2 1/2 tablespoons vegetable oil
1 (4-inch-long) fresh hot red chile, thinly sliced crosswise
3 scallions, white and green parts thinly sliced separately
1 lb sea scallops, tough muscle removed from side of each if necessary
3/4 lb large shrimp, shelled and deveined
1 (14-oz) can unsweetened coconut milk
1 tablespoon Thai green curry paste
1/4 cup chicken broth or water
1 tablespoon packed light brown sugar
1 1/2 tablespoons Asian fish sauce
1 tablespoon fresh lime juice
12 oz dried thin linguine
1/2 cup chopped fresh cilantro

Steps:

  • Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté chile and white parts of scallions, stirring occasionally, until lightly browned. Transfer with a slotted spoon to paper towels to drain.
  • Pat scallops and shrimp dry separately and season with salt. Heat remaining 1 1/2 tablespoons oil in same skillet over moderately high heat until hot but not smoking, then cook scallops until browned, 2 to 3 minutes on each side (scallops will be almost cooked through). Transfer scallops to a bowl with slotted spoon and sauté shrimp in same skillet, stirring occasionally, until almost cooked through, about 3 minutes. Add shrimp to scallops.
  • Add coconut milk, curry paste, broth, brown sugar, fish sauce, and lime juice to skillet, then simmer, stirring occasionally, 5 minutes.
  • Meanwhile, cook linguine in a 6- to 8-quart pot of boiling salted water until al dente, then drain in a colander.
  • Stir scallops and shrimp with any liquid in bowl into sauce in skillet and heat to boiling. Reduce heat and simmer until scallops and shrimp are just cooked through, about 2 minutes. Transfer seafood to a clean bowl with slotted spoon and add linguine and cilantro to sauce in skillet, tossing to coat.

1 teaspoon coriander seeds
Grated zest and juice of 1/2 lime
2 tablespoons vegetable oil
1/2 pound asparagus, ends snapped off, stalks slant-cut in 1-inch pieces
1 pound sea scallops
1/3 cup fish stock
2 tablespoons unsweetened coconut milk
1/2 teaspoon sriracha, or to taste

1 cup jasmine rice, steamed

Steps:

  • Combine the shallots, lemon grass, ginger, garlic, shrimp paste, coriander, lime zest and juice in a food processor or a large mortar. Thrash to a paste.
  • Heat the oil in a heavy sauté pan on high. Add the seasoning paste and cook, stirring, 1 minute. Add the asparagus and stir. Add the scallops, reduce heat to medium and cook, stirring gently, another 3 minutes. Add the fish stock, coconut milk and sriracha, simmer another 2 minutes. Adjust the seasoning with salt and more sriracha to taste. Serve with the steamed jasmine rice.

  • In a small bowl, combine the cornstarch, broth, peanut butter and chili sauce until smooth; set aside. , In a large skillet, saute scallops in 1 tablespoon oil for 2-3 minutes on each side or until firm and opaque. Remove with a slotted spoon and keep warm. , In the same pan, saute the onion, red pepper and cashews in remaining oil for 3-5 minutes or until vegetables are crisp-tender. I didn't have any green or red curry paste as a base, so I had to improvise and came up with this, it might have just been a one-hit-wonder, as I haven't made this dish again and am drawing the spices from memory, so just sample the paste and if it tastes about right, go with it!

gingerroot, peeled (about 2-3-inch)
2 teaspoons garlic (minced from a jar is fine)
2 teaspoons honey
2 teaspoons chili powder
1 1/2 teaspoons turmeric
2 tablespoons fresh cilantro
2 tablespoons desiccated sweetened coconut
3 teaspoons hot madras curry (McCormicks)
1 teaspoon salt
2 tablespoons fish sauce
3 teaspoons lime juice
2 tablespoons vegetable oil (or peanut oil)
1 lb shrimp
1 lb scallops
1 (14 ounce) can coconut milk
150 g rice or 150 g bean noodles

Steps:

  • Using a food processor, puree the ginger and garlic.
  • Add in the rest of the sauce ingredients to form a relatively thick paste.
  • It's best to refrigerate the paste for a few hours to let the flavors inter-mingle, but if you have to use it right away, than do so.
  • Heat the oil over high heat, and add the scallops and shrimp when the pan (or wok) is uniformly hot.
  • At the same time, boil some water for the noodles (or you can serve with rice if you want).
  • Stir the shrimp and scallops frequently for about 2 minutes, until slightly browned.
  • Add in the paste, and reduce heat slightly, coating the scallops and shrimp thoroughly.
  • After about 90 seconds, slowly stir in a can of coconut milk.
  • Reduce heat and simmer for a few minutes to reduce the liquid.
  • Serve over noodles or rice.

