450g (1lb) skinless fish fillets (salmon, haddock, etc) cut into chunks
4 spring onions, finely sliced
1 red chilli, deseeded and finely chopped
2 tbsp Thai Taste Red Curry Paste
2 tbsp fresh coriander leaves
1 tbsp Thai Taste Palm Sugar
1 tsp Thai Taste Fish Sauce
1 tbsp fresh lime juice
50g (2oz) fine green beans, finely sliced
1 tbsp Thai Taste Rice Bran Oil, for frying
Dipping sauces
Lime wedges
Shredded spring onions

Steps:

  • Place the fish chunks, spring onions, chilli, curry paste, coriander, palm sugar, fish sauce, lime juice and a pinch of salt in a food processor and blend until finely minced.
  • Transfer to a bowl and stir in the sliced green beans.
  • Divide the mixture into 16 pieces, roll each one into a ball and then flatten into discs.
  • Transfer the fish cakes to a plate, cover with cling film and place in the fridge for 30 minutes to 1 hour to firm up
  • Heat the oil in a large frying pan and when very hot fry the fish cakes for about 1-2 minute each side, until golden brown and cooked through. Lift out and drain on kitchen paper, then serve with a selection of dipping sauces and a wedge of lime. Garnish with spring onions.

1 lb white fish fillet
1 red chili peppers or 1 green chili pepper, de-seeded and chopped finely
2 ounces green beans, chopped very finely
2 spring onions, chopped finely
2 tablespoons coriander leaves, and roots chopped finely
1 tablespoon Thai fish sauce
4 -5 fresh kaffir lime leaves, finely shredded or 1 tablespoon fresh lime juice
1/2-1 tablespoon Thai red curry paste, more if you like it really hot
oil (for frying)

Steps:

  • Cut the fish into chunks, put in your food processor with the rest of the ingredients, except the oil, and blend using the on/off technique until you have a minced texture but not a paste.
  • Remove from the food-processor bowl to another dish.
  • Take approx a dessert spoon full of the fish mix, with wet hands form into balls then flatten them with the palm of your hand into cakes.
  • Leave them in the fridge, covered, to firm up for an hour or more.
  • When ready to cook, heat up the oil and fry the little cakes about 1 minute on each side.
  • Drain on paper kitchen towel.
  • Serve with a Thai dipping sauce**There several recipes on the site.

I found this while looking for recipes to use all the fish we've been catching. It's similar to Russ's Crab Cakes he makes and just as good. We cooked ours in a little oil in a pan 9no oven) but have submitted the original recipe.

2 cups mashed potatoes, cooled, JUST potato
500 g cooked fish fillets, any white fish will do
2 tablespoons chopped fresh coriander leaves
1/2 teaspoon finely chopped fresh coriander root
1 small red chile, finely chopped
1 teaspoon grated fresh ginger
1 garlic clove, crushed
1/2 cup plain flour
1 egg, lightly whisked
1/2 cup breadcrumbs

Steps:

  • Spray a baking tray with spray oil.
  • In a mixing bowl combine first 7 ingredients. Mix well.
  • Divide into 8 equal round cakes.
  • Coat with flour, then dip in egg and finally coat with the crumbs.
  • Place cakes on prepared tray; chill for 10 minutes.
  • Meanwhile preheat oven to 190c.
  • Spray cakes with oil and bake, turning once (spray again). They will take about 30 minutes in total to cook.

1/2 lb cod or 1/2 lb other white flakey fish
1/2 lb shrimp, peeled
1/2 medium onion
1/4 cup loosely packed cilantro
6 ounces green beans
2 tablespoons cornstarch
1 tablespoon fish sauce
1 1/2 tablespoons red curry paste
1 egg
1/2 teaspoon sugar
oil, for pan frying
1 pickling cucumber
1 shallot
1 -2 Thai red chili pepper (the tiny bird peppers)
1/4 cup water
1/4 cup rice vinegar
2 tablespoons sugar
1 1/2 tablespoons finely chopped peanuts

Steps:

