1/4 cup soy sauce
1/2 tablespoon ground ginger
2 tablespoons minced garlic
2 tablespoons olive oil
2 tablespoons apple cider vinegar

3 tablespoons honey
4 chicken breasts
2 cups chopped broccoli
3 chopped green onions

1 (14 ounce) package Thai rice noodles

Steps:

  • Sauce: Combine peanut butter, soy sauce, ginger, garlic, oils, vinegar and honey in sauce pan. Simmer, covered, on low heat for 5-10 minutes or until hot, stirring occasionally.
  • Chicken: Cut and sauté chicken breasts over olive oil, adding vegetables when chicken is almost finished cooking. Add salt and pepper to taste.
  • Noodles: Cook rice noodles in water with salt, according to package instructions.
  • Serve chicken/vegetables over noodles with sauce poured generously on top.

1 ½ tablespoons water
6 cups chicken broth
2 ½ tablespoons soy sauce
1 tablespoon fish sauce

2 teaspoons vegetable oil
2 teaspoons minced fresh ginger root
2 cloves garlic, minced
1 teaspoon ground coriander
1 (16 ounce) package thick rice noodles
1 cup sliced zucchini
1 cup sliced red bell pepper
2 cooked chicken breasts, cut into 1-inch cubes
¼ cup crushed peanuts
¼ cup chopped fresh cilantro

Steps:

  • Stir cornstarch and water together in a small bowl until smooth. Pour chicken broth into a large pot and stir cornstarch mixture, soy sauce, fish sauce, rice vinegar, chile-garlic sauce, vegetable oil, ginger, garlic, and coriander into broth. Cover and bring to a boil.
  • Place rice noodles in the boiling sauce, reduce heat to medium, and simmer until noodles are tender, 5 to 10 minutes. Stir zucchini, red bell pepper, and chicken into sauce. Bring back to a boil, cover, and simmer until vegetables are just become tender, about 5 more minutes.
  • Remove from heat and let stand, covered, for 5 minutes to thicken. Serve garnished with crushed peanuts and cilantro.

1/2 lb rice noodles
2 tablespoons oil
6 garlic cloves, minced
1 lb boneless skinless chicken, thinly sliced
1 tablespoon chili-garlic sauce
1 tablespoon fish sauce or 1/2 teaspoon salt

1 tablespoon brown sugar
1/2 lb asparagus spear, cut into 2 inch pieces

Steps:

  • Pour noodles into bowl and cover with VERY HOT tap water. Soak for 15-20 minutes.

  • Add garlic and stir fry until golden.
  • Add fish sauce or salt and chicken.
  • Stir fry until done.

1 cup onion, chopped
1 tablespoon garlic, minced
2 teaspoons fresh ginger, minced
2 tablespoons coriander
1 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon Thai peppers or 1/4 teaspoon sriracha sauce
1/2 teaspoon turmeric
1 (14 ounce) can tomatoes, petit cut
2 1/2 cups unsweetened coconut milk (from 2 15oz cans)
1/2 cup water or 1/2 cup chicken broth
1 teaspoon salt
1 1/2 lbs large shrimp, peeled and cleaned
2 teaspoons lemon juice
1/2 lemon zest
1/2 cup fresh cilantro
8 lime wedges

Steps:

  • Heat oil in large skillet or Wok on med-hi heat.
  • Add onions and stir, cook for 3 minutes.
  • Add garlic and ginger, cook 2 minutes.
  • Add next 5 spices, cook 1 minute.
  • Add tomatoes, cook 1 minute.
  • Add coconut milk, water, and salt, and bring to a simmer until thickened 5-10 minutes.
  • Add shrimp, simmer, stirring for 3-5 minutes.
  • Stir in cilantro, lemon juice and zest.
  • Serve over rice noodles with lime wedges.
  • Rice Noodle Cooking Directions:.
  • Place all your rice noodles in a deep mixing bowl, trying to snap as few of them as possible as you remove them from the package (always a challenge for us). Bring a good amount of water to boil. Pour the boiling water over the rice noodles until they are completely submerged.
  • Every minute or two, give the noodles a stir to loosen them up. When they are completely limp, give them a taste to see if they're cooked through. The thread-like vermicelli noodles used in spring rolls will cook through in just a few minutes. The flat rice noodles might take upwards of ten minutes depending on thickness. Pay attention and test the noodles frequently because they'll become mushy if they overcook.
  • Once the noodles are tender, drain them and run them under cool water to stop the cooking. Toss them with a bit of sesame oil to keep the noodles from sticking to each other if you're not going to use them right away.
  • Since these noodles will be used in the above dish, you definitely want to under-cook them a bit. They will absorb more moisture and cook the rest of the way through once in the stir fry. If your noodles are perfectly cooked to start, they will turn to mush in the stir fry.
  • Note: This whole recipe can be cut in half including the rice noodles.

