My family loves this and I make it on regular rotation, it's so easy to make just mix everything in one large bowl then bake, you may prepare the complete casserole and refrigerate until ready to bake, which makes this a perfect potluck dish! --- I have even made this using frozen french fries that I cut up into small pieces when I had no hash browns on hand and can also be made using cooked cubed potatoes --- cream of chicken soup may be used in place of mushroom soup, you may even throw in some chopped cooked ham or chicken also, I most always increase this by using two cans of soup, 1-1/2 cups sour cream and using half a 5-pound bag of hash browns --- you will love this! :)

1 (10 ounce) can undiluted cream of mushroom soup
3/4 cup milk
3/4 cup sour cream
1/3 cup melted butter
1 teaspoon seasoning salt
1 teaspoon ground black pepper (or to taste)
2 teaspoons garlic powder
3/4 cup grated parmesan cheese, divided
2 cups grated cheddar cheese (more to top after baking if desired)
1 small onion, chopped
2 -3 green onions, chopped
1 (2 lb) bag frozen hash browns, thawed

Steps:

  • Set oven to 350°F.
  • Butter a 13x9-inch casserole dish.
  • In a large bowl stir together the undiluted soup, milk, sour cream, melted butter, seasoned salt, black pepper, garlic powder and 1/4 cup parmesan cheese; whisk or mix until well combined.
  • Mix in the cheddar cheese, onions and hash browns.
  • Spread into prepared baking dish.
  • Sprinkle with about 1/2 cup parmesan cheese.
  • Bake uncovered for 40 minutes or until hot and bubbly.
  • If desired sprinkle about 2 cups grated chedar cheese on top and return to oven for 3 minutes to melt the cheese.

1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.

This Cheesy Hash Brown Potato Casserole is so delicious! It's my go-to dish when I want to please a crowd. It's perfect to take to potlucks, church suppers or it makes the most amazing side dish for any holiday meal.

Number Of Ingredients 10

1 ½ cups chopped yellow sweet onion
3/4 cup (1 ½ sticks) salted butter
1 (16-ounce) container sour cream
2 (10.75-ounce) cans condensed cream of chicken soup
1 (30-ounce) bag frozen cubed or (shredded) hash brown potatoes, thawed
3 cups grated Cheddar cheese, divided
½ teaspoon salt
½ teaspoon white pepper
3 cups crushed round buttery crackers such as Ritz's Crackers or 2 sleeves of crackers
½ cup (1 stick) butter, melted

Steps:

  • Preheat the oven to 375 degrees. Spray a 13 x 9 x 2-inch casserole dish with a nonstick spray. Set aside.
  • In a saucepan, saute onions with butter until onions are slightly tender but still crunchy. About 2 minutes.
  • In a large bowl, combine the sour cream, cream of chicken soup, and saute onions and butter. Add the thawed hash browns, 1 ½ cups of the Cheddar cheese, salt, and pepper. Mix well.
  • To make the topping, in a small bowl combine the crushed crackers and melted butter. Set aside.
  • Spoon hash brown mixture into the prepared casserole dish. Cover the casserole with foil and bake in the preheated oven for 45 to 50 minutes. Casserole should be hot and bubbly. Remove from the oven and add the remaining 1 ½ cups of shredded cheese on top of the casserole. Sprinkle the Ritz's Cracker topping over cheese. Return to the oven (uncovered) and continue baking for 5 to 10 minutes or until the casserole is hot and bubbly and the topping is lightly browned. Let the casserole rest for about 5 to 10 minutes before serving. This also gives time for all the delicious flavors to settle in.

Steps:

  • Grease a 9x13-inch baking pan.