  • Process the onion and cilantro until chopped up. Put in a large bowl.
  • Process the fish until pasty and then the the shrimp until mostly pasty, but still somewhat coarse. Add to the bowl.
  • Slice the green beans approximately 1/8", or process them, and add.
  • Mix the cornstarch with the fish sauce, and add the curry paste, egg and sugar. Add to the bowl and mix very very well.
  • Heat some oil in a frying pan. Use a tablespoon to form small (2") patties and fry in the oil. When golden, turn over and fry the other side. Drain on paper towels, and serve hot with the Cucumber Dipping Sauce.
  • Cucumber Dipping Sauce:.
  • Cut the cucumber lengthwise in quarters, and then slice thinnish. Put in a small bowl.
  • Chop the shallots, and add.
  • Remove some of the seeds and membranes from the peppers and finely chop. Add.
  • Boil the water, vinegar and sugar together for a few minutes. Pour over the chopped veggies. Refrigerate to cool.
  • Add the peanuts when serving.
  • Notes:.
  • You could make substitutions for the flounder, or use all fish if you didn't want to use shrimp.
  • Recipe, as posted, is mildly spicy, "warm," but not very spicy "hot". It could be toned up or down by adjusting the red curry paste a bit, but the flavor is central to this dish.
  • Since I mostly serve this at parties, # of servings is very approximate. Sorry, but time is, too - I guessed. Next time I'll time it. I counted the frying as active time.

1 lb any white fish fillet, weighed after boning and skinning, then cut into chunks (cod, haddock, hake, etc.)
2 tablespoons fresh coriander leaves
1 tablespoon fresh lime juice
2 spring onions, very finely sliced into rounds (including the green parts)
2 tablespoons Thai red curry paste (click here for recipe)
1 green chili, de-seeded
2 tablespoons peanut oil (for frying)
salt
2 inches unpeeled cucumbers
2 shallots or 2 green onions
1 small carrot
1 small green chili, de-seeded
1 teaspoon grated fresh ginger
1 tablespoon roasted peanuts
1 tablespoon soft brown sugar
4 fluid ounces rice vinegar or 4 fluid ounces wine vinegar
1 tablespoon light soy sauce
1 tablespoon peanut oil
1 sprig fresh coriander

Steps:

  • 1. Blend Fish, coriander leaves, lime juice, spring onions, curry paste, chilli and a little salt until you have a fine mince, dont make a paste.
  • 2. Take the mixture and roll out little balls about 4cm in diameter. Cling film and put in the fridge to firm up.
  • 3. Blend cucumber, shallots or salad onions, carrot, chilli, ginger and peanuts until very finely chopped. Transfer the chopped vegetables to a bowl. Next mix the sugar with the vinegar to dissolve it, then pour it over the vegetables along with the soy sauce and groundnut oil. Mix thoroughly.
  • 4. To cook the fish cakes, heat 2 tablespoons of groundnut oil in a frying pan and, when it's very hot and beginning to shimmer, fry the cakes for about 1 minute on each side, then drain on crumpled kitchen paper.
  • 5. Garnish with sprigs of coriander and serve with the cucumber dipping sauce.

1 lb white fish fillet (such as cod or 1 lb haddock)
2 tablespoons Thai red curry paste (such as "Thai Kitchen" brand)
1 egg
2 tablespoons fish sauce
1 teaspoon sugar

1 tablespoon cilantro, chopped
1/2 lb fresh green beans, thinly sliced and chopped
2 teaspoons grated lime zest
1 tablespoon lime juice
vegetable oil (for frying)

Steps:

  • Finely chop fish (may use blender or food processor, or just good chopping skills).
  • Add curry paste through lime juice. Process or mix with your hands until finely ground and blended.
  • Using lightly floured hands, form about 12 small patties. Chill patties 2 hours or until firm (if you have time).
  • Heat deep-frying pan over high heat, add oil and fry fish cakes a few at a time. Turning carefully until browned. Drain on paper towels.
  • Serve alone, or will a cool sauce. I like sour cream. A cucumber relish would also be yummy.

400 g canned salmon
1 jalapeno
1/2 onion
1 capsicum
1 tsp ginger
1 tsp garlic
2 Tbsp coriander
2 eggs
3 Tbsp coconut flour
1 Tbsp coconut oil
2 Tbsp sriracha sauce

Steps:

  • 1. Preheat oven to 160°C (Fan Forced). Drain the Salmon in the can's and transfer to a large mixing bowl. Add the Jalapeno, Onion, Capsicum, Ginger, Garlic, 1 Tablespoon of Coriander, Eggs and Coconut Oil. Combine, and transfer to the fridge for 5 to 10 minutes.
  • 2. Heat a medium frying pan over medium heat and add the Coconut Oil. Cook the fish cakes in batches of 3 for 3 to 4 minutes on each side. Once you have cooked all of the fish cakes, transfer to a baking tray lined with baking paper.
  • 3. Place the fish cakes in the oven for 5 minutes
  • 4. Serve with the remaining tablespoon of Coriander, Lemon Wedges and Sriracha Sauce.

