4 cups coconut milk
1 cup chicken stock
¼ cup finely chopped cilantro
1 stalk lemongrass, tough outer parts removed, thinly sliced
1 (2 inch) piece galangal, thinly sliced
2 fresh Thai chile peppers, minced
6 kaffir lime leaves, thinly sliced
2 pounds boneless chicken thighs, cut against the grain into bite-sized pieces
½ head cabbage, thinly sliced
5 limes, juiced
¾ teaspoon fish sauce

Steps:

  • Bring coconut milk and chicken stock to a boil in a pot over high heat. Reduce heat to medium. Add cilantro, lemongrass, galangal, Thai chile peppers, and kaffir lime leaves; simmer for 5 minutes.
  • Increase heat to medium-high heat. Add chicken; simmer until no longer pink in the center, about 7 minutes. Stir in cabbage; cook until wilted, about 3 minutes. Remove soup from heat; stir in lime juice and fish sauce.

When my family visited Thailand a few years ago I fell in love with this soup. This is an adaptation from a recipe in the Amazing Tastes of Thailand booklet put out by the Thailand Tourism Authority.

2 c chicken broth
2 c coconut milk (can use lite, just don't use coconut cream!)
6 slice galangal (can sub fresh ginger)
2 stalk(s) lemon grass
5 kaffir lime leaves
8 oz chicken breast, sliced thin
3 Tbsp fish sauce
2 Tbsp sugar
1/2 c lime juice
1 tsp red thai chili paste
1/4 c cilantro, torn
3-5 thai chilis (can use jalapeno or other hot chili instead)

Steps:

  • 1. Cut lower portion of lemon grass into 1 inch lengths and crush. Tear kaffir lime leaves in half. Combine half the coconut milk with the broth, galangal, lemon grass and lime leaves in a large saucepan and heat to boiling.
  • 2. Add the chicken, fish sauce and sugar. Simmer for about 5 minutes, or until chicken is cooked, then add remaining coconut milk.
  • 3. Heat just to boiling, add chili paste and lime juice, stir until blended. Garnish with cilantro leaves and crushed chili peppers.
  • 4. NOTE: The galangal and lemon grass are for flavoring, not to eat! When I can't get fresh kaffir lime leaves at my local Asian market, I substitute kaffir lime powder. Fresh leaves, lemon grass and galangal can all be successfully frozen. I've also used minced lemon grass in a tube from the produce section. Powdered galangal is available, too. Fresh is better, of course!

I fell in love with my local Thai restaurant's tom kha gai soup, and this is my closest match to it. It's delicious, healthful, and filling. The galangal, ginger, and lemon grass chunks are not meant to be eaten, so they can be thrown out or put back in the pot.

10 leaf (blank)s kaffir lime leaves
4 cups chicken broth, or more to taste
2 (14 ounce) cans coconut milk
3 peppers Thai chiles, chopped
1 (1 inch) piece galangal, thinly sliced
1 (1 inch) piece fresh ginger, sliced
3 (5 ounce) skinless, boneless chicken breasts, thinly sliced
1 stalk lemon grass, chopped
2 (6 ounce) cans whole straw mushrooms, drained
2 tablespoons fish sauce
2 tablespoons white sugar
3 tablespoons Key lime juice
1 bunch fresh cilantro, chopped

Steps:

  • Devein lime leaves and cut into very thin slices; set aside.
  • Combine chicken broth and coconut milk in a large pot; bring to a boil. Add chiles, galangal, and ginger and simmer over medium heat for 10 to 15 minutes. Add chicken, sliced lime leaves, and lemon grass and continue to cook until chicken is no longer pink in the centers, about 10 minutes.
  • Turn off the heat and add the drained straw mushrooms, fish sauce, sugar, and lime juice. Stir well, and serve with plenty of fresh cilantro on top as a garnish.

  • Bring chicken stock or water to the boil, add galangal, lemon grass, kafir lime leaves, coriander stalks and boil for 5 minutes until fragrant.

1 can coconut milk
1 stalk lemongrass, lightly crushed
4 fresh lime leaves (use 2 Tbl lime juice as substitute)
1 tablespoon shrimp paste
3 small Thai red chili peppers, thinly sliced (remove seeds for less spice)
1 inch ginger, sliced
3 tablespoons fish sauce (or more to taste)
1 tablespoon soy sauce

1/2 drop bergamot oil (this really does make the soup)

  • Gently simmer all but last 5 ingredients for 30 minutes.

2 boneless skinless chicken breasts
1 (240 ml) can coconut milk
2 stalks lemongrass
3 pieces galangal
1 1/2 tablespoons lime juice
2 1/2 tablespoons fish sauce
1 tablespoon oyster sauce
1 cup water
1 teaspoon coriander

Steps:

  • Dice the chicken into bite size cubes. Marinade with oyster sauce. Leave in refrigerator for 30 minutes.
  • Slice the ginger up into really thin strips.
  • Remove the outer leaves from the lemon grass until you get to the soft bit in the center. Now take a rolling pin or something heavy and batter the lemongrass.
  • Place the water in a pot and start to heat, while the water is heating, juice your lime. When the water is getting hot, put the lime juice, lemongrass, galangal and fish sauce inches And bring to the boil.
  • Once it starts to boil add the chicken and coconut milk, stir and bring it back to boil.
  • Once boiling, reduce the heat and simmer for about 2 minutes or until the chicken is cooked through. Keep stirring whilst doing this to avoid a skin forming.
  • Serve the Tom Kha Gai when ready and garnish with the coriander and eat with rice.

