This dip/salsa is fresh, delicious and nutritious. Everyone loves it, except my SIL who has an strange bean phobia. It's one of my most requested recipes.

Number Of Ingredients 7

2 cans Rotel tomatoes & chilies, mild,original or hot,your choice,drained well
2 cans black-eyed peas, drained and rinsed
2 -3 large green peppers, diced small
2 cups sweet onions, diced small
1 bunch cilantro, finely chopped
1 (8 ounce) bottle kraft zesty Italian dressing
your favorite tortilla chips, for dipping

Steps:

  • Place all ingredients in a large bowl and mix well.
  • Cover and place in refrigerator to marinate for a minimum of 2 hours.
  • It's best made the day before, but my DH has been know to eat a big bowl full right away.

1 (15 ounce) can corn
1 (15 ounce) can black beans
1 red onion
1 jalapeno
1 green pepper
1 red pepper
1 yellow pepper
1 orange bell pepper
1/2 cup cilantro
1/4 cup light olive oil
1 cup Splenda sugar substitute
3/4 cup apple cider vinegar
1 teaspoon black pepper
3 garlic cloves

Steps:

  • Chop up all the peppers,onion and cilantro.
  • Put the oil, black pepper, splenda & apple cider vinegar in a saucepan. Bring to a boil and simmer until the splenda dissolves. Cool.
  • Mix together all the other ingredients and pour cooled oil over.
  • Refrigerate overnight.
  • Serve with tostito scoops.

How to make Texas Caviar (Black-eyed Pea Salsa or Salad)

Number Of Ingredients 15

2 cans (16 ounces each) blackeyed peas
2 cups fresh or frozen (thawed) corn
1 red bell pepper, chopped
1 green bell pepper, chopped
1 large red onion, chopped
1-2 jalapeƱos, seeded and chopped
6 roma tomatoes
1 tbsp. minced chipotle pepper (canned in adobo sauce)
1 large clove garlic, crushed
2 tsp. salt (or to taste)
1 tsp. pepper
1/2 tsp. sugar
1 tbsp. Tabasco sauce
1/2 cup red wine vinegar
1/4 cup water (may use "Thick Water")

Steps:

  • Drain and rinse black-eyed peas. Combine in a large bowl with corn, chopped peppers, onions, and tomatoes.
  • Mix chipotle pepper, water, vinegar, Tabasco, sugar, garlic, salt and pepper. Pour over salad and stir gently to coat. Refrigerate for several hours to overnight before serving.
  • Serve as a dip with tortilla chips or as a salad.

How to make Sweet-N-Tangy Salsa....aka Texas Caviar

Number Of Ingredients 13

1 can of pinto beans, drained
1 can of blackeyed peas, drained
1 can of shoepeg corn
1 jalepeno
1 red onion
1 green pepper
1 red pepper
1 yellow pepper
1 orange pepper
1/4 cup oil (original recipe is 1/2 cup, but I don't think that much is necessary)
1 tsp black pepper
1 cup sugar (I used baking Splenda to save on calories)
3/4 cup cider vinegar

Steps:

  • Chop up all the peppers, onion, and jalepeno (this is where having a chopper is nice, especially since I usually make triple batches for parties)
  • Put the oil, pepper, sugar, and vinegar in a saucepan. Bring to boil to dissolve and then let cool.
  • Mix all the ingredients together and let sit in fridge overnight.

1/2 C. Olive Oil
1/8 C. sugar
1/4 C. white vinegar
SALSA:
1 can pinto beans, drained & rinsed
1 can black-eyed peas, drained & rinsed
1 small can chopped jalapenos
1 C. chopped celery
1 C. chopped green peppers
1 C. chopped onion
Tortilla Scoops

Steps:

  • Shake the sauce ingredients in a shaker to blend. Combine all other ingredients in large bowl and pour sauce over mixture. Serve with tortilla scoops. Optional: Add garlic and cilantro to mix.
