TEXAS COWBOY COOKIES

My mom clipped this recipe out of a local newspaper a few years ago. I have made them several times since then, especially at Christmas. They are usually the first to disappear from the cookie plate. The recipe has alot of mix-ins and will get hard to stir, I suggest you use a BIG bowl and sturdy wooden spoon. This makes a Texas-size batch!!

Number Of Ingredients 13

3 cups flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
1 1/2 cups butter, at room temp
1 1/2 cups sugar
3 eggs
1 tablespoon vanilla
3 cups oatmeal
2 cups coconut
3 cups chocolate chips
2 cups chopped pecans

Steps:

  • Mix first five dry ingredients in a bowl and set aside.
  • In a BIG bowl, mix butter until creamy, gradually mixing in sugar.
  • Add eggs one at a time and mix well.
  • Add vanilla and mix well.
  • Gradually add flour mixture, stir well.
  • Add remaining ingredients one at a time, stirring well. (this is where the stirring starts getting harder).
  • Use a medium size cookie scoop and drop rounded balls of dough onto ungreased baking sheets. Flatten slightly.
  • Bake at 350 degrees for 17-20 minutes.
  • Remove from baking sheet and cool.
  • Makes approximately six dozen cookies or you can use a large scoop and make approximately three dozen jumbo cookies.

1 1/3 cups quick oats
1/2 cup firmly packed brown sugar
1/2 cup sugar
1/2 cup chopped pecans
1 cup chocolate chips
1 1/3 cups flour, mixed with
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Layer ingredients in order given in a 1- quart wide mouth canning jar.
  • Press each layer firmly in place before adding next ingredient.
  • Recipe for Cowboy Cookies (to be attached with the mix):.
  • Empty jar of cookie mix into a large mixing bowl,.
  • Blend mix together.
  • Add: 1 stick butter melted, 1 large egg, slightly beaten, and 1 tsp vanilla.
  • Mix until completely blended.
  • Shape into balls the size of walnuts; place 2 inches apart on sprayed baking sheets.
  • Bake at 350° for 11-13 minutes until edges are lightly browned.
  • Cool 5 minutes on baking sheet.
  • Remove cookies to racks to finish cooling.
  • Makes 3 dozen cookies.

This is by far the best Cowboy cookie recipe out there. It is from First Lady Laura Bush's kitchen. We make so many of these and people always are asking for them. My mom found this recipe in her local newspaper. They are a very BIG cookie!!

3 c flour
1 Tbsp baking powder
1 Tbsp baking soda
1 Tbsp cinnamon (i omit this, i like it without)
1 tsp salt
1 Tbsp pure vanilla extract
1 1/2 c butter, room temperature
1 1/2 c sugar
1 1/2 c brown sugar, firmly packed
3 eggs
3 c chocolate chips
3 c oatmeal, uncooked
2 c coconut
2 c chopped pecans
2 c heath bar bits

Steps:

  • 1. Mix flour, baking powder, baking soda, salt & cinnamon in a large bowl; set aside.
  • 2. Beat butter till smooth. Add in sugars and combine thoroughly. Add eggs one at a time. Beating after each. Beat in vanilla.
  • 3. Add flour mixture till combined.
  • 4. Stir in chips, oats, coconut, nuts and heath bar pieces.
  • 5. Drop by 1/4 cup 3 inches a part on greased cookie sheets. Bake at 350F for 15-17 minutes

3 cups flour
1 tbsp baking powder
1 tbsp baking soda
1 tbsp cinnamon
1 tsp salt
1 1/2 cups butter, at room temperature
1 1/2 cups sugar
1 1/2 cups brown sugar
3 eggs
1 tbsp vanilla
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened coconut flakes
2 cups chopped pecans (8 oz) (optional - I omit)

Steps:

  • Preheat oven to 350ºF.
  • In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • In a second bowl, beat the butter on medium speed until smooth. Add the sugar and brown sugar and beat for another 2 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.
  • Stir in the flour mixture, blending until just combined. Add the chips, oats, coconut, and pecans and stir until fully incorporated.
  • Drop by rounded tablespoon onto an ungreased baking sheet, making sure to allow plenty of room between cookies. Bake for 10-12 minutes or until the edges are set and golden brown. Allow the cookies to cool on the pan for 1-2 minutes before placing on a cooling rack.