1 bunch cilantro, divided
4 cups water
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 pound boneless, skinless chicken thighs, cut into bite-sized cubes
3 (2 inch) pieces fresh ginger, coarsely chopped
2 (1.06 ounce) packets tom yum soup paste (such as Lobo®)
2 (15 ounce) cans straw mushrooms
2 (15 ounce) cans sliced bamboo shoots
2 (15 ounce) cans unsweetened coconut cream
1 teaspoon fish sauce, or more to taste

Steps:

  • Dice one green onion and set aside for garnish. Place remaining whole green onions in a soup pot. Chop 1/2 of the cilantro for garnish; add remaining cilantro stems to the soup pot.

1 liter chicken stock
4 kaffir lime leaves

3 hot green chili peppers, halved and seeds removed

350 g chicken breasts, cut into thin broad slices
400 ml thick coconut milk
3 tablespoons lime juice
1 tablespoon palm sugar

Steps:

  • Pour the chicken stock into a wok over a high heat.
  • Add the Kaffir lime leaves, lemongrass, ginger, chillies, coriander stems and roots.

For a more traditional Tom Kha Gai, leave out the bok choy, tomatoes, and bean thread noodles, and add some extra mushrooms. But believe me, this soup is incredible as written. I can never find the galagnal traditionally used in Tom Kha Gai, but if you can get it, I say use some.

3 (13 1/2 ounce) cans low-sodium low-fat chicken broth
1 (13 1/2 ounce) can coconut milk (regular, not lite)
2 stalks lemongrass, sliced in large pieces
2 tablespoons fish sauce
1 tablespoon shrimp paste (use anchovy paste as a substitute)
1 tablespoon low sodium soy sauce
1 tablespoon white vinegar
3 limes, zest of
3 limes, juice of

Steps:

  • In 4qt or larger, heavy-bottomed pot, begin heating chicken broth and coconut milk on low-medium heat.
  • Add the other ingredients for the broth, down through the brown sugar, as you prepare them.
  • Bring broth to a slow simmer; never allow it to reach a rolling boil, and do not cover it at any time during cooking.
  • When broth is simmering, begin adding remaining ingredients starting with the chicken, as you prepare them in the order listed, stirring regularly.
  • Make sure the chicken is fully cooked by the time you add the cilantro--if you cube the chicken finely enough and use a normal length of time preparing the vegetables, this should not be an issue, but allow it to simmer a few extra minutes if necessary before adding the cilantro.
  • About a minute after adding the cilantro, taste the soup and add some additional lime juice as desired to punch up the flavor (maybe 1-2 T--don't overdo it!).
  • Serve immediately.

2 stalks lemon grass (bottom 6-8 inches only), finely sliced
3 shallots, sliced
4 Tablespoons peeled and chopped ginger root (galangal, preferably, if you can get it)
1/2 teaspoon white pepper
2 13.5-ounce cans coconut milk (I like the Chaokoh brand)
3/4 pound skinless, boned chicken breasts, sliced into strips
5 Tablespoons fish sauce (Nam Pla or Vietnamese Nuoc Mam)
5 Tablespoons lime juice
Garnish: 5 red chilies (the little fiery Tabasco-types); 7 Kaffir lime leaves, shredded--or 1/2 teaspoon grated lime zest; and 2 Tablespoons finely chopped cilantro leaves

Steps:

  • Put the garlic, cilantro, lemon grass, shallots, ginger, and pepper in a blender and process it into as much of a paste as you can. Open the cans of coconut milk and carefully spoon off the top half of thick milk into a large saucepan (leaving the thin milk behind). Bring this thick milk to a boil, then add the spice paste and stir over high heat for about 5 minutes. Add the chicken strips and continue stirring for a couple minutes, until the chicken is no longer pink. Add the rest of the coconut milk (the thin part on the bottom), bring to a boil, then reduce heat and simmer for a minute or two. When ready to serve, stir in the lime juice and fish sauce and reheat. Ladle into bowls and garnish with chilies, finely shredded Kaffir lime leaves (or zest), and cilantro.

32 fl. oz. low sodium chicken stock
8 kaffir lime leaves
3 stalks of fresh lemongrass
2 inch cube of galangal or ginger
8 Tbs fish sauce
1 lime
2 chicken breasts
5 small thai chili peppers
8 oz. button mushrooms
10 fl. oz. coconut milk
1 bunch Cilantro

Steps:

  • Heat the stock. Score the lime leaves to help release their flavor. Cut the lemongrass into eight 2-inch pieces (crush with a pot to release their flavor). Slice the galangal (or ginger) into thin strips. Half the chili peppers (crush to release flavor). Add all above ingredients along with fish sauce and juice of one lime to the stock. Bring to a boil. Let boil for 5 minutes. Use a slotted spoon to remove the lemongrass pieces, lime leaves, galangal, and peppers, as these are for flavor and not for eating (unless you really want to!) They can be left in the stock if you are cautious to avoid them when dining. Slice the chicken into thin, 2 inch long strips. Add to stock along with coconut milk and mushrooms. Bring back to a boil, then lower to a simmer. Simmer until chicken is thoroughly cooked. Serve with Cilantro.

EASY TOM KHA THAI COCONUT SOUP

I know, I know, it's not authentic and it doesn't contain all the ingredients in the Thai name. But for poor, deprived college-town students like me, this is pretty close to what you can find at Thai restaurants. I'll eat it for dinner with some Thai tea (though I'm usually too lazy to make it), though it's not traditionally meant to be served as its own course. You could substitute shrimp or tofu for the chicken, just skip the velveting preparation. I velvet the chicken so it doesn't get tough in the soup, but you don't have to. If you don't, just sauté the chicken in some oil until it turns white and then cook it until it's done in the simmering soup.
