2 (15 ounce) cans black-eyed peas, drained
1 (15 ounce) can ranch style black-eyed peas with jalapenos, drained
0.5 (12 ounce) can Rotel Tomatoes, drained
1 cup of shredded cheddar cheese
1 cup Velveeta cheese, cubed
1 onion, chopped
1 (4 ounce) can diced green chilies
salt and pepper

Steps:

  • Chop and cook onion in a little oil or butter till clear.
  • Put all the ingredients in a crock pot and cook on low till melted.
  • Serve warm with frito scoops.

I've seen other versions titled the same, but this one is by far my favorite. A fellow flight attendant shared it with me YEARS ago. I hate it I can't remember her name. It's quick and easy, and I always get requests for it. Depending on what you serve it with, it's a healthy, high fiber snack!

2 (16 ounce) cans black beans, drained and rinsed
1 (15 ounce) can Mexican-style corn, drained
1 bunch fresh cilantro, chopped
1 lime, juice of

Steps:

  • Rinse the black beans thoroughly to keep dip from looking "muddy".
  • Dump beans and corn into bowl.
  • Squeeze in the juice from the lime.
  • Add cilantro to taste.
  • Chill.
  • I think this dip is best served cold with Frito Scoops. You could also serve it with other chips, crackers, or tortillas, but I've seen people eat it with nothing but a spoon! It is best when made the day before, but it certainly doesn't have to be.

2 can(s) 14 1/2-ounce each) cans black-eyed peas, drained
1 can(s) 15 1/2-ounce) can white hominy, drained
2 medium tomatoes, chopped
2 clove garlic cloves, finely minced
1 medium bell pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped (use gloves)
1/2 c cup chopped onion
1/2 c cup fresh parsley, chopped /are celintro
4 green onions, chopped
1 bottle (8-ounce) italian salad dressin

Steps:

  • 1. Combine all ingredients except Italian dressing; mix well. Pour salad dressing over mixture; cover and marinate at least 2 hours in refrigerator. over nights even better
  • 2. Drain and serve with corn or tortilla chips. Makes 6/7 cups. I have as aside dish are salad

1 can black eyed peas (rinsed and drained)
1 can black beans (rinsed and drained)
1 can corn (drained), (can use the kind with diced red & green peppers, if desired)
1 small can diced jalapenos (drained)
1 small white onion, diced
2 bunches scallions, diced
4-5 roma tomatoes, chopped (seed the tomatoes and do not use the inside drippy part)
2 cloves garlic, minced
Small bottle of zesty Italian dressing *as much as you want, I usually use 3/4 of the bottle but just judge when I mix it in

Steps:

  • -Mix together and refrigerate. *The longer it sits before you serve it, the better it is. *The recipe is easily doubled if you need more and you can pretty much add anything extra that you want.
