2 1/2 cups flour (dough)
1/2 teaspoon salt
1 cup hot water
1 tablespoon vegetable oil
1 lb ground pork (filling)
2 tablespoons Kikkoman soy sauce or 2 tablespoons tamari soy sauce
1 tablespoon sesame oil
1 1/2 teaspoons ginger, grated fresh
1/4 teaspoon sugar
1 dash salt and pepper, to taste
3 green onions, chopped
1 egg
1 tablespoon cornstarch
1 (9 ounce) can water chestnuts, finely chopped
1 garlic clove, minced
1/2 cup Kikkoman soy sauce (Dipping Sauce)
1/4 cup rice wine vinegar
1 teaspoon chili oil (OR a small spoonful of Hunan sauce)
1 green onion, finely chopped (greens too)

1 tablespoon sesame oil
1 teaspoon grated ginger
1 pinch sugar

1 (8 ounce) can water chestnuts, finely chopped

1 head garlic
1 tablespoon olive oil
1 ⅓ cups dark brown sugar
1 cup pineapple juice
⅔ cup water
¼ cup teriyaki sauce
1 tablespoon soy sauce
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon bourbon whiskey
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
  • Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
  • Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
  • Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

COPYCAT TGI FRIDAY'S POT STICKERS

While on vacation in Vegas, I tried the pot stickers at TGI Friday's several years ago and LOVED THEM. I came home and searched on-line and found this recipe. They are a bit finicky to make but worth it. They really do taste like the pot stickers at TGI Friday's. They are a great "make-ahead" appetizer.

POT STICKERS
2 pkg wonton wrappers
1 lb ground pork
2 Tbsp soy sauce
1 Tbsp sesame oil
1 tsp grated ginger
1 pinch sugar
1 tsp salt & pepper to taste
1 large egg
1 Tbsp corn starch
1 can(s) water chestnuts, finely chopped
1 clove garlic, minced
DIPPING SAUCE
1/2 c soy sauce
1/4 c white vinegar
1 tsp chili oil or paste
1 medium green onion, chopped

Steps:

  • 1. Combine the dipping sauce ingredients and set aside.
  • 2. Start a large pot of water to boil. Combine the filling ingredients. Brush a little water on the edges of wrappers. Place about 2 teaspoons filling in centre. Fold in half and press to seal, making sure to squeeze out any air. Stand the dumplings up on the folded side and press slightly so that they stand up nicely.
  • 3. When water is boiling, drop in the dumplings (not too many at a time or they will start sticking together). Boil til done (about 5 minutes). Drain well. The dumplings may be frozen at this point in time for future use.
  • 4. Heat a skillet with about 2 tablespoons oil and fry the dumplings on one side only, until nicely browned. Drain on paper towels. Serve with the dipping sauce.
