TACO WONTON CUPS

These taco wonton cups are a quick and easy bite-sized party appetizer. Serve them hot out of the oven, or set up a mini taco bar with crispy wonton cups and a variety of filling.

12 wonton wrappers
1 1/2 cups seasoned, cooked ground taco meat
1/2 cup cheddar cheese (shredded)
4 Tablespoons sour cream
12 Tablespoons salsa
12 jalapeno slices

Steps:

  • Preheat oven to 350 degrees.
  • Gently press a wonton wrapper in each muffin cup using a wooden tart tamper.
  • Bake wonton cups for 5-7 minutes until light golden brown.
  • Filll each wonton cup with 2 Tablespoons of seasoned ground beef and shredded cheese.
  • Return filled cups to the oven and bake for about 6 more minutes, until the cheese is melted and the wonton cups are golden brown.
  • Add 1 Tablespoon of salsa to each wonton cup.
  • Garnish each cup with a teaspoon of sour cream and a jalapeno slice.

Simple and delicious mini taco bites are the perfect party appetizer or cute weeknight dinner!

1 vine tomato, chopped
2 tablespoons onion, small dice
1/2 small jalapeño pepper, small dice
1 small garlic clove, minced
1 teaspoon fresh lime juice
Kosher salt, to taste
Ground black pepper, to taste
6 flour tortillas
3 teaspoons vegetable, canola, or olive oil
1 pound lean ground beef
1 (7 to 8-ounce) can picante sauce (or red salsa)
2 teaspoons chili powder
1 teaspoon ground cumin
1/4 cup crema or sour cream
2 tablespoons fresh cilantro leaves

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Make pico de gallo: combine tomato, onion, jalapeño, garlic, cilantro, and lime juice. Season with salt and pepper and stir.
  • Use a 3-inch cookie cutter to cut out 4 small taco shells from each tortilla. Save the scraps and toast them for a crispy garnish for salads or soups . Warm the tortillas for 10 to 20 seconds, covered, in a microwave, or wrap in foil and heat in a warm oven until pliable.
  • Brush both sides of each tiny tortilla using 2 teaspoons of oil and sprinkle with salt, keeping them covered and warm in between. Press into openings of a mini muffin tin. Repeat with 11 more little tortillas, lightly reheating if needed to keep them pliable.
  • Repeat with a second mini muffin tin or repeat after cooking first batch of mini taco shells, for a total of 24.
  • Bake for 10 to 12 minutes or until lightly browned.
  • Meanwhile, heat a large skillet over medium heat. Add 1 teaspoon of oil followed by ground beef . Cook, breaking up into small pieces, until no longer pink. Use a spoon to scoop out any excess oil.
  • Add picante sauce, chili powder, and cumin. Season with salt and pepper and stir. Simmer for about 5 to 10 minutes, or until no longer watery. Taste for seasoning.
  • Add a heaping spoonful of beef mixture to each tortilla shell, followed by a dollop of crema, a scoop of homemade pico de gallo, and a sprig of cilantro.

1/2 cup finely chopped onion
1 envelope taco seasoning
3/4 cup water
1-1/4 cups shredded Mexican cheese blend, divided
2 packages (1.9 ounces each) frozen miniature phyllo tart shells

Steps:

  • Preheat oven to 350°. In a small skillet, cook beef and onion over medium heat until meat is no longer pink, breaking into crumbles; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, about 5 minutes. Remove from heat; stir in 1/2 cup cheese blend. , Place tart shells in an ungreased 15x10x1-in. baking pan. Fill with taco mixture. , Bake 6 minutes. Sprinkle with remaining cheese blend; bake until cheese is melted, 2-3 minutes longer. Freeze option: Freeze cooled taco cups in a freezer container, separating layers with waxed paper. 1 tablespoon canola oil
1 yellow onion, diced
1 teaspoon cayenne
1 teaspoon chile powder
1 teaspoon cumin
1 teaspoon Mexican oregano
2 tablespoons tomato paste
1 pound ground beef
1 cup tomato sauce
2 teaspoons apple cider vinegar
6 to 8 hard-shell tacos
Shredded cheese, for topping
1 tomato, diced
1 avocado, diced
Shredded lettuce, for topping
Sliced pickled jalapenos, for topping
Sour cream, for dipping

Steps:

  • In a large skillet, heat the canola oil over medium-high heat; add the onions and cook until translucent. Add the cayenne, chile powder, cumin and Mexican oregano and cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, for 2 minutes. Add the beef and cook until browned, 8 to 10 minutes. Stir in the tomato sauce and apple cider vinegar and cook until the sauce reduces slightly, 3 to 5 minutes.
  • Build the tacos in this order: cheese on the bottom, followed by the beef, tomatoes, avocados, lettuce and jalapenos. Serve the sour cream on the taco or on the side for dipping.

These bite-size appetizers have all the flavors of your favorite taco salad -- zesty ground beef, smooth sour cream and, of course, a crunchy tortilla shell. Taco seasoning varies greatly depending on the brand, so make sure to taste yours before you add it to the meat and adjust the salt in the recipe accordingly.

Nonstick cooking spray, for spraying the wire rack
1 pound ground beef (90/10)
2 tablespoons taco seasoning
Kosher salt
16 miniature cup-shaped corn tortilla chips
4 ounces pepper jack cheese, cut into 16 cubes
3 tablespoons sour cream
1 cup thinly sliced romaine lettuce
1 small plum tomato, diced
Hot sauce, for serving

Steps:

  • Position an oven rack in the top third of the oven and preheat to 425 degrees F. Set a wire rack over a baking sheet and spray generously with cooking spray.
  • Use your hands to mix the ground beef, taco seasoning and 1/2 teaspoon salt in a medium bowl until just combined. Drop heaping tablespoons of the meat mixture onto the rack (about 16 total), then use your hands to roll the portioned meat into balls. Press a tortilla chip into the top of each meatball, making sure that the meat goes mostly up the sides of the chip (be careful not to break the chips). Put 1 cheese cube in the middle of each chip.
  • Bake, rotating the baking sheet once halfway, until the meat is just cooked through and the cheese is melted, about 8 minutes. Transfer the bites to a large platter, top with a dollop of sour cream and sprinkle with the lettuce and tomato. Serve with hot sauce.
