THAI PORK CHOPS
Another recipe from Cooking Pleasures that I am putting here for safe keeping. Serve these with some jasmine rice and green beans for a lovely meal. Feel free to adjust the amount of jalapenos you use ot suit your taste.

Steps:
- Heat the oil in a large nonstick skillet over medium high heat until hot.
- Add the pork chops and cook for 10 min, turning once or until it is no longer pink in the center.
- Remove to a plate and cover with foil while you prepare the sauce.
- Reduce the heat to medium and add the jalapeno peppers and garlic to the skillet. If you need to add a little more oil to the skillet, do so now.
- Cook for 1-2 min or until softened, stirring occasionally.
- Stir in the fish sauce and sugar.
- Bring to a boil and boil for 1 minute.
- Pour the sauce over the pork chops and sprinkle with the chopped cilantro and peanuts.

GRILLED THAI GINGER-GARLIC PORK CHOPS

- In a bowl, combine the lemongrass, cilantro, mint, ginger, garlic, sugar and lime zest. Stir in the fish sauce, soy sauce, pineapple juice, and oil. Put the chops in a large zip-top bag and pour in the marinade. Seal the bag, squeeze out the excess air and refrigerate for 8 hours or overnight, turning the bag occasionally.
- When you're ready to grill the chops, remove them from the marinade and drain off and discard the liquid. It's okay if some solids adhere to the chops.
- Build and light a charcoal fire with coals banked on one side only. If using a gas grill, set one side to medium high and leave the other side off. When the fire is medium hot (you'll be able to hold your hand just above the grate for about 2 seconds), set the chops directly over the heat. Sear them for about 2 minutes per side, and then use tongs to move them to the area with no direct heat, arranging them so the bone side of the chop (if there is one) faces the heat (the bone acts as a barrier to the heat). Cover the grill and cook the chops indirectly until their internal temperature reaches 145° to 150°F, another 3 to 5 minutes per side.
- Transfer the chops to a clean platter and let them rest for 5 minutes so the juices redistribute and the chops finish cooking. Sprinkle with more cilantro and mint and serve with the lime wedges.

JACK DANIEL'S THAI PORK CHOPS
Trouble thinking of a name for this one. Can use JD, brandy, cognac or similar strong spirits. Works with lamb, beef, or chicken as well as pork. Very simple and very tasty.

Steps:
- Combine marinade ingredients.
- Marinate meat at least 2 hours, or up to overnight in the refrigerator. Marinating in a ziploc bag with most of the air squeezed out works great to maximize contact between meat and marinade.
- Pan fry or BBQ as you like.
- If pan fried, can deglaze pan with a bit of water and/or white wine to have a very nice sauce.

THAI PORK CHOPS AND SESAME NOODLES
This is a fantastic dish and is on the table in no time. Prep time does not include time to marinate pork.

- In small bowl, whisk together soy sauce, cornstarch, sugar, salt and pepper.
- Place in plastic bag and add pork.
- Seal and turn to coat.
- Chill for 1 hour, or up to overnight.
- Cook noodles according to package directions.
- Drain well and toss with onions, sesame oil, salt and pepper flakes.
- Meanwhile, heat skillet over medium high heat, add peanut oil, snow peas and carrots, cook, tossing frequently, about 5 minutes until crisp tender and set aside.
- Add one more tablespoon oil and sear pork chops, about 2 to 3 minutes per side, or until done.
- Add vegetables back to pot and toss to coat.
- Serve over noodles.

SPICY PORK CHOPS WITH THAI BASIL
Steps:
- Directions Put the flour onto a plate and then flour each pork chop on both sides. In a pan, heat up the olive oil and cook the pork chops for about 5 minutes on each side. Reserve. To the pan, add a 1/2 cup of water. Bring to a boil, scraping any bits in the bottom of the pan. Add the Thai chili peppers and Thai basil. Stir and cook for 2 minutes. Add the sweet soya sauce and brown sugar. Return the pork chops to the pan and cook for another 15 minutes on low heat.