Steps:

  • Cook noodles in small pot of boiling salted water until tender, about 3 minutes. Drain; cut noodles in several places with scissors. Spread out on platter.
  • Puree next 7 ingredients in blender. With machine running, gradually add oil and blend until dressing is smooth. Season to taste with salt and pepper.

Steps:

  • Heat water for noodles and cook pasta 6-8 minutes (stir-fryable) or according to package directions.
  • Drain noodles, rinse under cool water and allow to drain; cut into smaller pieces if desired.
  • Meanwhile, toast coconut if necessary.
  • Using a whisk, mix together ingredients for sauce: coconut milk, peanut butter, soy sauce, fish sauce, garlic, curry powder, brown sugar, and cayenne pepper.
  • Heat oil in large pan until almost smoking.

2 tablespoons fresh serrano peppers or 2 tablespoons jalapeno chiles, coarsely chopped
1 tablespoon coarsely chopped garlic
1 tablespoon sugar
1/4 teaspoon salt
black pepper (to taste)
3 tablespoons fish sauce
2 teaspoons soy sauce
2 -4 tablespoons vegetable oil
1/4 lb ground pork (may also use ground beef, turkey or chicken)
3 cups dried wide rice noodles
3/4 cup fresh basil leaf (may also use or mix with mint)
5 cherry tomatoes, quartered (may use more)

Steps:

  • Boil the noodles until tender to your liking, then drain and set aside till needed.
  • Set up a little system of bowls to help you when you cook.
  • Place the garlic in one and the chiles in another.
  • Mix the sugar, salt and pepper in a third bowl.
  • Mix the fish sauce and the soy sauce in a fourth bowl and keep them all near your wok or frying pan.
  • Heat the oil in your pan until nice and hot then add the garlic.
  • In about 30 seconds, when it sizzles nicely and starts to turn golden (but before it burns), add the peppers and stand back a little.
  • Stir them for 30 seconds or so more until they get really fragrant (you'll know when).
  • Add the pork and cook until it browns, breaking up the meat as it lumps.
  • Sprinkle in the sugar from the bowl to season the meat, and toss until it is mixed.
  • Pour in the fish/soy from its bowl and stir quickly while it thickens just a bit, usually about 1 minute or so.
  • Add the rice noodles to the pan and toss and turn them to mix the meat into them, using your tools to break up any spots that may try to clump (add a little oil if they clump badly).
  • Stir in about 3/4 of the basil and cook just till it begins to wilt, then add the tomatoes and remove the pan from the heat.
  • Mix once, and pour on a serving platter.
  • Garnish with the rest of the basil and serve hot, with sambal oelek, or sriracha sauce, if desired.

PAD SIEU (THAI RICE NOODLES)

After watching a version of this recipe prepared on "Calling All Cooks" on the Food Network by a lady named Poolie who was from Thailand, I immediately wanted to give it a try. I had to watch the episode several times to get the recipe correct - as the version they provided was not exactly as described by Poolie while she cooked. Poolie seasoned everything to taste, so please take the measurements very loosely and taste & season as you prefer. She did not add anything spicy to this dish. The Thai sweet soy sauce is very dark and thick and sweet - almost syrupy. You would need to look in an Asian foods store to find it. I used seasoned rice wine vinegar instead of the Thai white vinegar, which I was unable to locate. The wide rice noodles resemble slightly wider fettuccine or egg noodles.

