PINEAPPLE-TERIYAKI CHICKEN BURGERS

Pineapple-Teriyaki Chicken Burgers image

The tastiest chicken burgers you will ever have! These pineapple-teriyaki chicken burgers are so flavorful, so juicy, we literally couldn't get enough of them. I am absolutely crazy about burgers, they are probably one of my favorite foods (aside from pizza), and it's been really fun playing around with different flavors and textures.

Chicken Teriyaki Burgers With Grilled Pineapple and Red Onions image

There is nothing we like better than a well rounded burger with sensational toppings. This burger combines fabulous flavors and really hits the spot! The prep time/cook time is flexible because I included some of the refrigeration time and when you combine tasks, it doesn't take near so long.

EASY TERIYAKI CHICKEN BURGERS

Easy Teriyaki Chicken Burgers image

A super simple way to make a chicken burger that zings with flavor! Sometimes it's referred to as "hawaiian-style." This has been my husband's favorite for a long time, especially at Red Robin. That got too expensive after a while so I thought I'd try making it at home instead. He loves it! These burgers have been a big hit whenever we have friends over for a barbeque.

TERIYAKI CHICKEN BURGERS

Teriyaki Chicken Burgers image

My family wasn't that thrilled with the taste of turkey burgers and I was watching my intake of beef. I started experimenting with ground chicken in my burgers and was mildly surprised with the outcome. The family likes these better than beef burgers! I usually make this when I bring the chicken home from the market. It makes for a quick meal on a weeknight. It just doesn't get any easier! These are served on Belle's® Hamburger Rolls which are totally off the hook!

TERIYAKI CHICKEN BURGERS WITH A TERIYAKI MUSHROOM SAUCE

Teriyaki Chicken Burgers With a Teriyaki Mushroom Sauce image

These bunless burgers are bursting with flavor. The recipe calls for sage and thyme, but poultry seasoning works just as well. Substitute a tablespoon of poultry seasoning for the sage and thyme. Also, I used a serrano pepper in mine, but if you don't care for the zip, you can omit it without affecting the overall taste of these burgers. Since these burgers have an Asian flavor happening, they work well served with fresh steamed or stir-fried veggies.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 20

1 lb ground chicken breast
1 medium onion, finely chopped
3 garlic cloves, minced
1/2 bell pepper, finely chopped
1 serrano pepper, seeded and finely chopped
1/2 cup breadcrumbs
2 tablespoons teriyaki sauce
1 tablespoon steak seasoning (I recommend Grill Seasoning)
1 teaspoon sage
1 teaspoon thyme
1 egg
2 tablespoons extra virgin olive oil
12 cremini mushrooms, sliced
1 tablespoon extra virgin olive oil
1 1/2 cups chicken stock
1/4 cup teriyaki sauce
1/4 cup cold water
1 tablespoon cornstarch
1 tablespoon butter
salt & pepper

Steps:

  • Heat oil in skillet.
  • Mix ground chicken with the next 10 ingredients. If mixture feels too moist, add in a bit more breadcrumbs.
  • Form into 4 patties and cook over medium high heat until golden brown on each side, turning patties once.
  • Remove patties to a plate and cover with a foil tent to keep warm.
  • Add a bit more olive oil to the skillet and brown the mushrooms.
  • When they've developed a nice color, season with salt and pepper.
  • Deglaze pan with chicken stock, scraping all the brown bits from the bottom of the pan.
  • Stir in teriyaki sauce.
  • Dissolve corn starch in water, then pour mixture into sauce. Stir well, and bring to a boil.
  • Sauce will thicken as it boils. Reduce the sauce a bit to concentrate the flavors.
  • Just before serving, drop in the butter and stir until melted to gloss the mushroom sauce.
  • To serve, spoon mushroom sauce over burgers. Enjoy!

TERIYAKI CHICKEN BURGERS

TERIYAKI CHICKEN BURGERS image

Yield 4 Servings

Number Of Ingredients 12

1 pound ground chicken (preferably thigh meat)
1½ cups plain bread crumbs
¼ cup minced scallions (white and green parts only)
¼ cup finely chopped fresh Italian parsley leaves
1 large egg, lightly beaten
3 tablespoons teriyaki sauce
2 teaspoons Dijon mustard
1 teaspoon toasted sesame oil
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
Extra-virgin olive oil
4 hamburger buns, split

Steps:

  • 1 In a large bowl combine the patty ingredients. Mix gently with your hands, being careful not to overwork the meat. Moisten your hands with water and shape the meat into four patties, each about ¾ inch thick. With your thumb or the back of a spoon, make a shallow indentation about 1 inch wide in the center of each patty so the centers are about ½ inch thick. This will help the patties cook evenly and prevent them from puffing on the grill. Cover the patties with plastic wrap and refrigerate for about 1 hour. 2 Prepare the grill for direct cooking over medium heat (350° to 450°F). 3 Lightly brush the patties with oil. Brush the cooking grates clean. Grill the patties over direct high heat, with the lid closed as much as possible, until fully cooked but still juicy, 12 to 14 minutes, turning once. During the last minute of grilling time, toast the buns over direct heat. 4 Remove the burgers and buns from the grill and serve with grilled onions, mustard, and mayonnaise, if desired.
