Time 25m

Yield 6 serving(s)

Number Of Ingredients 8

1 (16 ounce) bottle Italian salad dressing
1 (12 ounce) mexican beer (such as Corona)
2 lbs skirt steaks, trimmed of ALL fat
2 tablespoons Worcestershire sauce (optional)
1/4 cup pickled jalapeno pepper, with juice (optional)
1 tablespoon onion powder (optional)
2 tablespoons minced garlic (optional)
4 tablespoons lime juice (optional)

Steps:

  • Combine all ingredients in a heavy duty sealable freezer bag and freeze. (Or store in the refrigerator overnight).
  • When desired, remove from freezer and thaw in the fridge or a sink full of cold water.
  • Grill for 10-15 minutes or until medium (pink in the center).
  • Cut fajitas AGAINST THE GRAIN and serve with warmed tortillas, shredded cheese, lettuce, pico de gallo (#159078), sour cream, guacamole or your favorite toppings.
  • To cut fajitas against the grain, lay out on cutting board horizontally. The grain is running vertically. Cut the steak vertically into managable sized slabs and then slice horizontally (opposite the grain). The fajitas will be tender and soft.

Texas Fajitas!!!! image

Summer has come and gone, but we usually cook out at any time of the year. Rain or shine. The entire family gets together and we make homemade potato salad, Spanish rice, charro beans, Pico de Gallo, grilled chicken by the half, sausage and we can't forget about the FAJITAS!!! Which are absolutely tasty with added lemon juice!...

Time 1h15m

Number Of Ingredients 6

1 lb fajita *beef skirt*
9 large yellow *valley* lemons
cracked pepper
salt
large bowl
grill

Steps:

  • 1. Wash hands and prepare a clean space/cutting board and knife for this first. Make sure to turn your grill on a head of time. Trim the fat off, leave as much or as little as you like. Cut against the grain into strips. If strips are too long, simply cut in half.
  • 2. Halve lemons, and remove seeds. In a separate large bowl, squeeze lemons and add fajitas. Add as much salt as you like, but add plenty of cracked pepper. Soak fajitas in salt, pepper, and lemon mixture for 10 minutes. After grill is hot, place fajitas. Let them cook with their natural juices, cook at desired temp. If you like them medium, cook them 5 min on each side. But preferably well done. Enjoy!

SOUTH TEXAS BEEF FAJITAS

South Texas Beef Fajitas image

This is the first time I post a recipe and I hope you all like it. This is a typical dish we make when we have lots of company. It is easy and everybody likes it. The salsa in particular is wonderful and can be eaten with almost anything you want. The proportions are subject to how many people will eat and what else is going to be served.

Yield 6-8 serving(s)

Number Of Ingredients 10

4 lbs of clean tenderized beef
1 bottle of viva italia salad dressing
either corn tortillas or flour tortilla
pico de gallo (Rooster's beak Wonderful fresh salsa)
1 bunch cilantro, chopped
1 tomatoes, chopped
1/2 onion, chopped
serrano pepper (as much or as little as you want. Please use fresh peppers not the ones in vinegar)
lime juice

Steps:

  • Marinate the meat with the salad dressing overnight and cook them on your BBQ grill.

  • For the pico de gallo just mix everything a couple of hours before you so it will be good and juicy.
  • This salsa is great with Doritos or Tostitos or any itos you like.
