1 tablespoon butter
1 garlic clove, minced
1 cup ketchup
1/3 cup (packed) golden brown sugar
1/3 cup Worcestershire sauce
1/4 cup fresh lemon juice
1 chipotle chile from canned chipotle chiles in adobo,* minced with seeds
1/4 teaspoon ground cayenne

Steps:

  • Melt butter in medium saucepan over medium heat. Add garlic; stir 30 seconds. Stir in ketchup and all remaining ingredients. Bring to boil. Reduce heat to medium-low; simmer until reduced to 1 1/3 cups, stirring occasionally, about 15 minutes. Season with salt and pepper. do ahead Can be made 1 week ahead. Cool slightly, cover, and chill.
  • Dried, smoked jalapeños in a spicy tomato sauce called adobo; available at some supermarkets and at Latin markets.

Coffee rub:
1 tablespoon freshly ground coffee
2 teaspoons (packed) golden brown sugar
2 teaspoons freshly ground black pepper
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1/2 teaspoon fine sea salt
Burgers:
8 slices applewood-smoked bacon
1 pound ground chuck (preferably grass-fed)
1 pound ground sirloin (preferably grass-fed)
8 slices smoked provolone, smoked caciocavallo, or smoked Gouda cheese (about 8 ounces)
8 potato-bread hamburger buns
Toppings:
8 slices red onion
8 slices tomato
Texas Barbecue Sauce

Steps:

  • For coffee rub:
  • Mix all ingredients in small bowl. DO AHEAD: Can be made 1 week ahead. Store airtight at room temperature.
  • For burgers:
  • Cook bacon in large skillet until crisp. Transfer to paper towels to drain. Break in half. Gently mix chuck and sirloin in large bowl. Form meat into 8 patties, each 3 1/2 to 4 inches in diameter and 1/3 to 1/2 inch thick. Using thumb, make slight indentation in center of each burger. DO AHEAD: Burgers and bacon can be prepared 8 hours ahead. Cover separately and chill.
  • Prepare barbecue (medium-high heat). Sprinkle 1 teaspoon coffee rub on top side of each burger. Place burgers, rub side down, on grill rack. Grill until slightly charred, about 4 minutes; turn.
  • Place 2 bacon slice halves atop each burger. Cook 3 minutes.
  • Top each with 1 cheese slice. Cover and cook until cheese melts, about 1 minute longer. Place burgers atop bottom halves of buns. Top with onion slices and tomato slices. Spoon dollop of Texas Barbecue Sauce over. Cover with bun tops and serve, passing additional sauce alongside.
  • What to drink:
  • Beer is a natural pairing for a burger. Keep the southern theme going by pouring a Texas brew. We like the caramel sweetness and mild hoppy flavor of Shiner Bock ($8 per six-pack).

TEXAS-STYLE BARBECUE SAUCE

1 1/2 cups beef stock or broth
1/2 cup ketchup
1/2 small onion, finely chopped
2 tablespoons bacon drippings or unsalted butter
Kosher salt and freshly ground pepper

Steps:

  • Combine the beef stock, ketchup, onion, bacon drippings, 1/4 teaspoon salt and 1/2 to 1 teaspoon pepper in a medium pot. Bring to a boil, then reduce the heat to medium low and simmer until the onion is tender, about 10 minutes. Remove from the heat and set aside to let the flavors develop, at least 1 hour. Reheat the sauce before serving.

1 tablespoon olive oil
4 slices salt pork, cubed
1/2 white onion, chopped
2 shallots, chopped
6 garlic cloves, smashed
1 tablespoon ginger, thinly sliced
1 tablespoon ancho powder
1 bottle beer
1 tablespoon Worcestershire Sauce
1/2 cup ketchup
1/4 cup yellow mustard
1 bouquet garni of various fresh herbs (cilantro, parsley, thyme)
2 to 3 cups chicken broth
1/2 cup brown sugar
4 thinly sliced (about 1/4-inch) pork steaks, bone-in, from the shoulder
Salt and pepper
2 to 3 Yukon gold potatoes
Canola or peanut oil
Sea salt
White pepper
Celery salt
Ground cumin
Paprika
Black pepper
Garlic powder
Chili powder
Lemon zest
Cayenne pepper
Dry mustard
Chipotle Aioli, for serving, recipe follows
1 to 2 chayote
Melted butter
Salt and freshly ground black pepper
2 Roma tomatoes
Salt and freshly ground black pepper
Olive oil
8 tablespoons pesto
Freshly grated Parmesan
1 cup prepared mayonnaise
1 to 2 teaspoons chipotle en adobo

