6 eggs
1 cup half and half
2 tablespoons green onions, chopped
Salt and pepper
Butter to grease pan
6 slices of Texas Toast (thick cut, crusty white bread)
1 pound spicy pork sausage, cooked and drained of fat
1 cup grated Cheddar cheese

Steps:

  • In a small bowl, beat the eggs until they loosen up. Add the half and half, and green onions. Mix well, highly season with salt and pepper and set aside.
  • Butter a 12 by 10-inch baking pan. Line the pan with the bread, cutting and rearranging, if needed. Sprinkle the bread with the cooked sausage and cheese. Pour the egg mixture over the entire pan. Cover and refrigerate overnight.
  • Preheat oven to 350 degrees. Cook covered for 25 to 30 minutes or until the egg mixture is set.

I'm a big fan of dulce de leche and am always looking for a way to incorporate it into sweet dishes. I decided to make a breakfast dish that was reminiscent of a luscious dulce de leche cheesecake. 8 slices Texas toast
1/3 cup whipped cream cheese
1/3 cup dulce de leche
3 large eggs
1/2 cup 2% milk
1/2 cup half-and-half cream
3 tablespoons sugar
1-1/2 teaspoons vanilla extract
TOPPING:
1/2 cup packed brown sugar
1/4 cup butter, cubed
1 tablespoon corn syrup
3/4 cup chopped pecans

Steps:

  • Preheat oven to 325°. Place Texas toast on an ungreased baking sheet. Bake 15-20 minutes or until light brown. Cool., Arrange half of the toast in a single layer in a greased 8-in. square baking dish, trimming to fit into dish if necessary. In a small bowl, mix cream cheese and dulce de leche; spread over toast. Top with remaining toast., In a small bowl, whisk eggs, milk, cream, sugar and vanilla; pour over toast. Refrigerate, covered, overnight., Preheat oven to 350°. Remove French toast from refrigerator while oven heats. In a small saucepan, combine brown sugar, butter and corn syrup; cook and stir over medium heat until sugar is dissolved. Stir in pecans; spread over top., Bake, uncovered, 40-50 minutes or until puffed, golden and a knife inserted in the center comes out clean. Let stand 5-10 minutes before cutting.

This is our special occasion recipe - we use it for Thanksgiving and Christmas morning as it is easy to prepare the night before, my daughter is having her in-laws over this week and requested it for them. So maybe it is impress the MIL too. :) there are many variations of this recipe this one seems to work best for us.

1 (8 ounce) package pork sausage (can use hot, also sub ham or bacon)
1/2 teaspoon salt
6 eggs, beaten
1 -1 1/2 cup half-and-half
6 -8 slices Texas toast thick bread
8 -12 ounces shredded cheddar cheese

Steps:

  • Brown sausage and drain.
  • Place Texas toast in greased 9x12 casserole dish.
  • In a medium bowl mix eggs with salt and half and half.
  • Pour mixture evenly over bread.
  • Top with browned sausage and shredded cheese.
  • Cover and refrigerate overnight.
  • Take out of refrigerator in the morning while you are preheating your oven to 350 F bake for 45 minutes or until browning on the top.
  • note: cooking time does not include overnight refrigeration.

1 (12 ounce) can crescent rolls
1 lb sausage, cooked and drained
1 lb fresh mushrooms, sliced
3/4 lb monterey jack cheese, grated
6 eggs, beaten
1 (10 1/2 ounce) can cream of onion soup

Steps:

  • Unroll crescents and line a 13x9-inch Pyrex dish.
  • Cover with sausage, mushrooms and half the cheese. (This is where I'd add any extra ingredients you decide on).
  • Mix eggs with soup and pour over casserole.
  • Sprinkle remaining cheese on top.
  • Chill overnight. Bake at 350° for 1 hour.
