THAI LYCHEE SODA
A wonderfully refreshing and beautiful beverage that goes perfectly with an oriental meal, or just to enjoy itself on a hot summer day. I sometimes use the lychee fruit juice out of the can (1 cup) in place of the actual fruit.

Steps:
- Puree the lychee fruit and water until a smooth consistency is reached.
- Strain the mixture into a pitcher, and discard the pulp.
- add lime juice and red syrup and stir well.
- pour into glasses filled with ice cubes until 3/4 full.
- top the rest off with club soda.
- Garnish with mint and serve.

KIWI SODA

Steps:
- Place kiwis and lime juice in a blender and process until smooth. Divide kiwi mixture between two tall glasses (you will use about 1/3 cup purée per drink) and mix 2 tablespoons of the agave nectar into each with a long spoon. Add ice and top with seltzer. Stir gently and serve.
