TEXAS QUICHE



Texas Quiche image

This recipe is from The Columns on Alamo B&B in San Antonio. It makes a lovely brunch, lunch or dinner entree. I serve it with a crispy green salad, or sometimes a fruit salad.

Yield 1 Quiche

Number Of Ingredients 8

6 ounces monterey jack and cheddar cheese blend, shredded (this is the combined amount)
1 (3 1/2 ounce) can chopped green chili peppers
1 1/2 cups cream
1/2 teaspoon salt
1/4 teaspoon pepper
1 dash Tabasco sauce
1 prepared pie 9 inch pie shell
3 eggs

Steps:

  • NOTE: I buy the jack cheese and Cheddar cheese in a combined block.
  • Mix eggs, cream, salt, pepper, and Tabasco sauce.
  • Put cheese and chiles in pie crust.
  • Pour cream mixture over it.
  • Bake at 375°F for 45 minutes.
  • Serve hot with salsa.

This recipe was in a brochure that was included in an order from New Braunfels Smokehouse, a half-century-old Central Texas tradition. The family-owned restaurant, meat processing plant, and mail order business features wonderful hickory- smoked meats and the restaurant is a must if you ever visit New Braunfels!This is great for brunch with a fruit salad or for a light dinner with a side salad.

1 prepared unbaked pie shell
3/4 cup cheddar cheese, grated
1/2 cup monterey jack cheese, grated
3 large eggs, lightly beaten
1 teaspoon salt
1/4 teaspoon white pepper
1 1/2 cups half-and-half
1 (4 ounce) can chopped chilies, drained
1 (2 1/2 ounce) can sliced black olives, drained
2 tablespoons scallions, finely chopped
1/2 lb smoked ham, chopped

Steps:

  • Preheat oven to 350°.
  • Mix cheeses together and sprinkle evenly over pie shell.
  • Mix eggs, salt, pepper, cream, olives, chilies, scallions and ham; pour over cheeses.
  • Bake 45 minutes or until a knife inserted into the center comes out clean.
  • Serve warm or at room temperature.

5 eggs beaten
1/4 cup flour
1/4 cup butter or margarine, melted
1/4 cup red bell pepper, finely chopped
1 can chopped green chilies, drained, 4 oz
2 cups grated monterey jack cheese
1/4 cup cheddar cheese, optional
one jar salsa or topping, optional
1 cup cottage cheese
1/2 tsp. baking powder
4 tbsp. finely chopped green onions
1 pkg. refrigerator biscuits

Steps:

  • 1. Separate biscuits land cut in half horizontally, making 20 pieces of thin pastry. Spray ramekins with a little nonstick cooking spray. Put a piece of pastry into each ramekin, press down. Bake for 10 minutes sat 350 til just brown and slightly puffy. You can make the quiche without the pastry crust if you like.
  • 2. In large bowl, mix beaten eggs and cottage cheese. Beat in flour, baking powder and melted butter. Stir in Monterey jack cheese, green onions red pepper and chiles. Mix well. Pour mixture equally into ramekins. Sprinkle a few pieces of cheddar cheese on top (optional). Bake in oven at 350 for 20 minutes or til done. Serve warm, plain or with salsa on top or in small side bowl. Enjoy.

Another very easy and tasty appetizer. These freeze well. I am not sure where this recipe came from.

Number Of Ingredients 7

1 cup grated medium cheddar or 1 cup swiss cheese
1/2 cup milk
1 large egg
1 cup sliced fresh mushrooms
1/4 teaspoon salt
1/2 cup bacon bits or 6 slices bacon, cooked crisp and crumbled
24 unbaked miniature tart shells

Steps:

  • Place first 5 ingredients in blender.
  • Process until smooth.
  • Divide bacon among tart shells.
  • Spoon cheese mixture over bacon.
  • Bake in 350° oven for about 25 minutes until set.
  • To freeze, I bake them first and thaw out before reheating. It only takes a wee while to thaw out. I put them in the oven for 5 to 8 minutes to heat through. I found by reheating them while still frozen they got a little soggy.

1 teaspoon chili powder
1 pastry shell (9 inches), unbaked
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 tablespoon all-purpose flour
3 large eggs, beaten
1-1/2 cups half-and-half cream
1 can (4 ounces) chopped green chiles, well drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Sprinkle chili powder over the inside of the crust. Combine cheeses with flour and place in crust. , Combine eggs, cream, chiles, olives, salt and pepper. Pour over cheese. , Bake at 325° for 45-55 minutes or until a knife inserted in the center comes out clean. Cool for 10 minutes before cutting into wedges.

This is a family favorite, everyone wants the leftovers if there are any. It is great for a brunch and while it is baking you can prepare other things to serve. If you cannot find fresh chorizo, I have made this with chopped canadian bacon or hot breakfast sausage.

3 c frozen hash brown potatoes, thawed
1/4 c butter, melted
3/4 lb fresh chorizo, browned
1 c mild cheddar cheese, grated
1/4 c green, yellow or red bell pepper chopped
1/4 c onion, finely chopped
1 jalapeno, finely chopped
4 eggs
1/4 c milk
1/2 tsp seasoning salt (i use tony chachere's creole seasoning)
1/2 tsp salt
1/4 tsp black pepper

Steps:

  • 1. Spread the potatoes on a plate layered with paper towels, thaw in the microwave. Press out any remaining moisture.
  • 2. Pat the potatoes over the bottom and sides of an ungreased 9 inch pie plate.
  • 3. Sprinkle potatoes evenly with seasoning salt and then drizzle with melted butter.
  • 4. Bake at 425 for 25 minutes. Remove from oven and reduce temperature to 350.
  • 5. Layer the chorizo, cheese, pepper, onion and jalapeno over the baked crust.
  • 6. In a separate bowl, whisk together the eggs, milk, salt and pepper until blended and pour over the prepared layers.
  • 7. Bake for 25 minutes or until a knife in the center comes out clean.
