Say "goodbye" to plain old burgers and make these delicious, mouth-watering Tex-Mex turkey burgers. Every bit as delicious as your typical burger with a mildly spicy blend of seasonings, avocado, and pepperjack cheese.

1 pound lean ground turkey
2 avocados (mashed)
juice of ½ lime
4 pepperjack cheese slices
½ cup light mayo (or sour cream)
1 cup shredded lettuce
4 hamburger buns
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon chili powder

Steps:

  • Prepare the guacamole by stirring together mashed avocado and lime juice, and adding salt to taste. Set aside.
  • Stir together the spices for the Tex-Mex Seasoning. Divide in half.
  • Stir together mayo (or sour cream) and half of Tex-Mex Seasoning. Set aside.
  • In a large bowl combine ground turkey and remaining half of the Tex-Mex Seasoning. Mix well by hand, then form into 4 equal-sized patties.
  • Grill burger patties for about 6 minutes on each side over medium heat til browned and cooked through.
  • Top each patty with a slice of cheese, cover the grill and allow the cheese to get melty (about 1-2 minutes).
  • Assemble turkey burgers by slathering mayo sauce on the bottom bun, then top with the turkey burger patty, followed by a big dollop of guacamole, some shredded lettuce, and the top of the bun. Serve and enjoy!

1/4 cup shredded reduced-fat cheddar cheese
3 teaspoons paprika

Inspired by Mexican tortillas, American burgers, and delicious breadcrumb coatings, I created this recipe. The whole family loves it, and whoever gets this recipe in hand passes it on. So I thought it was time to share it with you.

1 tablespoon olive oil
1 medium onion, finely chopped
1 medium green bell pepper, finely chopped
2 cloves garlic, minced
1 cup salsa
1 (15.25 ounce) can whole kernel corn, drained
1 pound ground turkey
1 (1.25 ounce) package taco seasoning mix
⅓ cup dry bread crumbs
6 (10 inch) flour tortillas
6 tablespoons sour cream
2 cups shredded lettuce

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
  • Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
  • In a small bowl, mix the salsa and 1/2 the corn. In a large bowl, mix the onion mixture with the turkey, taco seasoning, and 2 tablespoons of the salsa mixture. Divide into 6 patties, and press into the breadcrumbs to lightly coat on all sides. Arrange coated patties in the prepared baking dish.
  • Bake the patties 10 minutes in the preheated oven. Drain any liquid from the dish, turn patties, and spread with the remaining salsa mixture. Continue baking 10 minutes, to an internal temperature of 165 degrees F (75 degrees C).
  • Warm the tortillas in the microwave, about 30 seconds on High. Wrap the cooked turkey patties in the warmed tortillas with sour cream and lettuce. Sprinkle with remaining corn to serve.

Oaxacan Turkey Burgers With Chipotle Salsa image

Although you will not find these turkey burgers at a local cantina in Oaxaca, I can vouch that they certainly did conjure up fond memories of the flavors in dishes I ate on some of my many journeys to Oaxaca. I could even imagine these burgers served at one of the open air market's concessions. I tip my hat once again to Steven Raichlen, my grilling hero, for yet another impressively creative and delicious burger. Minus some personal modifications to the recipe, this is the recipe that appeared in Burger. Make Ahead: The salsa makes about 2 cups and can be made ahead of time and stored in the refrigerator in a sealed container for 2 days. Beer Recommendation: A rich malty, roasty beer that absorbs the heat and provides a great counterpart to chipotles and grilled meat is a good choice to pair with these burgers. If you happen to find a Noche Buena, a great dark beer from Mexico, this would be my first choice. Second would be Negra Modelo, a slightly sweet brew with some fruitiness, it's malty for a Mexican beer and goes well with chipotles.

