TERIYAKI MARINADE AND SAUCE
I looked long and hard for a good-flavored teriyaki marinade recipe that could double as a sauce. Found a few and modified to this.

Steps:
- Stir soy sauce, honey, rice vinegar, sesame oil, brown sugar, sesame seeds, garlic, and ginger together in a small saucepan over medium-high heat.
- Whisk cornstarch into water in a bowl; add to soy sauce mixture. Cook sauce, stirring regularly, at a simmer until thickened, 5 to 7 minutes.

WALT'S TERIYAKI MARINADE AND DIPPING SAUCE
This is an old way of making a teriyaki sauce with honey instead of sugar, giving it a more pleasing sweetness. It's great for marinading and dipping with any kind of meat dish.

Steps:
- Blend ginger, soy sauce, honey, garlic, and onion in a bowl.
- Add meat to marinade for at least one hour or refrigerate meat in marinade overnight.
- After marinating meat, drain the marinade and add it to a 1/2 cup of water.
- Bring it to a boil for 3-5 minutes and use it for a meat dipping sauce during the meal.
- Excellent for pork, beef or chicken.

If making fondue, use this as a dip for your steak and chicken. If making grilled salmon or chicken, use this as a marinade. If making a stir-fry, use this as a sauce.

- Reduce heat to medium-low, and simmer for 10 minutes.
- Pour in soy sauce, rice vinegar, sesame oil, and sugar.

- Store in a tightly sealed container in the refrigerator.

- In a saucepan, combine the dry ingredients. Include the cornstarch if you want a sauce to add to your stir-fry or if you want a basting sauce. For a marinade, leave out the cornstarch.
- Add soy sauce, water, and vinegar.
- Stir or whisk until all ingredients are thoroughly mixed.
- Set the saucepan on medium heat and bring to a boil. For a marinade, let cool and pour over meat. For stir-fry or basting, boil for one minute or until thickened.
- If using as a marinade, place meat in a shallow container and pour the sauce over all. Cover and refrigerate, turning meat occasionally. Marinate prawns for no more than 30 minutes, chicken or beef 4-8 hours.
- Unused sauce can be stored indefinitely in the refrigerator. Discard any leftover marinade, as the meat juices in it will spoil.