4 ounces pork, cut into very thin strips (peeled, deveined) or 4 ounces shrimp (peeled, deveined)
1 cup fresh broccoli florets, cut into bite sized pieces
1 -2 medium egg, beaten lightly
1 teaspoon sweet thai dark soy sauce, to taste (pink label)
1 teaspoon Thai fish sauce, to taste
3/4 teaspoon thai white vinegar (sweet) or 3/4 teaspoon seasoned rice wine vinegar, to taste

Steps:

  • Prepare noodles according to package directions, usually by soaking in water for a specified time,drain and have cut into 1/2 pieces (I used kitchen shears for this) before you been cooking.
  • Prep all of your ingredients before you start as this cooks very quickly.
  • Have the meat strips in a small bowl.
  • Heat oil and garlic in a wok or large deep skillet on about medium or medium high heat and saute for about 1 minute.
  • Sprinkle the meat quickly with salt& pepper, sprinkle lightly with some soy sauce, and just a little cornstarch or flour to coat very lightly and add to the pan.
  • Stir fry until almost cooked (just a few minutes- try not to overcook), then add the broccoli (if using shrimp, add with the broccoli) and stir fry another couple of minutes (it will still be rather crisp).
  • Lower heat to medium, add noodles, and stir fry to heat together- about 1-2 minutes.
  • Clear a spot in the middle of the pan and pour in the beaten egg- tossing quickly to scramble the egg in that spot, then mixing the cooked egg in with the rest of the ingredients.
  • Add remaining seasonings to taste quickly, stir to coat,remove from heat, and serve.

1/4 cup vegetable oil
2 -3 cloves finely minced garlic
3 tablespoons chopped raw shrimp

8 ounces very thin dried rice noodles ("vermicelli rice stick")
1 to 1 1/2 cups fresh chicken pieces/strips, OR equivalent of cubed tofu
3 cloves garlic
1 thumb-size piece galangal or ginger, sliced thinly or cut into matchstick-like pieces
1 cup or more fresh shiitake mushrooms, sliced
1 red bell pepper, sliced
2 to 3 cups fresh bean sprouts
1/2 cup chicken stock (or simulated chicken stock for vegetarians)
handful of fresh coriander
2 1/2 tablespoons oil
2 teaspoons cornstarch dissolved in 3 tablespoons soy sauce
STIR-FRY SAUCE:
1 tablespoon soy sauce (use wheat-free soy sauce for gluten-free diets)
1 teaspoon dark soy sauce (gluten-free diets substitute 1 tablespoon wheat-free soy sauce)
1 tablespoon fish sauce (vegetarians substitute 1 1/2 tablespoons soy sauce)
1 teaspoon sugar
1 tablespoon lime juice
1/4 cup chicken stock OR faux chicken/vegetable stock

Steps:

