with high-fat sweet cream butter. Which is exactly why you should make them.

250 grams all-purpose flour (2 cups)
3 grams baking powder (1/2 teaspoon)
1/4 teaspoon fine sea salt
2 sticks salted, cultured butter, at room temperature (1 cup)
130 grams granulated sugar (2/3 cup)
1 large egg yolk
55 grams demerara sugar, for rolling (1/4 cup)

Steps:

  • In a large bowl, sift together flour, baking powder and salt.
  • In an electric mixer fitted with the paddle attachment, beat together butter and granulated sugar until lightened in color and fluffy; beat in egg yolk until combined. With mixer running on low, add flour mixture until incorporated.
  • Divide dough into two balls. On a clean surface, roll each ball into a 1 1/2-inch log. Sprinkle the demerara sugar over a sheet of parchment. Roll each log in the sugar until the outside of the dough is thoroughly covered. Cover logs tightly with plastic wrap and refrigerate at least one hour, or overnight.
  • When you are ready to bake the cookies, heat oven to 325 degrees. Line two baking sheets with parchment. Use large, sharp knife to cut each log into 1/4-inch-thick rounds. Place cookies 1 inch apart on prepared baking sheets. Bake until cookie edges and bottoms are dark golden brown, about 18 minutes. Cool 5 minutes on baking sheets, then transfer to a wire rack to cool completely. Store in a tightly covered container at room temperature.
