TEXAS TATER CASSEROLE

Spice up traditional Tater Tot casserole with salsa, chili powder and taco-seasoned cheese.

1 pound lean ground beef
1 large onion, chopped (1 cup)
1 medium stalk celery, chopped (1/2 cup)
2 cloves garlic, finely chopped
2 cans (10 3/4 ounces each) condensed Cheddar cheese soup
1 can (11 ounces) whole kernel corn, red and green peppers, drained
1/2 cup Old El Paso™ Thick 'n Chunky picante
2 teaspoons chili powder
1/4 teaspoon pepper
1 bag (16 ounces) frozen potato nuggets
1/2 cup shredded taco-seasoned cheese (2 ounces)

Steps:

  • Heat oven to 375°. Cook beef, onion, celery and garlic in 12-inch skillet over medium-high heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • Stir soup, corn, picante, chili powder and pepper into beef mixture. Spoon into ungreased 2 1/2-quart casserole. Top with frozen potato nuggets.
  • Bake uncovered 40 minutes. Sprinkle with cheese. Bake 5 to 10 minutes or until bubbly and cheese is melted.

Not sure which website I found this, but I recently made it and it was good. I did omit the Nacho Sauce I wasn't sure about the Nacho Cheese Sauce and it turned out fine. Next time I will look at another store for the Nacho Sauce. It's a good alternative to the usual Tater Tot Casseroles.

1 lb ground meat

1 (10 1/2 ounce) can cheddar cheese soup
1 (8 ounce) jar of nacho cheese sauce
2 cups frozen corn
1/2 cup salsa
2 teaspoons chili powder
1/4 teaspoon pepper
salt
1 (32 ounce) package frozen tater tots
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 375.
  • Cook beef, onion and garlic, drain well.
  • Stir in soup, nacho cheese sauce, corn, salsa, chili powder and pepper.
  • Spoon into a ungreased 9 x 13 baking dish. Top with tater tots.
  • Bake for 40 minutes.
  • Sprinkle with cheese and return to oven for 10 minutes.

I got this from the Betty Crocker Casseroles & Slow Cooker Meals cookbook. I just tried it and it is quite tasty and very easy to put together. You can also use salsa in place of the picante sauce if you choose.

1/2 cup old elpaso thick 'n chunky picante sauce
2 teaspoons chili powder
1/4 teaspoon pepper
1 (16 ounce) bag frozen tater tots
1/2 cup shredded taco blend cheese

Steps:

  • Heat oven to 375 degrees. Cook beef, onion, celery and garlic in 12 inch skillet over medium-high heat 8-10 minutes, stirring occasionally, until beef is brown; drain.
  • Stir soup, corn, picante, chili powder and pepper into beef mixture. Spoon into ungreased 2 1/2 quart casserole dish. Top with frozen potato nuggets.
