VEGETABLE KUGEL FOR PASSOVER FROM RONNE HELLMANN image

2 C grated apple with skin - use granny smith
2 C grated sweet potato, peeled
2 C grated carrots
2 C matzoh meal
1/2 lb. melted margarine, pareve (recommended to use 1/3 LESS margarine.) Add last
2 t salt
2 t baking soda
1/2 t cinnamon
1/2 t nutmeg
1 C sugar

Steps:

  • Preheat oven to 325 and grease a small casserole dish. Mix by hand, all ingredients together. Pour into baking dish and cover with foil. Bake for 1 hour, then uncover and bake another ten minutes.