  • Marinate the chicken or tofu by pouring the cornstarch/soy sauce mixture over and stirring well. Set aside. Soak rice noodles in a pot of hot water 5 to 12 minutes, or just until noodles are soft enough to eat, but still firm and a little bit 'crunchy' (they will finish cooking later). Drain and briefly rinse noodles with cold water to keep from sticking. Set aside. Combine all stir-fry sauce ingredients, mixing them together in a cup. Set aside. Heat a wok or large frying pan over medium-high heat. When hot, add 2 tablespoons oil and swirl around, then add the garlic, ginger, chicken or tofu (together with the marinade), mushrooms, and a few tablespoons of stock. Stir-fry 5 minutes, or until chicken or mushrooms are cooked. When pan becomes dry, add a little more chicken stock, 1 t 2 tablespoons at a time - enough to keep the ingredients sizzling. Add red pepper and stir-fry another 1 to 2 minutes. Add the noodles plus stir-fry sauce. Using two utensils, lift and turn the noodles or use a tossing motion, like tossing a salad. Stir-fry in this way until the sauce is well distributed throughout the noodles (1 to 2 minutes). Add bean sprouts, continuing to stir-fry another minute. Remove from heat and taste-test for salt/flavor, adding 1 tablespoon more fish sauce or soy sauce if not salty enough. If too salty, add another squeeze of lime juice. To serve, lift noodles out of the wok or frying pan and mound on a serving platter. Sprinkle with fresh coriander and garnish with wedges of fresh-cut limes. 1 teaspoon red chili paste or a few dashes red chili oil (I used 1 teaspoon of Thai Red Curry Paste)
2 cloves garlic, minced
1 lime, halved (I used 2 limes)
1 pound flank steak, sliced very thin against the grain (I used 2-pounds)
2 tablespoons vegetable oil
1 medium yellow onion, sliced
1 red bell pepper, cored and sliced into rings
1 tablespoon diced fresh jalapeno or 1 teaspoon diced hot pepper
optional: 1/4 tsp red pepper flakes
Fresh basil leaves, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Cook the noodles according to the package directions. Note: I do recommend the rice noodles, as they are easy to find. Cook them a bit under (2 minutes) to al dente, as they will continue to cook once they are added to the stir fry. In a small bowl, mix the soy sauce, sherry, cornstarch, brown sugar, ginger, chili paste, garlic and the juice of half the lime. Pour a fourth of the marinade into a bowl with the sliced beef and toss to coat. Reserve the rest of the marinade for later. Heat 1 tablespoon of the oil in a large skillet over medium-high to high heat. Note: I used a Wok, but a cast-iron skillet would have been my second choice. I don't recommend using a non-stick skillet, because you need to use high heat to make this. When it is very hot, throw in the onions and cook for a minute or so. Add the bell peppers and jalapenos. Cook for a minute, tossing until the peppers have brown/black bits but are still firm. Remove the vegetables to a plate. Into the hot skillet, add the remaining tablespoon of oil. Add the meat mixture, evenly distributing it over the surface of the skillet. Allow to sit for 45 seconds, then turn with tongs. Cook for another 30 seconds, then add the onions and peppers back into the skillet. Reduce the heat to low. Pour in the remaining marinade and stir. Allow to simmer on low for a few minutes; the sauce will slowly thicken. Turn off the heat. Drain the noodles, then add half of them to the stir-fry. Toss and add more noodles as desired. Stir in some very hot water if needed to thin the sauce. Note: On the TV show, Ree says she prefers to remove the noodles with tongs, so that the reserved water can be used to thin out the sauce, if it thickens too much. Plus, when I drained the noodles, they clumped together a lot. I'll use tongs next time. Top with basil and cilantro leaves and serve immediately with a squeeze of the remaining lime half. Add the red pepper flakes, if using. I didn't use them, and didn't miss them at all. Tasting notes: Definitely don't skip the fresh cilantro and basil, as this really makes the sauce. I was out of red chili paste and used Thai Red Curry Sauce. The sauce turned out amazing!

Sort of a conglomeration of Asian cuisines. The original recipe has fresh cilantro only, but we liked both cilantro and Thai basil. From Bon Appetit April 1996. Rice noodles are available at Asian markets. I also like to throw in a fresh tomato or two (sliced or diced) to the mix.

1/4 cup rice vinegar
1 tablespoon sugar
1/2 sweet onion, thinly sliced and separated into rings
8 ounces firm dried rice noodles
1/4 cup fresh lime juice
2 teaspoons vegetable oil
1/2 teaspoon dried red pepper flakes (I used a little bit of red jalapeno)
1/3 cup of fresh mint, chopped
1/3 cup fresh Thai basil or 1/3 cup fresh cilantro, chopped
1 large cucumber, peeled, halved lengthwise, seeded and thinly sliced
1 -2 small fresh tomato (sliced or diced)
4 green onions, white and green parts, thinly sliced
2 tablespoons dry roasted salted peanuts
salt, to taste
pepper, to taste

Steps:

  • In a non-reactive bowl, whisk the rice vinegar and sugar together. Add the onion rings and toss to coat. Let stand at least 30 minutes but up to 4 hours. Drain, reserving 2 tablespoons of the soaking liquid.
  • In a large pot of boiling water, cook the rice noodles until al dente, about 2 minutes. Drain and rinse under cold water. Drain well.
  • In a small bowl, whisk together the lime juice, oil and red pepper flakes (or fresh minced red jalapeno). Stir in the mint and Thai basil.
  • Cut the cooked noodles into 3-4" long sections. Add a small amount of the noodles to a serving bowl and toss with the reserved vinegar/onion liquid. Add the remaining noodles, cucumber, fresh tomatoes, green onions and marinated onions.
  • Drizzle the lime juice mixture over the rice noodles and toss gently. Season with salt and pepper to taste.
  • Garnish with the roasted peanuts.