Steps:

  • Heat olive oil in skillet. Add the salt pork and cook over medium heat until crispy. Remove the salt pork and set aside. Add in the onion and shallot and cook until translucent. Add in the garlic, ginger, and ancho powder and saute until fragrant, about 2 minutes. Add in the beer, cook 5 minutes. Add in all other ingredients except 1 cup of chicken broth. Simmer for 15 minutes. If the sauce seems too thick, thin with the reserved chicken broth. Crumble the salt pork into the sauce. Set aside and wait for pork to grill. Season pork steaks with salt, pepper. Place on a medium-high grill and sear, 5 to 6 minutes on each side. Remove the steaks and dip in homemade BBQ sauce. Place back on the grill for 2 to 3 minutes, turning and basting to let the sauce caramelize on the pork steaks. Remove and let sit for 5 minutes. Serve with Yukon Gold Frites and Grilled Chayote and Tomatoes.
  • Yukon Gold Frites: Thinly slice potatoes lengthwise to form a traditional thin chip. Toss into a hot pot of good frying oil (canola or peanut). Fry until partially cooked. Remove from oil and let drain on a paper-towel covered plate. Sprinkle with a homemade Texas-style dry rub spice (sea salt, white pepper, celery salt, ground cumin, paprika, black pepper, garlic powder, chili powder, lemon zest, cayenne pepper and dry mustard). Toss chips on a hot grill and cook through until brown, crispy, with nice grill marks. Serve with Chipotle Aioli to dip.
  • Grilled Chayote: Slice 1 to 2 chayote lengthwise like the potatoes. Brush each side with melted butter and season with salt and pepper. Cook on a medium-high grill turning frequently to make crisscross marks on both sides. When fork-tender, remove from grill and season again.
  • Grilled Roma Tomatoes: Slice 2 Roma tomatoes in half; core the center to remove seeds and to make a pocket. Sprinkle with salt and pepper. Brush with olive oil. Fill pockets with pesto, about 2 tablespoons each, and sprinkle on some grated Parmesan. Grill tomatoes until tender but not falling apart, about 5 minutes if grill is very hot. Sprinkle with a bit more grated Parmesan, and serve.
  • Whisk all ingredients together.

This is one of my favorite tomato-based barbecue sauces. It's great on turkey, chicken, pork and, of course, beef! This is the sauce on turkey meatballs.

Steps:

  • 1. In a medium bowl whisk together the ingredients in the order they are listed.
  • 2. I enjoy using a mortar and pestle to grind the black pepper and cumin fresh but you can use pre-ground pepper and cumin.
  • 3. Simmer over low heat for 10 minutes (optional).

7 pound brisket
4 tablespoons salt
2 tablespoons brown sugar
2 teaspoons dry mustard
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons dried basil
3/4 teaspoon dried coriander
1/2 teaspoon dried savory
1 teaspoon black pepper
1/2 teaspoon ground cumin
2 dried bay leaves, ground
2 tablespoons brisket rub
1 pound slab bacon, rind removed, diced
1/4 cup onion, minced
1/4 cup garlic, minced
1/4 cup celery, minced
8 bottles Dock Street Lager beer
1 teaspoon dry mustard
1 teaspoon black pepper
1 teaspoon lemon zest
1 tablespoon lemon juice
2 tablespoons soy sauce
2 tablespoons cider vinegar
8 beef sausages from Southside Market and BBQ; Elgin, Texas

Steps:

