THAI-STYLE TURKEY BURGERS
Turkey burgers with coriander, ginger, and garlic to give a Thai flavor. This recipe can easily be made gluten free by using gluten-free soy sauce and breadcrumbs. Can be served alone, or on a gluten-free or whole wheat bun.

- Whisk egg and soy sauce together in a bowl; add cilantro, green onions, ginger, garlic, salt, and pepper. Mix turkey and bread crumbs into mixture and mix well; form into 4 patties.
- Heat a large non-stick skillet over medium heat. Place patties in the hot skillet; cover skillet and cook, turning once, until burgers are no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Combine all relish ingredients and refrigerate until ready to use.
- Combine all Thai mayo ingredients and whisk. (There will be extra. If you only want enough for the burgers, cut recipe in half). Refrigerate for at least 1 hour.
- Combine all burger ingredients in a large bowl and form into 4 patties, being careful not to overwork meat. Grill until cooked thoroughly, about 4 minutes per side. Once cooked, remove and set aside.
- Place buns on grill cut side down and toast until lightly browned, being careful not to burn.
- Spread mayo on top part of bun. Place burgers on bottom part of bun and top the burger with relish and a handful of bean sprouts.

- Place mince, breadcrumbs, curry paste, spring onions and egg into a large bowl. Season lightly, then mix well with your hands to combine. Divide into 4 and shape into burgers. Chill for 20 mins.
- Meanwhile, make the salsa and mayo. Brush the burgers with oil and grill for 7 mins each side, or until firm, golden and cooked through. Alternatively, cook on the barbecue.
- Once cooked, toast the rolls, cut-side up, under the grill. To serve, top the rolls with a turkey burger, add lettuce, cucumber, tomato slices and a spoonful of mayo or salsa and put the lids on.

THAI INSPIRED TURKEY BURGERS (LOW FAT)
This is my latest concoction in my mission to bring healthier food to my household. Over the past few weeks I have been using Fridays to try out different versions of healthier burgers. Tonight we had these Thai inspired turkey burgers. They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste. I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup. I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. Cooking time includes chilling time.

- Put the lemongrass, garlic, ginger, green onions, cilantro, chili flakes and lime zest into a food processor or chopper along with the water and blitz them until they are finely chopped and combined.
- Add the mixture to the turkey and also put in the egg white.
- Mix the turkey and the other ingredients together by hand until they are well combined.
- Put into the fridge to chill for about 30 minutes for them to firm up a bit.
- Take out of the fridge and shape into four equal sized burger patties.
- Then either fry them off in a pan as you would normally do or do as I do and brush them very lightly with a bit of extra virgin olive oil and cook them on a Foreman type grill. It takes about 8 minutes or so for them to be fully cooked.
- Serve.

THAI CURRY TURKEY BURGERS

- Prepare a medium gas or charcoal grill fire. In a medium bowl, gently mix the turkey, curry paste, and 1/4 tsp. each salt and pepper with your hands just until blended. Form the mixture into four 1/2-inch-thick patties. Oil the grill grate. Grill the burgers, flipping once, until an instant-read thermometer inserted into the centers of the burgers registers 165°F, 12 to 15 minutes total. While the burgers cook, finely grate 1 tsp. zest from the lime, then squeeze the lime to yield 1 Tbs. juice. In a small bowl, combine the zest and juice, mayonnaise, and 1/4 tsp. salt. In another small bowl, toss the cucumber with the cilantro, shallot, and vinegar. Toast the buns cut side down on the grill until browned and heated through, 1 to 2 minutes. Spread the tops and bottoms of the buns with the mayonnaise. Serve the burgers in the buns, topped with a slice of tomato and the cucumber mixture.
THAI CURRY TURKEY BURGERS
This spicy burger recipe is far from the norm but defintely worth a try. you can find thai curry paste in the Asian section of your supermarket. red or green either one is fine

THAI TURKEY BURGERS WITH CRISPY KALE
These flavorsome burgers are ideal for relaxed family meals and offer a good hit of mood-lifting tryptophan.

- To make the crispy kale, put the kale into a large bowl and toss with the lemon zest, olive oil, and a little sea salt. Arrange in a single layer on 1 or 2 baking sheets.
- Place in a preheated oven, at 400°F, for 15-20 minutes, turning halfway through cooking time, until crunchy and crisp. Sprinkle with a little more salt or some sesame seeds, if desired.
- Meanwhile, put the turkey into a large bowl with the onions, ginger, garlic, lemongrass, chile, and cilantro. Mix well, then season to taste and stir in the egg.
- Use your hands to shape the mixture into 4 large balls, then press them firmly into patty shapes. Place under a preheated hot broiler and cook for 5 minutes on each side, or until golden and cooked through. Serve in warm whole-wheat buns with crispy kale on the side.

- Instructions 1. Prepare the gas or charcoal grill to high heat. Clean and oil the rack. 2. To make the chutney, mix the tomatoes, mango, and cilantro by hand in a bowl. Combine the brown sugar, lime juice, and yogurt in a blender until smooth. Toss the tomato-mango mixture with the yogurt dressing. Refrigerate until ready to serve. 3. Combine the turkey, bread crumbs, mayonnaise, soy sauce, scallions, and cumin by hand in a large bowl. Form the mixture into 8 patties. Grill over hot coals or high heat for 6 minutes per side, or until their centers reach 160°F. on an instant-reading thermometer. Place on a bun, if desired, and top with the chutney.
