Okanagan Apple Muffins image

This recipe will make your house smell absolutely scrumptious! With a perfectly sweet taste and a delightfully crunchy topping, these light muffins are Blue Ribbon winners indeed.

Number Of Ingredients 14

1/2 cup(s) brown sugar, firmly packed
6 tablespoon(s) all purpose flour
1/4 cup(s) butter, unsalted
1 teaspoon(s) cinnamon
1 1/2 cup(s) brown sugar, firmly packed
2/3 cup(s) vegetable oil
1 large egg
1 teaspoon(s) vanilla extract
1 cup(s) water
2 teaspoon(s) apple cider vinegar
2 1/2 cup(s) all purpose flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
2 cup(s) peeled apples, diced into 1/2 inch chunks

Steps:

  • Preheat oven to 325. Butter and flour or line a 15 cup muffin tin with paper cups.
  • Make the topping: Combine the first 4 ingredients in a bowl. Mix with fingers until crumbly. Set aside.
  • Beat the 1 1/2 cups brown sugar oil, egg, and vanilla in a large bowl.
  • Combine the water and vinegar. Sift together flour, soda and salt and blend into the oil mixture alternately with the water.
  • Add the diced apples and mix just until combined.
  • Spoon into muffin pan and sprinkle with topping.
  • Bake 30 mins until golden brown and top springs back when lightly touched.