  • Mix all the ingredients together, saving 1/4 cup, and rub the brisket vigorously. Store brisket well sealed overnight in a shallow pan.;
  • In a medium sauce pot, place bacon, onion garlic, and celery. Cook over medium heat until browned. Add 4 bottles of beer to the pot. It's going to be a long day; you will need the other beers for the cook. Bring the pot to a boil. Add rub, mustard, pepper, zest, juice, soy sauce and vinegar. Continue to slowly simmer, for 1 hour, as the meat smokes.
  • Start a charcoal fire on one side of the grill. Add post oak pieces that have been well soaked (1 hour), or still green and uncured. Control the heat of the fire by closing the air vents to the grill. Place brisket, fat side up, on indirect heat (not over the fire) and close the top of the grill. Grill should be 300 degrees. Baste meat continuously with mop every 30 minutes. When turning meat always carefully use a spatula and never prick the meat. Tongs or forks may pierce the meat allowing juices to escape making the meat dry and tough. Brisket will be done in about 4 1/2 to 5 hours or when internal temperature reaches 165 degrees. Allow to rest 30 minutes before slicing.
  • Remove any excess fat and slice brisket across grain 3/8 inches thick. Texans don't use barbecue sauce, but they haven't tried these. Serve hot smoked sausages split, brisket sliced, BBQ sauce, white bread and pickled peppers.
  • Place sausages on smoking grill beside the brisket with indirect heat, not over the fire. Cook at 300 degrees for 1 1/4 hours.
  • Chipolte BBQ Sauce: 2 tablespoons vegetable oil 1/2 onion, diced 3 cloves garlic, smashed 1 cup chopped tomatoes 1 cup ketchup 1/2 cup coffee 3 tablespoons molasses 2 tablespoons Dijon mustard 3 tablespoons brown sugar 1 tablespoon Worcesterchire sauce 2 chipotle peppers In a medium saucepan, over medium heat, place oil, onion and garlic. Cook for 3 minutes. Add the tomatoes and simmer for about 8 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 15 minutes. Remove from heat and puree in food processor. Serve right away or let cool and refrigerate.
  • Pickled Peppers: 3 cups cider vinegar 3 cups pineapple juice 1 tablespoon cracked peppercorns 2 teaspoons thyme leaves 2 bay leaves 1 teaspoon salt 40 jalapenos 25 garlic cloves 1 red onion, peeled and chopped 2 carrots, peeled and shredded
  • In a large saucepan over high heat, bring vinegar, juice, peppercorns, thyme, bay leaves and salt to a full boil. Add jalapeno, garlic, onion and carrots and bring to a boil again. Remove from heat. Transfer to a large container and seal.

TEXAS BARBECUE SAUCE

For her take on smoky Texas-style BBQ sauce, Martha uses coriander and cumin seeds as well as chile powder, plenty of garlic, and two kinds of vinegar. The result is a sweet, tangy, and spicy sauce just right for grilling season.

1 teaspoon coriander seeds
1/2 teaspoon cumin seeds
1/3 cup neutral tasting oil, such as safflower
2 onions, diced (about 5 cups)
8 cloves garlic, minced
Coarse salt and freshly ground pepper
2 teaspoons chile powder
1/3 cup unsulfured molasses
3/4 cup packed dark-brown sugar
2 cans (28 ounce) crushed tomatoes, plus 2 1/2 cups reserved juice
1 1/2 cups cider vinegar
3 tablespoons white vinegar, plus more to taste
2 tablespoons Worcestershire sauce

Steps:

  • Heat a dry skillet over medium-high until hot. Add coriander and cumin seeds and cook, swirling pan occasionally, until fragrant and toasted, about 1 minute. Let cool, then grind in a spice grinder or mortar and pestle.
  • Heat oil in a large pot over medium heat. Add onions and saute until translucent and tender, stirring occasionally, about 10 minutes. Add garlic, 1 teaspoon salt, 1/2 teaspoon pepper, spices, molasses, and brown sugar; stir to combine. Cook, stirring frequently, 3 minutes. Add tomatoes, reserved juice, and cider vinegar and bring to a simmer. Reduce heat to medium-low and simmer gently, stirring occasionally, until mixture is thick and dark, about 1 hour.
  • Let cool slightly then puree sauce in a blender. Add white vinegar and Worcestershire; puree until smooth. Season to taste with additional salt, pepper, and white vinegar. Sauce can be refrigerated up to 3 days in an airtight container; let cool completely before storing, and reheat over medium before serving.

LEAN-AND-MEAN TEXAS BARBECUE SAUCE

1 cup cider vinegar
1/2 cup Worcestershire sauce
2 tablespoons yellow mustard

2 tablespoons paprika
1 teaspoon hot pepper flakes (or to taste)

3 cups water

Steps:

  • Combine all of the ingredients in a non reactive saucepan, stirring well to mix. Bring to the boil then reduce the heat to simmer, uncovered , until sauce thickens, stirring regularly for about 20 minutes.
  • Use immediately or transfer to jars,with a piece of plastic wrap under the lid,cool to room temperature and ripen in the fridge for 2-3days in the fridge before using.This will keep for several months.