This is a real treat of a supper, both for the eater and the cook.

1 pound (3 1/2 cups) frozen petits pois or peas
1 to 2 tablespoons Thai green curry paste
1/3 cup creme fraiche or sour cream
Salt
2 teaspoons peanut or other flavourless oil
2 teaspoons butter
6 big scallops (such as sold in shell by fishmongers) or 10 to 12 small bay scallops (such as sold in packages in the supermarket), preferably diver-caught
Juice of a lime
1 to 2 tablespoons chopped fresh cilantro or Thai basil

Steps:

  • Cook the peas in boiling, slightly salted water until tender, then drain and tip into a blender, adding 1 tablespoon curry paste and the creme fraiche or sour cream. Season to taste with salt and perhaps add more curry paste, depending on how strong it is.
  • Heat the oil and butter in a frying pan until foamy, and then fry the scallops for 2 minutes a side. If you are using big scallops then it is sometimes easier to cut them in half across.
  • When they are cooked, they will have just lost their raw look in the middle and be lusciously tender, while golden and almost caramelised on the outside.
  • Lift the scallops onto two warmed plates and then deglaze the hot pan by squeezing in the lime juice. Stir to mix well and pick up every scrap of flavour, and then pour over the scallops on each plate.
  • Dish up the pea puree alongside the scallops, and sprinkle with the chopped cilantro or Thai basil. Serve with another wedge of lime if you feel like it.

4 slices peeled galangal or ginger
1 sliced red onion
4 Thai bird chiles, de-stemmed, halved
3 stalks lemon grass, white part only, large slices, cut on the bias
6 kaffir lime leaves, sliced
2 cups shiitake mushrooms, sliced
1/3 cup 3 Crab fish sauce
8 cups chicken stock
3 limes, juiced
1 teaspoon ground white pepper
1 pound rice stick noodles, soaked in cold water for 1 hour
1/2 cup Thai basil leaves, 4 tops for garnish
1/4 cup sliced scallions
12 large (U-8) dayboat scallops
1 tablespoon ancho chile powder
Canola oil, to cook
Salt and white pepper, to taste

Steps:

  • Coat a saute pan with canola oil and saute galangal, onion, chiles, lemon grass and kaffir until soft about 5 minutes. Add shiitakes and cook 3 minutes. Season and deglaze with fish sauce. Let reduce by 50 percent then add chicken stock. Simmer and reduce by 20 percent. Add juice and check for seasoning. Add noodles, basil and scallions to heat. Meanwhile, preheat skillet and coat with oil. Season scallops with salt and chile powder. Pan sear both sides brown, about 3 minutes a side.
  • PLATING Ladle broth (lemon grass, kaffir and all) and top with 3 scallops. Garnish

2 cups orange juice
1 teaspoon orange juice concentrate
1/2 pound salted butter
3 tablespoons sweet Thai chili sauce
1/2 cup tamari
2 tablespoons sesame seed oil
3/4 tablespoon finely chopped fresh chiles
1/2 cup chopped fresh mint leaves, plus sprigs to garnish
24 large sea scallops

Steps:

  • Heat the orange juice until it is reduced to a quarter of its original volume. Remove from heat and add orange juice concentrate. Let cool. Mix butter with juice reduction and add chili sauce. Refrigerate overnight. Put tamari, sesame seed oil, finely chopped chiles and chopped mint in a bowl and mix well. Add the scallops to the mixture and toss lightly. Set in the refrigerator for 1 1/2 hours. Put a large saute pan over medium heat and add peanut oil to coat the pan. Allow oil to heat up and add drained scallops flat side down. Cook for about 1 1/2 minutes on each side or longer if scallops are very thick. Remove from pan and set aside. When all of the scallops are cooked, heat the desired amount of butter sauce to melt and then pour over scallops. Garnish with mint sprigs.

