1 cup salsa
1/4 cup creamy peanut butter
2 tablespoons orange juice
2 tablespoons honey
1 teaspoon soy sauce
8 ounces uncooked fettuccine
3/4 pound boneless skinless chicken breasts, cut into strips
1 tablespoon canola oil
1 medium sweet red pepper, julienned
1/4 cup minced fresh cilantro

Steps:

  • For sauce, in a microwave-safe bowl, combine the first five ingredients. Cover and microwave on high for 1 minute; stir. Set aside. , Cook fettuccine according to package directions. Meanwhile, in a large skillet, cook chicken in oil over medium heat for 3-5 minutes or until chicken juices run clear. Add red pepper; cook and stir until crisp-tender. , Drain fettuccine; top with chicken mixture and sauce. Sprinkle with cilantro.

1 cup picante sauce
1/4 cup peanut butter
2 tablespoons honey
1 tablespoon soy sauce
1/2 tablespoon ground ginger
3 cups cooked fettuccine
2 cans cooked chicken
1 red bell pepper, chopped
2 tablespoons orange juice

Steps:

  • Mix everything except fettuccine in skillet.
  • Heat until boiling.
  • Remove from heat and add fettuccine, stir well.
  • Cook time does not include fettuccine.

3 boneless skinless chicken breast halves
6 ounces fettuccine
1 cup Pace Picante Sauce
1/4 cup chunky peanut butter
2 tbsp honey
2 tbsp oj
1 tsp soy sauce
1/2 tsl ground ginger
2 tbsp veg oil
1/4 cup coarsely chopped cilantro
1/4 cup peanut halves
1/4 cup thin red pepper strips, cut into halves

Steps:

  • 1. Cut chicken into 1 inch pieces, set aside 2. Cook pasta according to package, drain 3. While pasta is cooking, combine 1 cup picante sauce, peanut butter, honey, ok, soy sauce and ginger in small saucepan. Cook and stir over low heat until blended and smooth. Reserve 1/4 cup of picante sauce. 4. Place pasta in lare bowl. Pour remaining picante sauce mix over pasta, toss gently 5. Heat oil in large skillet over med-high heat until hot. Cook and stir chicken in hot oil about 5 minutes until chicken is browned on teh outside. 6. Add reserve picante sauce mixture, mix 7. Arrance pasta on lettuce lined platter. PLace chicken mixture on top, top with cilantro, peanut halves, pepper strips.

1 cup chunky salsa (mild to hot as desired)
1/4 cup creamy peanut butter
2 tablespoons orange juice
2 tablespoons honey
1 teaspoon soy sauce
1/8 teaspoon red pepper flakes
8 ounces fettuccine pasta
1 lb boneless skinless chicken breast, cut into strips
1 tablespoon olive oil
1 sweet red pepper, julienned
1/4 cup cilantro, minced
salt

Steps:

  • In saucepan or microwave, combine salsa, peanut butter, orange juice, honey, soy sauce and red pepper flakes. Heat until well blended.
  • In a large skillet, cook chicken in oil over medium heat for 3-5 minutes until browned. Add julienned red pepper and cook and stir until crisp-tender.
  • Cook fettuccine according to package directions and fold into chicken mixture. Stir in sauce, salt to taste and sprinkle with cilantro.
  • Wonderful with spiced fruit salad.