  • Chipotle Salsa:.
  • Heat a thick cast iron skillet until very hot and add tomatillos, garlic, tomatoes and onion and cook over low heat. Frequently flip until blackeded in small areas and soft, about 10 minutes. Place on plate and set aside to cool.
  • Put the tomatillos, garlic, tomatoes and onion in a blender or food processor and pulse until coarsely chopped, be careful not to liquify. Add chipotles and adobo sauce, cilantro, salt and sugar and pulse one or two times until JUST mixed.
  • Burgers:.
  • Add turkey, cilantro, scallion, garlic, ancho powder, salt, pepper, cumin, coriander and cinnamon to a mixing bowl and gently knead. Form 4 patties about 3/4 inch thick and put on a saran wraped plate.
  • Light your grill and when it is heated brush grate with oil. Grill the burgers for 13 minutes, turning once, for medium. Briefly warm the english muffins and place a burger on the bottom slice; top with the avocado, pumpkin seeds and a helping of Chipotle Salsa. Top the burger and serve with the remaining salsa on the side.

2 scallions, finely chopped
1 pound ground turkey (94% lean)
1 large egg, beaten
1 teaspoon chili powder
½ teaspoon Kosher salt
2 tablespoons canola oil
4 slices Monterey jack cheese
4 burger buns, split and toasted
1 cup chunky salsa

Steps:

  • 1. Place a box grater on 2 sheets of paper towels. Grate the zucchini on the large holes of the grater. Roll in the paper towels to squeeze out as much liquid as possible. Transfer to a large bowl and mix in the scallions, turkey, egg, chili powder, and salt until well combined. Form into 4 burger patties the same diameter as your buns.
  • 2. Heat the oil in a large skillet over medium heat. Add the burgers and cook until browned on the bottoms, about 7 minutes. Carefully flip and cook until cooked through, about 8 minutes. 1/2 cup chopped onion

1 1/2 tablespoons taco seasoning mix
3/4 cup shredded reduced-fat monterey jack cheese (or nonfat cheese) or 3/4 cup Mexican blend cheese (or nonfat cheese)
6 light hamburger buns or 6 multi-grain hamburger buns
1/4 cup salsa (or mix half and half) or 1/4 cup ketchup, plus (or mix half and half)
2 tablespoons salsa (or mix half and half) or 2 tablespoons ketchup (or mix half and half)
6 slices red onions or 6 slices sweet white onions

Steps:

  • Place the mushrooms, zucchini, onion, and red bell pepper in the bowl of a food processor and process until the vegetables are finely chopped.

1 avocado
1 tablespoon mayonnaise
3 teaspoons fresh lime juice (or 2 tsps fresh lemon juice)
1 dash hot sauce (not too much, more heat will come with the minced chipotle)

1/4 cup thinly sliced scallion
1 tablespoon minced fresh cilantro, to taste
1 1/2 lbs lean ground beef

4 slices monterey jack cheese or 4 slices cheddar cheese
4 whole wheat hamburger buns, we like them toasted on the grill (if you can get bakery, seeded rolls, so much the better)

4 buttery-crisp lettuce leaves

Steps:

  • Halve, pit and peel avocado.
  • Mash ¼ of avocado with a fork; add mayonnaise, lemon juice, hot sauce and salt to taste; mash with back of fork until smooth.
  • Stir in tomato, chipotle, scallion, cilantro, and remaining avocado, cut into ¼ inch cubes and fold together gently but thoroughly. Cover surface with plastic wrap and refrigerate until ready to use.
  • Mix chili powder, cumin, oregano and salt into beef. Handling beef as little as possible, divide it into quarters; shape each quarter into a patty.
  • Heat a well-seasoned, ridged, cast-iron pan over moderately-high heat (or grill on bbq) until hot and cook the hamburgers 5 ½ minutes per side for rare.
  • Top with cheese slices and cook, covered, for 1 minute, to melt cheese.
  • Transfer to a plate and let stand, tented loosely with foil, for 3 minutes, to finish cooking.

On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

1/2 cup mayonnaise
2 teaspoons sauce from canned chipotles in adobo sauce
2 teaspoons fresh lime juice
1/2 teaspoon kosher salt

1 large egg
1/4 cup minced onion
2 tablespoons chopped fresh cilantro

4 brioche hamburger buns

Steps:

  • Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
  • Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.
  • Heat a large skillet over medium heat, then coat the skillet with cooking spray. Add the patties and cook for 5 minutes on one side, then flip them and cook until they are no longer pink and have reached an internal temperature of 165 degrees F, an additional 10 minutes. Top each burger with a slice of cheese.
  • Spread a portion of the chipotle mayo on the bottom half of each bun. Top the mayo with a burger, then add lettuce, tomato, avocado, and the top half of the bun and serve.