3 tbsp sweet chilli dipping sauce
leafy salad , to serve

12 ounces white fish fillets, without skin (such as cod or haddock)
1 tablespoon Thai fish sauce
2 teaspoons red curry paste
1 tablespoon lime juice (fresh)
1 garlic clove, crushed
4 dried kaffir lime leaves, crumbled (find in Asian supermarkets)
1 egg white
3 tablespoons chopped fresh cilantro
salt and pepper (to taste)
vegetable oil, for pan-frying
1 small red chile
1 tablespoon light soy sauce
1 tablespoon lime juice (fresh)
1 tablespoon packed brown sugar
3 tablespoons chunky peanut butter
4 tablespoons coconut milk (unsweetened)

Steps:

  • Finely grate 1/2 small carrot, and a peeled radish, stir into sauce just before serving.

Thai Fish and Shrimp Cakes - you know - that yummy appetizer at Thai restaurants, with the cucumber dipping sauce. These will wow your friends at parties - until they disappear. Or, serve with rice and a vegetable for dinner. Uses a food processor. Also, the Cucumber Sauce should be made ahead, and the fish cake part can also be made ahead.

Number Of Ingredients 18

1/2 lb cod or 1/2 lb other white flakey fish
1/2 lb shrimp, peeled
1/2 medium onion
1/4 cup loosely packed cilantro
6 ounces green beans
2 tablespoons cornstarch
1 tablespoon fish sauce
1 1/2 tablespoons red curry paste
1 egg
1/2 teaspoon sugar
oil, for pan frying
1 pickling cucumber
1 shallot
1 -2 Thai red chili pepper (the tiny bird peppers)
1/4 cup water
1/4 cup rice vinegar
2 tablespoons sugar
1 1/2 tablespoons finely chopped peanuts

Steps:

  • Process the onion and cilantro until chopped up. Put in a large bowl.
  • Process the fish until pasty and then the the shrimp until mostly pasty, but still somewhat coarse. Add to the bowl.
  • Slice the green beans approximately 1/8", or process them, and add.
  • Mix the cornstarch with the fish sauce, and add the curry paste, egg and sugar. Add to the bowl and mix very very well.
  • Heat some oil in a frying pan. Use a tablespoon to form small (2") patties and fry in the oil. When golden, turn over and fry the other side. Drain on paper towels, and serve hot with the Cucumber Dipping Sauce.
  • Cucumber Dipping Sauce:.
  • Cut the cucumber lengthwise in quarters, and then slice thinnish. Put in a small bowl.
  • Chop the shallots, and add.
  • Remove some of the seeds and membranes from the peppers and finely chop. Add.
  • Boil the water, vinegar and sugar together for a few minutes. Pour over the chopped veggies. Refrigerate to cool.
  • Add the peanuts when serving.
  • Notes:.
  • You could make substitutions for the flounder, or use all fish if you didn't want to use shrimp.
  • Recipe, as posted, is mildly spicy, "warm," but not very spicy "hot". It could be toned up or down by adjusting the red curry paste a bit, but the flavor is central to this dish.
  • Since I mostly serve this at parties, # of servings is very approximate. Sorry, but time is, too - I guessed. Next time I'll time it. I counted the frying as active time.

1 pound boneless fish fillets, cubed
½ cup all-purpose flour
2 tablespoons oyster sauce
2 tablespoons sweet chili sauce
1 teaspoon fish sauce
1 teaspoon brown sugar
¼ cup chopped fresh cilantro
4 green onions, sliced
1 egg
all-purpose flour
oil for frying

Steps:

  • Combine fish, 1/2 cup flour, oyster sauce, sweet chili sauce, fish sauce, brown sugar, cilantro, green onions, and egg in a food processor. Process until well combined. Refrigerate for 30 minutes.
  • Shape mixture into patties, and dust with flour.
  • Pour enough oil into a heavy skillet to fill the pan with 1/2 inch of oil. Heat over medium-high heat until hot. Fry fish cakes for 8 minutes, turning once, or until golden brown.

• 50 g Green Beans, Chopped