1/2 lemon juiced

Steps:

  • Pat the scallops dry and season with salt and pepper. Add butter to the pan and sear the scallops two minutes each side until golden brown. Remove to a dish.
  • Add the garlic, basil and chili paste and cook 1 minute. Be careful not to burn the garlic. Add the lemon juice and remove from heat. Serve the scallops on top of the sauce and garnish with micro greens.

1 cup roasted cashews
3 tablespoons water
1 tablespoon canola oil or 1 tablespoon peanut oil
1/2 teaspoon sugar
1/2 teaspoon salt
2 limes, divided
4 tablespoons honey, divided
2 teaspoons chili-garlic sauce, divided
2 tablespoons grated fresh ginger, divided
1 tablespoon minced garlic
12 sea scallops
1/2 cup smooth cashew butter
1/4 teaspoon kosher salt
1 tablespoon canola oil or 1 tablespoon peanut oil
1/4 cup minced fresh cilantro
1/4 cup roaste cashew halves
1 red bell pepper, thinly sliced
2 large carrots, julienned
2 cups snow peas
4 ounces wide rice noodles

Steps:

  • CASHEW BUTTER:.
  • Pulse cashews in a mini food processor until paste-like; add water and oil, pulse until mixture is creamy.
  • Add sugar and salt; pulse to incorporate.
  • Refrigerate in an airtight container for up to 2 weeks.
  • SCALLOPS, SAUCE, NOODLES & VEGETABLES:.
  • Bring a pot of water to boil for the vegetables and noodles.
  • Combine juice of 1 lime, 2 T honey, 1 tsp chili garlic sauce, 1 T ginger and garlic in a large bowl.
  • Add scallops, tossing to coat; marinate in the refrigerator for 20 minutes or as long as 2 hours.
  • Ass bell pepper, carrots, peas, and noodles to boiling water; cook 4-5 minutes or until noodles are soft and vegetables are crisp-tender.
  • Drain noodles and vegetables reserving 2-3 cups noodle-cooking water in a large measuring cup.
  • Rinse noodles and egetables under running water to remove excesss starch; return to empty pot.
  • Combine cashew butter, juice of remaining lime, 2 T honey, 1 tsp chili garlic sauce, and 1 T ginger; whisk until blended.
  • Add sauce to drained vegetables and noodle in pot.
  • Thin sauce with somee of the reserved noodle-cooking water (about 2 cups).
  • until sauce reaches desired consistency: season with salt.
  • Heat 1 T oil in large sauté pan over high heat; remove scallops from marinade -- discard marinade.
  • Pat scallops dry with paper towels.
  • Sear scallops until browned on one side -- flip scallops until browned on other side.
  • Divide noodle mixture among 4 plates.
  • Top each with 3 scallops.
  • Garnish each serving with cilantro and roasted cashew halves.

1 sweet onion, finely diced (or sliced)

6 lemongrass stalks, dry leaves removed, pounded
3-4 garlic cloves, finely chopped
3 red Thai bird chiles (or 1 habenero), finely chopped
2 cups dry white wine
28 ounce canned whole tomatoes (or 4 fresh tomatoes)
Herbs:
1/2 cup fresh Thai basil
1/2 cup fresh mint
1/2 cup cilantro sprigs
1/2 lime, juice
Scallops:
12 jumbo sea scallops
Back Pepper

Steps:

  • Sauce: Cook onion with salt in frying pan on medium heat until translucent. Add lemongrass, garlic, chiles, wine. Simmer 5 minutes. Add tomatoes with juices and simmer until sauce thickens. Force sauce through colander or keep solids as-is. Herbs: Toss herbs in bowl. Scallops: Season with pepper. Cook in non-stick pan on medium- high heat. Serve ingredients together.

