This simple, homemade fruit salad recipe is an ideal light, healthy side. With a citrus poppy seed dressing, you'll love its fresh taste!

Number Of Ingredients 14

1 pound fresh strawberries (sliced and halved (about 3 cups))
1 pound diced fresh pineapple (about 3 cups)
1 pint fresh blueberries (about 2 cups)
5 kiwi fruit (peeled and cut into bite-sized pieces (about 2 cups))
2 cups seedless red grapes
1 large banana* (peeled and cut into bite sized pieces (about 1 cup))
Chopped fresh mint (optional)
zest of 1/2 medium orange
juice of 1/2 the same medium orange (about 3 tablespoons)
zest of 1 small lime (or 1/2 small lemon)
juice of the same 1 small lime (or 1/2 small lemon)
3 tablespoons honey
1 teaspoon pure vanilla extract
1 tablespoon poppy seeds

Steps:

  • If you will not be serving the fruit salad right away, place all of the fruit except the banana in a large serving bowl: strawberries, pineapple, blueberries, kiwi, and grapes.
  • In a small bowl or large measuring cup, whisk together the dressing: orange zest and juice, lemon zest and juice, honey, vanilla extract, and poppy seeds.
  • Pour the dressing over the fruit and with a large spoon, toss gently to combine. Cover and refrigerate for at least 30 minutes to allow the juices to marry (1 hour is even better). Just before serving, stir in the banana. Sprinkle with fresh mint. Enjoy!

Perfect Summer Fruit Salad image

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

What a delightful fruit salad! The orange marmalade glaze is sweet but has a little bit of tang from the lemon. This was great at room temperature, but even better after it sat in the fridge for a few hours and the flavors blended together. We had some extra strawberries so we threw them in too. So yummy!

1 can(s) pineapple, chunks, reserve all the juice
2-3 bananas
1 bunch red seedless grapes
1/2 pt blueberries
1 jar(s) small jar maraschino cherries, drained
any other fruit you would like to add
4 Tbsp sugar
4 tsp cornstarch
4 tsp orange marmalade or apricot preserves
2 tsp lemon juice

Steps:

  • 1. Drain pineapple, reserve all juice.
  • 2. In a small bowl, combine all your fruit. I always squirt some lemon juice over my bananas before adding so they don't get brown and yucky looking. Set aside.
  • 3. In a small saucepan, combine the sugar, cornstarch, and reserved pineapple juice. Bring to a boil. Reduce heat, and simmer till thickened. Remove from heat and add the marmalade or preserves and the lemon juice.
  • 4. Let cool for a couple of minutes, then pour the glaze over your fruit and toss gently to coat. Keep in the fridge. It won't last long!!
