1 tube(s) texas-style refrigerated biscuit dough (the big 'uns)
8 eggs
1/2 c real bacon bits
1/2 c sharp cheddar cheese , grated
diced scallions
salt and pepper to taste

Steps:

  • 1. Lightly spray a standard-sized muffin tin with nonstick cooking spray.
  • 2. Open the tube o biscuit dough, and press one biscuit round into the muffin tin.
  • 3. To make sure there is room for the eggs, make sure you make a deep well in your dough by pressing the biscuit all the way up the sides of each muffin cup
  • 4. Crack an egg into each biscuit, top with bacon bits, cheddar, and scallions.
  • 5. Sprinkle generously with salt and pepper.
  • 6. Bake in an oven preheated to 400 degress for 13-15 minutes.
  • 7. To ensure the center of your egg stays soft-cooked, remove the biscuits from the oven as soon as the edges begin to turn golden brown.

2 cups flour (if using self rising flour,omit baking powder and soda)
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/4 cup vegetable shortening
1 cup buttermilk

Steps:

  • Preheat oven to 450°F.
  • Mix together well: Flour baking powder,salt, and soda.
  • Add shortening with fork, pastry cutter or fingers.
  • Add milk and blend till velvety smooth.
  • Roll out on lightly floured board and cut 1/4" (or shape a nice little biscuit with your hands).
  • Brush tops with milk (optional).
  • Bake about 10 minutes, till golden brown.