1 pound (3 1/2 cups) frozen petits pois or peas
1 to 2 tablespoons Thai green curry paste
1/3 cup creme fraiche or sour cream
Salt
2 teaspoons peanut or other flavourless oil
2 teaspoons butter
6 big scallops (such as sold in shell by fishmongers) or 10 to 12 small bay scallops (such as sold in packages in the supermarket), preferably diver-caught
Juice of a lime
1 to 2 tablespoons chopped fresh cilantro or Thai basil

Steps:

  • Cook the peas in boiling, slightly salted water until tender, then drain and tip into a blender, adding 1 tablespoon curry paste and the creme fraiche or sour cream. Season to taste with salt and perhaps add more curry paste, depending on how strong it is. Heat the oil and butter in a frying pan until foamy, and then fry the scallops for 2 minutes a side. If you are using big scallops then it is sometimes easier to cut them in half across. When they are cooked, they will have just lost their raw look in the middle and be lusciously tender, while golden and almost caramelised on the outside. Lift the scallops onto two warmed plates and then deglaze the hot pan by squeezing in the lime juice. Stir to mix well and pick up every scrap of flavour, and then pour over the scallops on each plate. Dish up the pea puree alongside the scallops, and sprinkle with the chopped cilantro or Thai basil. Serve with another wedge of lime if you feel like it. Make Ahead Notes: The pea puree can be made 2 to 3 hours ahead. Drain peas and immediately rinse with plenty of cold water. Puree when cold with 1 tablespoon of the curry paste and creme fraiche or sour cream. Put in a bowl, cover and leave in a cool place or refrigerator. Reheat gently in a saucepan, taste and adjust seasoning before serving. If using sour cream, make sure the puree doesn't boil, otherwise it will turn grainy.

Thai Vanilla-Citrus Broth
1/2 cup pure maple syrup
2 TBLS fish sauce
Juice of 3 large limes
2 cloves of garlic chopped
3 Thai bird or serrano chiles, seeded and chopped (you may want to use less 1 chile)
1 red or green jalapeno chile, seeded and chopped
1/4 vanilla bean split lengthwise
1 orange or honey tangerine
1 ruby red grapefruit
1 TBLS canola oil
kosher salt and freshly ground white pepper
1 TBLS unsalted butter
8 large sea scallops, muscle removed
1/2 Haas avocado
cilantro sprigs for garnish (optional)

Steps:

  • To make the broth, in a small bowl, combine the maple syrup, fish sauce, lime juice, garlic, and all the chiles. With the tip of a knife, scrape the seeds from the split vanilla bean into the bowl and then add the empty pod. Whisk until smoooth. Cover and refrigerate for at least 1 hour up to 6 hours. Bring to room temperature before serving. With a knife, supine the orange, letting the sections and any juice drop into the bowl. Repeat with the grapefruit, adding its sections to the orange sections. Set the fruits aside, or cover and refrigerate for up to 1 day. In a large cast iron skillet, heat the oil over medium high heat. Season the scallops on all sides with salt and white pepper. Add the butter to the skillet and when the butter foams, add the scallops, being careful not to crowd them. Cook the scallops without moving them for 3 minutes, or until golden brown on the first side. Turn the scallops over and cook for 3 to 4 minutes, or longer until golden brown on the second side and just opaque in the center when tested with the tip of a knife. While the scallops are cooking, peel the avocado half and cut lengthwise into very thin slices. Put 3 or 4 slices in the bottom of each bowl. Then, using a slotted spoon, add 2 or 3 orange sections and 2 or 3 grapefruit sections to each bowl, reserving the remaining citrus juice. To serve, remove the scallops from the heat, and top each bed of fruit with a scallop. Remove and discard the vanilla pod from the broth, and then add the reserved citrus juice, stirring to combine. Spoon an equal amount of the broth over each serving. Garnish iwth the cilantro sprigs and serve immediately.

24 scallops in a half shell
2 tablespoon(s) soy sauce
1 tablespoon(s) shaoxing wine or dry sherry
1 tablespoon(s) oyster sauce
1 stalk(s) lemongrass minced or 1 tsp lemongrass paste
1 tablespoon(s) thai chili paste
3 tablespoon(s) brown sugar
2 teaspoon(s) lime juice
1 teaspoon(s) ginger grated
2 clove(s) garlic minced
1 teaspoon(s) sesame oil
2 scallions chopped
thai basil for garnish

Steps:

  • Preheat oven 350 degrees. Place a scallop in each shell or you could use a muffin pan. Mix the remaining ingredients except for Thai basil together and pour over the scallops.
  • Bake the scallops for 10 minutes. Then turn the broiler on and broil for about 3 minutes. Serve garnished with Thai basil