1 cup soy sauce
½ cup palm sugar
⅓ cup fish sauce
¼ cup Sriracha sauce
¼ cup tamarind concentrate
¼ cup sesame oil
4 cloves garlic, minced
2 tablespoons grated ginger
1 pinch cayenne pepper, or to taste
2 pounds skinless, boneless chicken thighs
1 (8 ounce) package dried Thai rice noodles

Steps:

  • Combine soy sauce, palm sugar, fish sauce, Sriracha sauce, tamarind concentrate, sesame oil, garlic, ginger, and cayenne pepper in a large zip-top bag. Add chicken and marinate in a refrigerator, 3 to 4 hours, or overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from bag, reserving marinade. Cook on the preheated grill until no longer pink inside and juices run clear, 15 to 20 minutes.
  • Place noodles in a large bowl and cover with hot water. Set aside until noodles are softened, about 15 minutes.
  • Pour reserved marinade into a saucepan over medium-high heat. Bring to a boil, reduce heat to a simmer, and cook sauce until reduced, 4 to 5 minutes.
  • Slice grilled chicken and place over noodles. Top with sauce as desired.

A Food Network Kitchen Favorite cookbook recipe. This is a flavorful noodle dish that you can use as a side or as a vegetarian/vegan main dish. I personally prefer using the basil instead of mint, but you choose your favorite. Enjoy!

8-10 oz rice noodles, medium-thick
3 Tbsp fish sauce
3 Tbsp sugar
3 Tbsp soy sauce, low-sodium
2 Tbsp peanut oil
4 scallions, thinly sliced (white and green parts)
1 jalapeno, stemmed and finely chopped
3 clove garlic, smashed, peeled, and roughly chopped
1 c mung bean sprouts
2 handfuls of fresh mint or basil leaves (about 1 cup)
1/2 c cashews or peanuts
1 lime, cut into wedges

Steps:

  • 1. Place the rice noodles in a large bowl with hot water to cover. Soak until tender, about 30 minutes. Drain and set aside.
  • 2. Meanwhile, whisk together the fish sauce, sugar, and soy sauce. Set aside.
  • 3. Heat up a large skillet over high heat. Add the oil, and when it gets hot add the scallions, jalapeno, garlic and bean sprouts. Cook, stirring, until the veggies begin to brown and the garlic is fragrant , approx. 1 minute. Add the sauce mixture and gently swirl it around the pan. Add the drained noodles and toss to coat them with the sauce.
  • 4. Remove the skillet from the heat. Coarsely tear the mint (or basil) into the skillet. Sprinkle in the nuts. Toss a few more times to incorporate the mint (or basil) and nuts. Mound into a large serving bowl. Garnish with the lime wedges and serve.

2 small firm red tomatoes, sliced or diced
4 - green onion, white and pale green parts only, thinly sliced
2-3 tablespoon(s) dry roasted peanuts

Steps:

  • In a non-reactive bowl, whisk the rice vinegar and sugar together. Add the shallots and toss to coat. Let stand at least 30 minutes but up to 4 hours. Drain, reserving 2 tablespoons of the soaking liquid.
  • In a large pot of boiling water, cook the rice noodles until al dente, about 2 minutes. Drain and rinse under cold water. Drain well.
  • In a small non-reactive bowl, whisk together the lime juice, coconut oil and fresh minced red jalapeno/Thai pepper. Stir in the mint and Thai basil.
  • Cut the cooked noodles into 3-4" long sections. Add a small amount of the noodles to a serving bowl and toss with the reserved vinegar/onion liquid. Add the remaining noodles, cucumber, fresh tomatoes, green onions and marinated onions.
