½ (8 ounce) package cream cheese
¼ cup butter
2 (11 ounce) cans whole kernel corn
1 cup shredded Cheddar cheese
¼ cup diced jalapeno chile pepper

Steps:

  • Melt cream cheese and butter together in a saucepan over medium heat; add corn, Cheddar cheese, butter, and jalapeno pepper. Cook the corn mixture, stirring regularly, until the sauce is smooth and the ingredients are hot, about 10 minutes.

1 (16 ounce) frozen corn
1 (14 ounce) can cream-style corn
2 jalapeno peppers, seeded and chopped
6 green onions, chopped
1/2 cup sour cream
4 eggs, beaten

Steps:

  • Heat oven to 350. Spray a 13 x 9" baking pan with non-stick cooking spray.
  • Combine frozen corn, cream corn, jalapeno peppers, onions, sour cream and eggs in a large bowl.
  • Season to taste with salt and pepper.
  • Pour into baking dish and bake uncovered for 1 hour and 10 minutes or until golden and bubbly.

A simple, delicious addition to any meal, Tex-Mex or otherwise. I personally like a bit of spice, so I use 3 jalapenos. You may use 2 if you can't handle much of a kick.

24 ounces frozen corn (doesn't have to be thawed)
8 ounces fat free cream cheese, softened
8 ounces low-fat sour cream
2 garlic cloves, minced
6 green onions, finely chopped
3 jalapenos, diced, seeds removed
1/3 cup shredded colby-monterey jack cheese
salt
pepper

Steps:

  • Preheat oven to 375 degrees.
  • In large bowl, mix cream cheese and sour cream. Add garlic, green onions, jalapenos, salt and pepper. Mix well.
  • Stir in corn.
  • Spread mixture evenly in large glass baking dish. Top with shredded cheese.
  • Bake for approximately 30 minutes.

2 cans (15-1/4 ounces each) whole kernel corn, drained
1 to 2 jalapeno peppers, sliced and seeded
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
1 package (8 ounces) cream cheese, softened and cubed

Steps:

  • Preheat oven to 350°. Place half of corn in a greased 8-in. square baking dish. Top with jalapeno slices and remaining corn. In a small saucepan, melt butter. Whisk in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened and bubbly., Stir in cream cheese just until melted. Pour over corn. Bake, uncovered, for 35-40 minutes or until lightly browned.

⅓ cup evaporated milk
1 pickled jalapeno pepper, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x9 inch casserole dish with cooking spray.
  • In a mixing bowl, combine cream cheese and milk until smooth. Stir in corn and jalapeno peppers. Transfer mixture to the prepared dish and cover with a lid or foil.

1 jalapeno, diced (less or more for desired heat)
1 1/2 tablespoons milk
Salt and pepper to taste

Steps:

  • Unwrap cream cheese and place in 4 quart microwave safe casserole dish. Cook on 50% power in 2 minute intervals, stirring each time, until cheese is melted. Add corn, jalapenos, and milk. Mix well. Cook another 2-3 minutes on high until corn is heated through. Add more milk if necessary to achieve desired creaminess.
