5 pounds red potatoes, cooked and cubed
1 pound sliced bacon, cooked and crumbled
1 pound cheddar cheese, cubed
4 cups 16 ounces shredded cheddar cheese
1 large onion, finely chopped
1 cup mayonnaise
1 cup sour cream
1 tablespoon minced chives
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a very large bowl, combine potatoes and bacon. In another large bowl, combine the remaining ingredients; add to potato mixture and gently toss to coat. , Transfer to a greased 4-1/2-qt. baking dish. Bake, uncovered, at 325° for 50-60 minutes or until bubbly and lightly browned.

2 lbs frozen hash browns
1/2 cup chopped onion
2 (14 ounce) cans cream of mushroom soup
2 cups grated cheddar cheese
1 pint sour cream
1 cup crushed corn flakes
1/4 cup melted butter
salt and pepper

Steps:

  • Grease a 9 x 13 baking pan.
  • Mix first 7 ingredients in a large bowl and pour into baking pan.
  • Mix crushed corn flakes with melted butter and top potato mix.
  • Bake at 350 for 1 hour.

10 Yukon Gold potatoes, peeled and halved
6 slices bacon
1 ½ cups shredded Cheddar cheese, divided
1 cup evaporated milk
½ cup sour cream
1 teaspoon salt
½ teaspoon ground black pepper
1 cup sliced green onions, divided
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return potatoes to pot.
  • Meanwhile, arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and crumble.
  • Combine 1 1/2 cup Cheddar cheese, evaporated milk, sour cream, salt, and black pepper in the pot with potatoes. Mash with a potato masher until creamy. Spread potato mixture into prepared baking dish.

2 pounds bacon
8 cups shredded sharp Cheddar cheese
4 cups processed cheese sauce
2 cups sour cream
2 cups mayonnaise
2 large onions, finely chopped
1 tablespoon minced chives
2 teaspoons salt
2 teaspoons ground black pepper

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain, cool, and cut into cubes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.

1/2 c chopped onion
2 can(s) cream of chicken soup
1 pkg sour cream (8 oz)
1/2 tsp salt
1/4 tsp pepper
1 pkg hash brown potatoes, frozen (2 lbs)
1/2 c melted butter
1 to 2 sleeves of ritz crackers

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Mix first five ingredients and 1/4 cup of the melted butter in mixing bowl. Add hash browns and mix well. Pour into a greased 9 x 13 pan.
  • 3. Crumble Ritz crackers and mix with remaining melted butter. Sprinkle on top of potato mixture and bake for 45 minutes.

We've had this at our Family Reunion for years! It's always been a hit with everyone. I always bake the potatoes a day or two before and refrigerate.It makes cooking time very short!

8-10 large potatoes, baked
2 stick butter, softened
1 - 32 oz sour cream
10 slice bacon, fried
1 bunch green onions, sliced
1 can(s) green chilies,drained & chopped
4 c cheddar cheese, shredded
1 pkg ranch dressing,dry
salt and pepper, to taste

Steps:

  • 1. Bake potatoes and refrigerate the night before. There easy to handle when you go to slice them.
  • 2. Mix ranch dressing, green chilies & sour cream the night before. It gives it time to marry the flavors. But not necessary.
  • 3. Also go ahead and fry the bacon and crumble it. Stick in the refrigerate over night.
  • 4. Also slice the green onions and put in refrigerator.
  • 5. The more you do the night before the easier it is the day of the BBQ or party! It's easy peasy!
  • 6. Preheat oven to 350 degrees.
  • 7. Slice potatoes with a mandolin. That way potatoes warm evenly. Use a casserole dish 9X13 or larger if you have one. Spray with PAM or what ever you like or even butter it. You don't want it to stick.
  • 8. Put a layer of potatoes,butter, sour cream then cheese. Till the last layer that's when you use the bacon. The green onions go on after it comes out of oven. Sometimes I just sit aside the green onions in a bowl and let them help them selves as some don't like onions at all! Enjoy!
  • 9. Bake for 35-45 minutes

This casserole combines all the irresistible features of a loaded spud, but is cooked and served family style for an extra-hearty side.

Nonstick cooking spray
6 slices bacon, cut 1/2-inch thick
2 1/4 pounds russet potatoes (about 4), scrubbed clean and cut into 1-inch chunks
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
2/3 cup sour cream
2 scallions, white and light green parts only, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F and spray a 3-quart casserole dish with nonstick spray. Set aside.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.
  • Put the potatoes into the prepared casserole dish. Toss with the reserved 2 tablespoons bacon drippings, 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the potatoes are soft and begin to brown, about 45 minutes.
  • Meanwhile, mix together the cream cheese and 1 cup Cheddar in a bowl until well combined. Dollop over the potatoes, then sprinkle with the remaining cup Cheddar and bake until the cheese is melted and bubbly and the potatoes are completely cooked through when poked with a knife, 13 to 15 minutes.
  • Dollop the sour cream evenly over the casserole and sprinkle with the scallions and bacon pieces.

2lb. bag frozen hash brown potatoes
2 c cream of chicken soup
1/2 c onion, diced
2 c cheddar cheese, shredded
1 c sour cream
1 stick butter, melted
2 stacks Ritz Crackers, crushed

Steps:

  • Combine first five ingredients. Add stick of melted butter. Pour mixture into 9x13" baking dish. Spread crackers over top of mixture. Pour 2 TBS. more melted butter on top of crackers. Bake at 350 F for 1 hour or until completely cooked.

This is nothing what it sounds like so beware, if you are looking for regular baked potatoes this is not for you. This is a terrific and tasty appetizer and it looks great. These are great make ahead, read through first. Time includes baking the potatoes twice. If you desire once they are done you can cut each one in half again, do not do this before you fill and bake again, it's too hard because they are too small to work with.

6 large potatoes
3 tablespoons bacon bits
6 teaspoons sour cream
4 1/2 cups shredded cheese
4 tablespoons extra virgin olive oil
1 tablespoon butter

Steps:

  • Bake the potatoes in an oven at 350 degrees for an hour to an hour and a half until they are done.
  • While that is baking mix the sour cream, cream cheese, bacon bits, and butter in a bowl until well combined and set aside.
  • Cut them in fourths and scoop out most but not all of the filling in each one.
  • Mix about half of the filling from the potatoes with the sour cream mix.
  • Take the fourths of potatoes and refill them with the new mixture.
  • If you want to put up over night this is where you would do it otherwise they will not hold up as well.
  • Drizzle with the olive oil and bake again at 350°F for 15-20 minutes or until lightly golden. Serve warm.
  • Once again, as this is important, if you desire once they are done you can cut each one in half again, do not do this before you fill and bake again, it's too hard because they are too small to work with.

8 medium baking potatoes (about 8 ounces each)
1/2 cup butter, cubed
2/3 cup sour cream
2/3 cup 2% milk
1 teaspoon salt
3/4 teaspoon pepper
10 bacon strips, cooked and crumbled, divided
2 cups shredded cheddar cheese, divided
4 green onions, chopped, divided

Steps:

  • Preheat oven to 425°. Scrub potatoes; pierce several times with a fork. Bake until tender, 45-60 minutes. Remove from oven; reduce oven setting to 350°. , When potatoes are cool enough to handle, cut each potato lengthwise in half. Scoop out pulp and place in a large bowl; discard shells. Mash pulp with butter; stir in sour cream, milk, salt and pepper., Reserve 1/4 cup crumbled bacon for topping.