CENTRAL TEXAS BARBECUE SAUCE

1 cup meat drippings or 1 cup chicken stock
1 cup ketchup
1/2 cup cider vinegar
2 tablespoons rendered bacon fat or 2 tablespoons lard
1 -2 tablespoon hot sauce, your favorite
1 teaspoon liquid smoke
coarse salt
fresh ground black pepper

Steps:

  • Combine the meat drippings, ketchup, vinegar, bacon fat, hot sauce, and liquid smoke with ½ cup water in a large pot.
  • Slowly bring to a boil over medium heat; decrease heat to med-low and let the sauce simmer gently until richly flavored and slightly reduced, about 30 minutes, stirring occasionally to prevent scorching.
  • Taste for seasoning, adding salt and pepper to taste.
  • Let cool to room temperature, then refrigerate, covered, until serving; will keep for 3 days.
  • Bring to room temperature or warm before using.
  • Variation-to approximate the flavor that comes from pit smoking, there is liquid smoke in the recipe; as an alternative, you can put the pot in your smoker and cook it for several hours in the presence of hickory smoke.

SPRING HILL RANCH CENTRAL TEXAS BARBECUE SAUCE

If you spend much time in Texas, you will no doubt note that there is a great BBQ shack every quarter mile or so along the wonderful intra-state Texas highways. Of the many sauces around the state, this one is from the Hill Country of central Texas where beef and lamb are kings of the slow-smoking barbecue pit. Influenced by the hearty German pioneers of the area, this is a sweet, very savory tomato-based sauce. It adds a wonderful complexity to barbecued beef brisket and beef ribs and even lamb shanks. The sauce keeps well covered and refrigerated for at least a week.

FOR THE RUB:
1 tablespoon mixed peppercorn (black, white, pink, green)
1 teaspoon chili powder
1 teaspoon kosher salt
1 teaspoon light brown sugar
1/4 teaspoon granulated garlic
1/4 teaspoon granulated onion
FOR THE SAUCE:
1/2 cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar
1 tablespoon dark brown sugar
1 teaspoon chili powder
1 teaspoon granulated onion
1/4 teaspoon freshly ground black pepper
4 Rib-eye beef steaks, about 3/4 lbs each and 1 to 11/4 inches thick
extra-virgin olive oil

Steps:

  • TO MAKE THE RUB: Using the spice grinder or mortar and pestle, crush the peppercorns. Place in a small bowl and thoroughly mix with the rest of the rub ingredients.TO MAKE THE SAUCE: In a small saucepan whisk together all the sauce ingredients with 1/4 cup water. Simmer over low heat for about 10 minutes, stirring occasionally, to allow the sugar to fully dissolve and all of the flavors to blend. Set aside while you grill the steaks.Allow the steaks to stand at room temperature for 20 to 30 minutes before grilling. Press the rub into both sides of the steaks. Lightly brush or spray both sides of the steaks with the olive oil. Grill over Direct High heat until the internal temperature reaches 145°F for medium rare, 8 to 10 minutes, turning once halfway through grilling time. I truely am not a big fan of ketchup, so whenever I have to use it, I really have to mask it's taste (big time). This barbecue's main ingredient is tomato juice, so this sauce works very well for me! 1/2 - fresh onion - pureed, or 2 tbs onion powder

2 tablespoon(s) worcestershire sauce
1 tablespoon(s) coarse black pepper (preferably fresh ground)

1 cup tomato sauce
2 tablespoons red wine vinegar
1/2 cup Worcestershire sauce
6 tablespoons sugar
2 teaspoons dried oregano leaves
1/4 teaspoon pepper
6 tablespoons butter

Steps:

  • In medium saucepan bring water to a boil; stir in coffee granules.
  • Stir in remaining ingredients.
  • Bring to a boil and simmer 20 minutes, stirring occasionally.
  • Serve immediately or pour into covered container after cooled.
  • Keep in fridge for up to 7 days.
  • Makes 4 Cups.

2 tsp. vanilla extract

1/4 tsp. pepper

Steps:

  • Place canola oil in a medium pan and turn on medium high heat.
  • Add vinegar, water, Worcestershire sauce, honey and sugar. Stir until sugar dissolves.
  • Measure and add onion powder, liquid smoke, paprika, garlic powder, black pepper, vanilla and tomato paste.
  • Bring mixture to a boil, stirring constantly.
  • Reduce to a simmer and cook for about an hour uncovered until the sauce thickens.[[5]]
  • Remove from heat and allow the sauce to cool, unless you will use it immediately.
  • Put sauce in a jar or squeezable container once sauce is cool.
